Steps:
- Pre-heat the oven to 180ºC/360ºF and line a Dutch oven/cast iron pot with baking/parchment paper.
- In a large mixing bowl, whisk together the dry ingredients.
- Whisk an egg into the buttermilk and pour into the dry ingredients.
- Mix the dough until it just starts to come together (there will be large lumps) then add the cheese and herbs.
- Continue mixing until the dough just comes together. The dough will be sticky and shaggy looking (not too smooth or else it will be over-mixed).
- Transfer to the prepared pot then score a cross onto the top with a sharp knife. Cover with the lid and place in the pre-heated oven.
- Bake for 30-45 minutes or until the bread is cooked through. It will sound hollow when knocked on the bottom and a skewers inserted will come out clean.
- Remove from the oven and allow to cool for 10-15 minutes before slicing and serving with butter.

Steps:
- Preheat the oven to 375°F. Grease an 8-inch round cake pan with butter or nonstick cooking spray.
- In a large bowl, whisk together the flour, baking powder, baking soda and salt.
- Toss in the cold butter. Using a pastry cutter or two butter knives, "cut" the butter into the flour mixture until the mixture is crumbly, with some pea-size clumps of butter within. Mix in the cheese.
- In a separate bowl, whisk together the buttermilk and the egg. Add to the dry ingredients and stir until everything is just moistened. Do not overmix.
- Transfer the sticky dough to the prepared pan. Dust your hands with flour and press the dough to the edges of the pan. Bake the bread for 40-45 minutes, until golden brown and a cake tester comes out clean. Let the bread cool in the pan for about 5 minutes, then turn out onto a rack to cool. Cut into wedges and serve warm with softened butter.
- Note: If you'd like to make your own buttermilk, check out the easy method here.
- Freezer-Friendly Instructions: The bread can be frozen for up to 3 months. Once it's completely cooled, wrap it securely in plastic wrap and place in the freezer. To reheat, wrap the bread in aluminum foil and warm it in a 350°F oven until hot.

BASIC IRISH SODA BREAD WITH CHEESE
This is the most simple Irish Soda Bread recipe I've ever used. I learned it from an old Irish gentleman years ago, and it's been my favorite ever since. You can make it simply, and without the cheese, or add the cheese. With or without it, this recipe is great served with soups!

Steps:
- Preheat oven to 425.

- Spray cast iron skillet with non-stick cooking spray and add the dough directly to the 10 inch cast iron skillet. Add an X pattern in the middle with a sharp knife. Brush lightly with buttermilk.
- Bake for 30-35 minutes or until a toothpick is inserted and it comes out clean. Let cool for several minutes before you remove it from the skillet and slice. Serve warm with butter. Enjoy!
- Store leftovers in a tightly sealed container at room temperature for 1-2 days.

- Preheat the oven to 450 F (232 C). Line a 4 or 5 quart dutch oven with parchment paper. If you do not own a dutch oven, you can bake this on a sheet pan or in a skillet, but it will not rise quite as much as it will if you use an enclosed environment.
- In a large mixing bowl, whisk together the flour, salt, and baking soda until thoroughly combined. Add the pieces of cold butter into the bowl and use a pastry blender or a fork to cut the butter through the flour mixture.
- Add the buttermilk in slowly and use a rubber spatula to stir until a soft dough forms. You want the mixture to be a very soft dough that is almost on the verge of becoming a thick batter. Different varieties of flour are more absorbent than others, so this is why a range of liquid is listed.
- Once you have the desired consistency, transfer the dough into the prepared dutch oven and use the spatula to roughly shape it into a disk. Use a sharp knife, or a bench scraper, to score an X into the dough. You want to cut very deep, almost all the way to the bottom of the dough.
