REAL HOMEMADE TAMALES



Real Homemade Tamales image

I had been looking for a Tamale recipe for years. One day I went to the international market and stood in the Mexican aisle till a woman with a full cart came by. I just asked her if she knew how to make Tamales. This is her recipe with a few additions from me. The pork can be substituted with either chicken or beef. This is great served with refried beans and a salad.

1 ¼ pounds pork loin
1 large onion, halved
1 clove garlic
4 dried California chile pods
2 cups water
1 ½ teaspoons salt
2 cups masa harina
1 (10.5 ounce) can beef broth
1 teaspoon baking powder
½ teaspoon salt
⅔ cup lard
1 (8 ounce) package dried corn husks
1 cup sour cream

Steps:

  • Place pork into a Dutch oven with onion and garlic, and add water to cover. Bring to a boil, then reduce heat to low and simmer until the meat is cooked through, about 2 hours.
  • Use rubber gloves to remove stems and seeds from the chile pods. Place chiles in a saucepan with 2 cups of water. Simmer, uncovered, for 20 minutes, then remove from heat to cool. Transfer the chiles and water to a blender and blend until smooth. Strain the mixture, stir in salt, and set aside. Shred the cooked meat and mix in one cup of the chile sauce.
  • Soak the corn husks in a bowl of warm water. In a large bowl, beat the lard with a tablespoon of the broth until fluffy. Combine the masa harina, baking powder and salt; stir into the lard mixture, adding more broth as necessary to form a spongy dough.
  • Spread the dough out over the corn husks to 1/4 to 1/2 inch thickness. Place one tablespoon of the meat filling into the center. Fold the sides of the husks in toward the center and place in a steamer. Steam for 1 hour.
  • Remove tamales from husks and drizzle remaining chile sauce over. Top with sour cream. For a creamy sauce, mix sour cream into the chile sauce.

6 Cups of Corn Masa flour (mexican is best)
1 tablespoon salt
1 tablespoon pepper
2 tablespoons cumin
2 tablespoons garlic powder
1 Tablespoon Chilli Powder
1 Tablespoon Paprika
1 pack Lard (or one cup Corn Oil) Lard is best
2 Tablespoons baking powder
6 cups of broth (see later stage of cooking)
For filling
1 tablespoon salt
1 tablespoon pepper
1 tablespoon Cumin
1 tablespoon Garlic Powder
1 tablespoon recado paste
water to cover meat at least 20 cups
10 dried chipotle chillies (soaked till soft then diced) or 3 fresh Habanero's
3 medium onions
2 tablespoons garlic powder
1 tablespoons cumin
1 tablespoon dried Oregano (Mexican if you can get it)
tin chopped tomatoes
To Finish.
about 50 dried corn husks.
You will need a 20cm steamer this will hold approx 25 Tamales

Steps:

  • Cook the Pork.
  • Remove the skin from the shoulder and chop into big chunks, pop in large saucepan and cover with at least 20 cups of water add seasoning's and bring to the boil, simmer for around 2 hours till meat can be shredded. When pork is ready remove from broth and leave to cool, DO NOT DISCARD THE BROTH.
  • Prepare the MASA.
  • In a large mixing bowl add 6 cups of Masa Flour, cumin, salt, pepper,garlic powder, paprika and baking powder. Add 6 cups of retained broth and beat in well, dissolve the lard in a bowl in a microwave, when liquid beat in to the dough for about 10 mins to get some air into the mix, makes for a fluffier masa. Leave covered to cool.
  • Put your husks in a mixing bowl and cover with hot water to soften (about 30 mins).
  • To make the Mole.
  • fry onions till brown, add tomatoes, seasoning's and chillis add the remaining broth bring to the boil then turn down to simmer, add 1 cup of masa flour and stir until the mole thickens a bit. Leave to cool.
  • Prepare the filling.
  • Shred the pork with your fingers or 2 forks and put into a mixing bowl. Add mole until you have a nice moist mixture (not to runny)
  • Make your Tamales.
  • Take a husk place on a flat surface, take one tablespoon of masa dough and spread over husk to within 1 inch of the edges. Place one tablespoon of filling onto the centre of the masa, pick up husk and roll the masa over the filling roll into a tube flip up the pointed end to make a packet and tie with butchers string or a strip of husk. Place in your steamer and steam for 90 mins, till cooked.
  • Once cooked you can eat them or store in the freezer for later. I vacuum seal mine in pairs they will keep for 6 months (if you can keep your hands off them). Best eaten hot with a good slosh of salsa and a nice crisp salad. To reheat steam for about 10 mins or re heat in microwave for about 2 mins well covered until piping hot.

1 package dried corn husks
6 cups masa harina
2 teaspoons Kosher salt
2 teaspoons ground cumin
1 teaspoon baking powder
6 cups chicken or vegetable stock
3/4 cup corn oil (or avocado oil, olive oil, or any mild-flavored oil)
2-3 cups filling (see ideas below)
1 cup salsa (see ideas below)

Steps:

