QUICK VANILLA FROSTING
This recipe is at least 90 years old, my grandmother says they used it a lot during the depression. Also, you can substitute lemon, almond, or whatever for the vanilla if you're so inclined, but I like vanilla the best. It's also fat free.

VANILLA FROSTING
This works well with most types of cupcakes , use this to top chocolate cupcakes if your not a chocolate lover. I use vanilla bean paste for this recipie as it gives a better flavour and you have lovely black speckles in the frosting at the end . Double this recipie for a 20cm cake

- Most of this recipe is just making sure to add and mix in the right quantities and for the right length of time. So let's start with the glue that will bind the frosting together, the butter and sugar. Put the butter and shortening into the standing mixer and use the paddle blade. Set it to medium and cream until the butter and shortening are fully incorporated.
- Once the butter and shortening are creamed, 2 tbsp of water and the vanilla extract. You will add more water later to thin it out. Mix again on medium for 1 minute.
- Very carefully, add 1/4 of the bag of powdered sugar and then mix on the lowest possible setting until incorporated. You are trying to avoid an explosion of powdered sugar all over your kitchen. When the powdered sugar is incorporated, repeat this step 3 more times until the whole bag is used.
- After all of the powdered sugar has been added, add water one tbsp at a time until you achieve the desired thickness. You are not going to add more than 2 tbsp here as any more than that will make the frosting runny.

- Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat cubed cold butter and salt on high speed until smooth and creamy- the consistency of softened butter. It shouldn't clump up or stick in the mixer beaters!
- Add the powdered sugar, the first two tablespoons of heavy cream, lemon juice, vanilla extract, and vanilla bean seeds and beat on low speed, steadily increasing to high, until combined. Frosting will be smooth and creamy and should hold stiff peaks, but shouldn't look wet.
- If frosting is too wet/soft, add up to 1/2 cup extra powdered sugar. If you do this, also add an extra squeeze of lemon juice and pinch of salt to balance the sweetness. If frosting is too stiff and doughy or won't come together, add a tablespoon more heavy cream at a time (as many as you need) until desired texture is reached.
