This basic pilaf is quick and easy to make.

2 tablespoons butter
1 onion, chopped
1 cup uncooked white rice
2 cups chicken broth
1 teaspoon salt

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a 1 quart baking dish with butter.
  • Melt the butter in a large skillet over medium-high heat. Fry the onion in the butter until translucent, 3 to 5 minutes. Stir in the rice; cook until the rice is slightly golden. Pour in the chicken broth. Season with the salt. Simmer another 5 minutes. Transfer to the prepared dish.
  • Bake in the preheated oven until the broth is completely absorbed, 35 to 40 minutes. Fluff with a fork to serve.

Steps:

  • In 3-quart saucepan, melt butter over medium heat. Cook onion in butter about 3 minutes, stirring occasionally, until tender.
  • Stir in rice. Cook 5 minutes, stirring frequently. Stir in broth and salt.
  • Heat to boiling, stirring once or twice; reduce heat to low. Cover and simmer 16 minutes (do not lift cover or stir); remove from heat. Let stand covered 5 minutes.

My husband loves this rice pilaf. Everytime I make rice he requests it. Hopefull you'll like it too! It takes a little extra preparation than a rice mix, but I think it's well worth it. You can also use wild rice, instead of white rice, but you'll need to add more liquid and it will take longer to cook.

1 1/2 cups white rice (I use jasmine, but any white rice will work)
2 cups chicken broth
1/4 cup slivered almonds
1 cup sliced mushrooms
1/2 small onion, diced
2 teaspoons margarine or 2 teaspoons butter
2 teaspoons minced garlic cloves

Steps:

  • In a small frying pan over medium heat, sautee the onion and garlic until onion is translucent. The garlic will cause the onion to scorch a bit, don't worry, it gives it flavor.
  • Add the rice, sauted onion and garlic, almonds, mushrooms, and chicken broth to a 4 cup capacity or larger rice cooker.
  • Stir briefly to distribute ingredients.
  • Set to cook. When done, let sit for 10 minutes.
  • Stir and enjoy!
  • Depending on your rice cooker, the bottom may get brown. I like it, it gives it some extra zip!

1 c. orzo pasta
1 onion (diced)

1/4 tsp. turmeric (for yellow color)

Steps:

  • Melt butter in a medium-sized saucepan/pot. Add orzo and cook until golden brown.
  • Add onion and saute until onions become clear.
  • Add garlic and saute for another minute or so.
  • Add remaining ingredients and bring to a boil, stirring occasionally.
  • When mixture comes to a boil, reduce heat to low, cover, and simmer for about 20-25 minutes or until liquid is absorbed.
  • Remove from heat and remove lid. Let stand for a few minutes then fluff with a fork and serve!

  • Add rice to a fine mesh strainer or colander and rinse really well, until the water runs clear. Set aside to drain.

⅓ cup onion (finely diced)
2 tablespoons butter
1 clove garlic (minced)
¾ cup basmati rice
2 tablespoons carrot (shredded)

14 ½ ounces chicken broth
¼ cup white wine (or water)
2 tablespoons slivered almonds (toasted)
1 tablespoon green onion (or parsley)

Steps:

  • Rinse rice under cold water and drain well.
  • Combine onion, butter, and garlic in a medium saucepan. Cook over medium heat to soften, about 3 minutes.
  • Add rice and cook until it begins to smell toasted and turn slightly golden, about 7-10 minutes.
  • Add remaining ingredients except green onions and almonds. Bring to a boil, cover and reduce heat to a low simmer for 15-20 minutes or until liquid is absorbed.

1 cup rice

  • In a medium saucepan heat oil over high heat. Add onion and cook until tender but not browned, about 5 minutes. Add rice, stirring to coat in oil. Think of rice pilaf as an upgrade to your everyday rice. It's like rice that puts on a nice dress and some earrings - not much extra work, but the payoff is a side dish that feels just a little bit fancy. Today we're making the very simplest rice pilaf: white rice cooked with a little flavorful oil and chopped onion, and then simmered with broth. It's one step up from rice cooked in water, but not so elaborate that you can't pull it together on a weeknight.

1 cup long-grain white rice
1 tablespoon extra-virgin olive oil or butter
1/2 medium yellow onion, diced
1/2 teaspoon fine salt
1 3/4 cups chicken broth, vegetable broth, water, or a mix of water and broth

Steps:

  • Rinse the rice: Place the rice in a strainer and rinse it thoroughly under cool water. The water running through the rice will look milky at first, but will then become clearer and only lightly clouded. It's fine if there's still some haze in the water. There is no need to dry the rice before cooking; a bit of moisture on the rice is fine. Set the strainer of rice aside while you cook the onion.
  • Cook the onion: Warm the olive oil or butter in the saucepan over medium heat. Add the onion and cook until the onion is translucent and soft.
  • Toast the rice: Add the rice to the pan and stir to coat with olive oil or butter. Continue to cook, stirring often, until the tips of the rice turn translucent and the rice smells fragrant and toasted.
  • Add the broth or water and boil: Pour the broth or water and salt into the saucepan and increase the heat to medium-high. Bring to a boil.
  • Cover and cook: As soon as the water comes to a boil, reduce the heat to low and cover the pot. Cook without lifting the lid for 15 to 18 minutes. At the end, check that the rice is tender and has absorbed all the liquid. If not, cover and cook another few minutes, adding a few tablespoons of water if needed.
  • Steam the rice: Remove the pan from heat and let it sit, covered, for another 5 to 10 minutes.
  • Fluff and serve: Remove the lid and fluff the pilaf with a fork. Transfer to a serving bowl and serve.
