1 cup all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1/2 cup packed brown sugar
1/2 cup sugar
1 cup old-fashioned oats
1/2 cup milk chocolate chips
1/2 cup butterscotch chips
1/2 cup sweetened shredded coconut
ADDITIONAL INGREDIENTS:
1/2 cup butter, softened
1 large egg, room temperature
3/4 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the first five ingredients. In a 1-qt. glass jar, layer flour mixture, brown sugar, sugar, oats, chips and coconut, packing well between each layer. Cover and store in a cool, dry place up to 6 months. Yield: 1 batch (4 cups). , To prepare cookies: Preheat oven to 350°. In a large bowl, beat butter, egg and vanilla. Add cookie mix and mix well. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake 9-11 minutes or until golden brown. Cool 2 minutes before removing to wire racks.

Steps:

  • In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  • Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1 large egg
1/2 cup unsalted butter (1 stick), very soft
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
2 teaspoons vanilla extract
1 1/2 cups old-fashioned whole rolled oats (not instant or quick cook)
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt, or to taste
1 cup semi-sweet chocolate chips, plus more for after baking (or substitute with raisins, walnuts, etc.)

Steps:

  • Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray; set aside.
  • To a large bowl, add the egg, butter, sugars, vanilla, and mix with a spoon aggressively for about 90 seconds, or until smooth and slightly fluffed, i.e. your bicep and shoulder should be burning if you've mixed well enough.
  • Add the oats, flour, baking soda, salt, and stir to combine.
  • Add the chocolate chips and stir to combine.
  • Using a 2-tablespoon cookie scoop, form mounds and place on prepared baking sheet spaced about 2 inches apart (I baked 12 cookies on the first sheet)
  • Bake for about 10 to 13 minutes (short for super soft cookies, longer for more well-done cookies), or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center; don't overbake. Cookies firm up as they cool.
  • Immediately upon taking the baking sheet out of the oven, add about 5 additional chocolate chips per cookie. Allow cookies to cool on baking sheet for about 10 minutes before serving. I let them cool on the baking sheet and don't use a rack.

2 cups corn flakes or 2 cups cereal, of your choice

1 teaspoon orange juice (lemon rind and juice or spices may be substituted for orange rind and juice)
1/2 cup chopped pecans or 1/2 cup walnuts

Steps:

  • Basic Oatmeal Cookie Mix.
  • Combine shortening and sugar in a large bowl, blending well.
  • Combine remaining ingredients; mix well.
  • Add to sugar mixture, blending well. Cover and store in refrigerator until ready to use.

  • Combine all ingredients, mixing well.
  • Shape dough into 1-inch balls.

1 and 2/3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups rolled oats
1 and 1/4 cups chopped dark chocolate OR your mix-in of choice (see post for ideas!)
1 teaspoon flaky sea salt, optional

Steps:

  • Preheat oven to 350 degrees (F). Line an 9x13-inch baking pan with parchment paper or aluminum foil. Spray lightly with non-stick spray and set aside.
  • In a saucepan over medium heat, melt the butter, then continue to cook it, stirring occasionally, until golden brown. Keep an eye here, you don't want burnt butter! Remove from heat and scrape the butter into a large heat proof mixing bowl.
  • Whisk in both sugars and mix until well combined. Stir in the vanilla. Then add in the eggs and egg yolk, beating until combined. Stir in the milk.
  • Using a rubber spatula, add in the flour, baking soda, salt, cinnamon, and rolled oats, mixing until just combined. Finally, fold in the chocolate chunks. Scrape the batter into the prepared pan.
  • Bake for 24 to 30 minutes, or until the edges are firm and golden. Press extra chocolate chunks on top of the warm bars, if desired.

1/2 cup brown sugar (packed)
1/2 cup unsalted butter (softened)
1/2 cup vegetable oil
1 1/2 tsp cinnamon

2 cups quick cooking or old fashioned oats
1 cup raisins or chocolate chips (or whatever your favorite mix in is)
1-2 tbsp water (optional, if you are using a 16 ounce cake mix, see note below.)

Steps:

  • Preheat your oven to 350 degrees.
  • Next in large mixing bowl add your dry ingredients (cake mix, brown sugar, cinnamon, nutmeg, and oats). Stir well with a large spoon or spatula.
  • Add the butter in, it should be softened and cooled so that it doesn't scramble the egg.
  • Add the oil and egg.
  • Mix well with a hand mixer until well mixed. If your dough seems to dry, try adding 1 to 2 tablespoons of water. Stir in your raisins, chocolate chips, or desired add-ins with a large spoon.
  • Use a large cookie scoop (about two tablespoons) to form the dough into balls. Place on a greased cookie sheet and bake for 14 to 15 minutes or until the edges are slightly golden.
  • Let the cookies rest on the sheet for 5 to 10 minutes before transferring.

¾ cup (100g) dried cranberries

Steps:

  • In the bowl of a freestanding mixer, cream the butter and sugar together until light and fluffy.
  • Add the eggs and beat in then scrape down the bowl with a spatula.
  • Add the oats, coconut, flour, baking powder, cinnamon, salt, seeds, cranberries, chocolate and nuts then mix until just combined.
  • Using a cookie scoop, scoop dough and place onto a lined sheet pan.
  • Place the pan in the fridge and allow to chill for 15 minutes while you preheat the oven to 180°C/320°F.
  • Remove the cookie dough from the fridge then place the dough onto two lined sheetpans/cookie sheets, a few cm's/inches apart.
  • Place in the oven and allow to bake for 10-15 minutes until golden brown and crisp around the edges.
  • Remove from the oven, then transfer to a wire rack and allow to cool completely before serving.
