2 cups roughly chopped tomatoes
2 cloves (laung / lavang)
4 to 5 cashew nuts (kaju)
1 tbsp butter
1/2 tsp cumin seeds (jeera)
2 tsp ginger-garlic (adrak-lehsun) paste
1/2 cup finely chopped onions
1 tsp chilli powder
1/4 tsp garam masala
1/2 tsp dried fenugreek leaves (kasuri methi)
1 tbsp tomato ketchup
1 tsp sugar
salt to taste
3 tbsp fresh cream

Steps:

  • For basic makhani gravyTo make makhani gravy recipe, combine the tomatoes, cloves, cashewnuts and ½ cup of water in a mixer and blend to a smooth paste. Keep aside.Heat the butter in a broad non-stick pan, add the cumin seeds and sauté on a medium flame for few seconds.Add the ginger-garlic paste and onions and sauté on a medium flame for 2 minutes.Add the tomato paste, chilli powder, garam masala, dried fenugreek leaves, tomato ketchup, sugar and salt, mix well and cook on a medium flame for 5 minutes, while stirring occasionally.Switch off the flame, add the fresh cream mix well.Use the basic makhani gravy as required.

12 large sized tomatoes
salt
1 tablespoon kashmiri chili powder
1 inch piece gingerroot (roughly chopped)
1/4 cup butter
1 tablespoon garlic paste
1 tablespoon ginger paste
1/2 teaspoon dried fenugreek leaves (kasuri methi)
2 tablespoons sugar or 2 tablespoons honey
1 teaspoon garam masala powder
1 cup fresh cream

Steps:

  • Quarter the tomatoes. Put them in a pressure cooker along with salt, half of the Kashmiri red chilli powder, ginger and two cups of water.
  • Pressure cook till two whistles. Remove and set aside to cool.
  • Blend the mixture in a blender and strain.
  • Heat butter in a pan, add garlic paste, ginger paste and two tablespoons of water. Cook for a minute.
  • Add the pureed tomatoes and cook for two to three minutes.Dry roast the kasuri methi in a microwave or on a tawa. Crush.
  • Add the remaining Kashmiri red chilli powder to the gravy along with salt, sugar or honey. Stir and cook for a minute. Add the crushed kasuri methi and garam masala powder.
  • Mix and cook for a minute.Add cream only if you need to use the gravy immediately.