  • Place the corn husks in a large stockpot or pan and cover completely with warm water. Soak for 30 minutes or so until softened.
  • Meanwhile, in the bowl of a large stand mixer, add masa marina, salt, cumin, baking powder, and whisk to combine. Add the oil, then beat on low speed until combined. Then gradually add the stock, and beat on low speed until combined. Once the stock is incorporated, increase speed to medium, and beat for 10 minutes until fluffy, stopping occasionally to scrape down the sides of the bowl if needed. Cover the mixing bowl with a damp paper towel and refrigerate until ready to use.
  • Toss together your desired filling(s) and sauce until combined. In general, you want enough sauce to coat and flavor the filling, but not so much that the filling is really juicy/watery.
  • To assemble the tamales, follow these simple steps (visual included in the blog post above):
  • About 1/4 cup (or a little more) will do. I highly recommend using a large cookie scoop to measure out the masa. Use a spoon or your fingers to spread it out into a rectangle large enough to enclose your filling. (I keep a little bowl of water nearby to dip my fingers regularly, which helps the masa from sticking to them.)
  • Tamales use surprisingly little filling - just a tablespoon or two will do. Add it to the center of your masa.
  • Then very carefully, fold the corn husk in half so that the masa wraps completely around the filling, maybe using your fingers to pinch it together just a little bit.
  • Continue folding the corn husk completely over to one side so that it is a burrito/cylinder shape.
  • The image above explains this best. One end of the tamale will be exposed, and the other will be folded over. (I like to fold my tamales to cover the side with the seam.
  • I like to shred a few corn husks into long skinny strips to tie the tamales together (this is a perfect use for the husks that are too skinny!). But you can also use baking string.
  • Add water to the bottom of a stockpot or Instant Pot. Then add a steamer basket, fill it with your tamales, and steam until the tamales are hot and cooked through and the masa separates easily from the corn husks, about 30 minutes on the stovetop or 20 minutes (high pressure, natural release) in the Instant Pot.
  • Remove from the steamer and serve immediately. Or refrigerate in a tightly-sealed ziplock bag for up to 3 days, or freeze for up to 3 months.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch baking or casserole dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Mix in corn, tomatoes, oil, chili powder, and cumin. Bring to a boil; remove from heat.
  • Combine milk, cornmeal, and eggs in a large bowl. Stir in meat mixture. Mix in olives. Pour into the prepared baking dish.

2 1/4 cups masa harina
1 3/4 to 2 1/2 cups warm chicken broth, homemade or low-sodium canned, plus more as needed
1/2 pound lard, at room temperature
1 tablespoon salt
12 to 14 dried corn husks (or more if small), soaked in boiling water until soft, 30 minutes to 1 hour
2 cups Oaxacan yellow mole filling (see recipe)
2 cups black bean filling (see recipe)

Steps:

  • To make the dough, place the masa harina in a large bowl. Use a wooden spoon to beat in just enough chicken broth to make a smooth, soft dough, like a medium-pliable bread dough.
  • Beat the lard in the bowl of an electric mixer on medium speed until very fluffy and fully aerated, about 3 minutes. Still mixing on medium speed, begin adding the masa a handful at a time, stopping to scrape down sides of bowl as necessary. If the mixture becomes too stiff, add up to 1 cup of broth a little at a time. When all the masa has been incorporated, the mixture should be very light and delicate, the texture of buttercream frosting. Beat in the salt.
  • To fill and steam the tamales, drain the corn husks and select as many as you can of the larger pieces, being careful not to open the crinkled leaves of the core that are full of corn silk. If necessary, select some of the better-looking middle-size or narrow pieces and paste them together with a little of the tamale dough. Pat the husks dry. Place a husk on a work surface. Spread 1/4 to 1/3 cup of the dough across the wide end of the husk, covering it from side to side and extending about halfway up toward the narrow tip. Place 1 heaping tablespoon (smaller husks will take less) of filling in the center of the dough. Make a cone shape by folding the 2 long edges over the filling so that they overlap slightly. Fold in half crosswise. Repeat with the remaining husks and filling. As they are finished, place the tamales on a baking sheet (they can be refrigerated, covered with plastic wrap, up to 1 day, or frozen for 1 month).
  • Have a steamer and insert ready, with about 1 inch of boiling water in the bottom of the pot. Place the tamales in the insert, in layers as necessary. Place some of the unused corn husks over the tamales to help absorb the steam. Cover tightly and bring quickly to a full boil over high heat. Reduce the heat to medium-low to maintain a simmer. Cook for 1 hour, adding boiling water as necessary. Remove the steamer basket and let the tamales stand 10 minutes before serving.

6 ounces monterey jack cheese, shredded
6 tablespoons unsalted butter, room temperature
2 eggs
1 egg yolk
1 teaspoon yellow mustard
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon hot sauce
10 ten sheets parchment paper (10x12 inch)

Steps:

  • First, prepare the filling. Heat the oil in a medium-size skillet over medium heat. Add the onion and pepper and cook, stirring occasionally, until the vegetables soften, about 5 minutes. Add the garlic and cook 1 minute more. Stir in the tomato and continue cooking until a sauce has formed, about 5 minutes. Stir in the paprika, cumin, red pepper flakes, salt, and pepper. Add the beef to the mixture and cook, breaking it into smaller pieces, until the meat loses its pink color, about 5 minutes. Stir in the flour and cook for 2 minutes more. Add the mustard, baking powder, salt, and hot sauce and process until a light, fluffy dough has formed. Transfer the dough to a cake pan, spread it over the bottom, and divide it into 10 portions.
  • To assemble each tamale, place half a portion of dough in the center of a sheet of parchment paper. Flatten the dough into a 3- by 5-inch rectangle, then spread 1/4 cup of filling onto the center of the rectangle. Cover the filling with the other half of the dough and pat it down.   • Fit each of two large pots with a steaming basket or colander. Add water to each pot, filling it to just below the bottom of the basket. Remove the baskets and bring the pots of water to a boil.

  • Start by adding the corn husks to a large bowl and soaking them in the hottest tap water you've got. You can use a bowl or plate to keep them submerged if they float to the surface.
  • To make the dough, add 1.5 cups masa harina to a mixing bowl along with 1 teaspoon baking powder and 1 teaspoon salt. Combine well and then add 1 cup of stock, roughly combining into a shaggy dough.
