1 tablespoon cornstarch
2/3 cup reduced-sodium chicken broth
1 teaspoon reduced-sodium soy sauce
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 pound sliced fresh mushrooms
2/3 cup thinly sliced celery
1/4 cup sliced onion
1/4 cup thinly sliced green pepper
2 tablespoons julienned carrot
1 teaspoon canola oil
1 garlic clove, minced
1 cup cubed cooked chicken breast
1 cup cooked brown rice
2 tablespoons chow mein noodles

Steps:

  • In a small bowl, combine the cornstarch, broth, soy sauce, salt and ginger until smooth; set aside., In a large skillet or wok, stir-fry the mushrooms, celery, onion, pepper and carrot in oil for 5 minutes. Add garlic; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken; heat through. Serve with rice; sprinkle with chow mein noodles.

2 tablespoons butter
4 tablespoons chopped onions
1 1/2 cup diced cooked chicken
1 cup diced celery
2 cups vegetables, of your choice (bean sprouts, sliced carrots, water chestnuts, bamboo shoots, etc.)
1 1/2 cup chicken broth
2 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon cornstarch
1 tablespoon cold water
chow mein noodles or rice

Steps:

  • Melt the butter in a skillet or wok over medium-high heat. Add the onion and cook, stirring frequently, until the onion is soft. Add the chicken, celery, and remaining vegetables. Cook, stirring frequently, for 2 minutes. Combine the broth, soy sauce, and sugar in a bowl or measuring cup and mix well to dissolve the sugar. Add to the chicken and bring to a simmer. Let simmer, uncovered, for 30 minutes, stirring occasionally. Combine the cornstarch and water and add to the liquid in the pan. Stir well then let simmer for 4-5 minutes longer or until the sauce has thickened. Serve the chow mein over rice or noodles.

American Chicken Chow Mein with Fried Noodles image

This classic Americanized chicken chow mein with crispy fried noodles recipe is a Chinese restaurant throwback dish that is totally dated but when prepared right, it is a healthy and tasty dish!

2 cups Peanut or Canola oil ((for frying)
8 oz. fresh Chinese wide egg noodles
1 large chicken breast ((sliced into thin pieces))
1/2 teaspoon soy sauce
1/2 teaspoon sesame oil
1 teaspoon cornstarch
1 tablespoon oil
1 medium onion ((sliced))
1 clove garlic ((minced))
3 stalks celery ((thinly sliced on the diagonal))
5 fresh shiitake mushrooms ((sliced; you can substitute any kind of mushroom here))
2/3 cup bamboo shoots
2/3 cup water chestnuts ((optional))
2 cups napa cabbage ((roughly chopped))
2 cups baby bok choy ((or Shanghai bok choy; broken up into individual leaves and washed))
1 1/4 cups chicken stock
3/4 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon fresh ground pepper
1 cup bean sprouts
2 tablespoons cornstarch ((mixed into a slurry with 2 tablespoons water))

Steps:

  • Heat your oil to 400 degrees in a deep medium pot. Break up the noodles with your fingers and drop them in the oil a handful at a time. Use a pair of heatproof chopsticks or a long fork to break up the noodles and prevent them from sticking together. Fry until golden brown. You may need to flip/move the noodles so they brown evenly. Drain on a paper towel and let cool. Repeat until all noodles are done and set aside.
  • In a medium bowl, marinate the chicken with the soy sauce, sesame oil, and cornstarch. Set aside while you prepare the other ingredients.
  • When you're ready to cook, place a wok over high heat. Add a tablespoon of oil and sear the chicken. Remove from the wok and set aside. Add the onions and garlic to the wok and stir-fry for 30 seconds. Then add the celery and mushrooms. Stir-fry for another minute.
  • Add the bamboo shoots, water chestnuts (if using), napa cabbage, and bok choy. After stir-frying for about 30 seconds, add the seared chicken, chicken stock, salt, sugar, pepper, and bean sprouts. Stir-fry until the mixture comes to a boil.
  • Gradually stir in the corn starch slurry until the sauce is thick enough to coat a spoon. If you like more sauce, you can add more chicken stock and re-season. Serve over rice. Top the dish with a generous handful of fried noodles and enjoy. Nothin' like takeout food at home!

Chicken chow mein is so much better than takeout! It is filled with chicken, veggies, classic chow mein noodles and the best homemade chow mein sauce. You will love this one pan dinner!

1 lb chicken breast (boneless, skinless)
3 tbsp oil
12 oz chow mein noodles ((uncooked noodles))
2 cups cabbage
1 large carrot (julienned)
1/2 batch green onions
2 garlic cloves
6 tbsp oyster sauce
3 tbsp low sodium soy sauce
3 tbsp light sesame oil ((not toasted))
1/2 cup chicken broth
1 tbsp cornstarch
1 tbsp granulated sugar

Steps:

  • In a small mixing bowl, use a whisk to combine oyster sauce, granulated sugar, sesame oil, soy sauce, chicken broth and cornstarch. Set aside.
  • Cook your noodles according to package instructions then drain, rinse with cold water and set aside.
  • Heat a large wok or pan with olive oil over medium-heat. Cut your chicken breasts into bite-sized strips and cook them in the oil until golden brown. Remove strips and set aside.
  • Add carrots, cabbage and pressed garlic and saute for a few minutes until veggies are slightly softened and the cabbage is a bit translucent.
  • Add chicken and noodles back into the pan. Pour sauce over the top and continue cooking all the ingredients together for another 2 minutes.
  • Garnish your chow mein with chopped green onions and serve the noodles straight from the pan and piping hot!

  • slice celery-put on paper towel-dry repeat with remaining vegetables, putting each in its own pile heat oil in wok until almost smoking add garlic and salt, cook until garlic browns-remove add celery and cook on high about 30 seconds push up sides of wok add onions cook another 30 seconds-push up wok repeat with green pepper and then mushrooms-add more oil if necessary add water and soy sauce-reduce heat to medium-cover cook 2 minutes more uncover, add bean sprouts push vegetables up the side of wok, add corn starch dissolved in water to the boiking liquid on bottom of wok stir all together serve on fluffed bed of rice with chow mein noodles add onion, cook 30 seconds

  • Add 1 T of the stir fry oil to the wok (recommended) or sauté pan, set to high heat. When the oil is hot, add the shrimp. Toss to coat in the oil and then turn shrimp after a few minutes once they start to get crispy on the bottom. Once opaque in color and fully cooked, toss once more to ensure even doneness and then transfer to a plate, leaving any remaining oil in the pan.
  • Add remaining stir fry oil to the hot wok. Add sliced onion, toss to coat in oil, then toss only to prevent browning. Once onion begins to sear, add the cabbage and celery. Toss to coat in oil once again, then allow to cook for a couple of minutes to brown. Toss to prevent burning.

  • Briefly blanch the egg noodles with hot water or par-boil the noodles according to the packet instructions. DO NOT OVERCOOK. Rinse the noodles immediately under running cold running water for 10 seconds. Drain and loosen the noodles in a colander, Set aside and air dry the noodles for 1 hour. This will ensure that the noodles are crispy after frying.
  • Soak the dried shiitake mushrooms in hot water until softened. Squeeze the water in the mushrooms and cut them into thin slices. Marinate the pork with all the ingredients in the Pork Marinade. Mix all the ingredients of the Chow Mein Sauce together. Set both aside.
  • Heat a wok or skillet over high heat, add 2 inches of oil. When the oil is hot and heated, lay the noodles flat in the wok or skillet. Turn to medium heat, do not move the noodles till they turned golden brown on the bottom. Turn and flip the noodles over and shallow fry the other side until golden brown and crispy. Repeat the same process until both sides are crispy. Remove the noodles from the oil and drain on a plate lined with paper towels. Remove the paper towels.
  • Keep 1 table spoon of oil in the wok or skillet over medium heat, add the ginger, dried mushrooms and pork. Stir continuously for about 2 minutes or until the pork is cooked through. Add the bean sprouts and yellow chives, stir a few times before adding the Chow Mein Sauce. As soon as the sauce thickens, turn off the heat and transfer the sauce to the top of the crispy noodles. Serve immediately.

  • Prepare ingredients for a food processor. Peel and core tomatoes, take the skin off the onions, and slice and deseed bell peppers.
  • Finely chop ingredients in a food processor. Depending on the size of your food processor, you may need to chop each ingredient separately.
  • Combine the chopped cabbage, onions, green and red bell peppers, tomatoes, and salt in a large bowl. Let the mixture sit overnight in the refrigerator, then drain the next day.
  • In a large saucepan over medium heat combine the sugar, mustard, turmeric​, ginger, mustard seed, celery seed, whole spices, and vinegar. Simmer the mixture for 10 minutes.
  • Place jars in waterbath canner or large pot with rack in the bottom and fill with enough water to cover the jars. Bring to a simmer (180°F) and simmer for at least 10 minutes.
  • Pack the chow-chow into hot, sterilized jars, leaving 1/2 inch head space in jar. Remove air bubbles by running a spoon around the rim of the jar if needed.
  • Place jars in waterbath canner or pot with rack. Heat the jar in a boiling water bath for 10 minutes to seal the lids. Remove with jar lifters, keeping upright at all times.
  • Let jars cool on a cutting board or towel with 2 inches of space between each jar for 12 to 24 hours. After cooling, be sure to inspect the seal; here should be no flex when center is pressed.
