This recipe is pretty easy and always comes through. Try it! If you don't have enough turkey drippings, substitute with chicken broth.

2 cups turkey drippings
2 tablespoons chicken broth, or as needed
3 tablespoons butter
3 tablespoons all-purpose flour
½ teaspoon browning sauce
½ teaspoon chicken bouillon, or more to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Pour turkey drippings into a 1-quart measuring cup. Add chicken broth, if necessary, to reach to 2-cup fill line. Stir in butter and flour. Transfer to a saucepan.
  • Cook over high heat until gravy is boiling and starts to thicken, 6 to 8 minutes, stirring twice during cooking. Whisk in browning sauce, bouillon, salt, and pepper.

Beef drippings
2 tablespoons Gold Medal™ all-purpose flour
1 cup Progresso™ beef flavored broth (from 32-oz carton) or water
Browning sauce, if desired
Salt and pepper to taste

Steps:

  • After removing beef from pan, scrape all brown particles from pan and pour particles and drippings into bowl or glass measuring cup. Skim 2 tablespoons of fat from the top of the drippings; add fat to 1-quart saucepan. Discard any remaining fat; reserve remaining drippings. Stir flour into fat in saucepan.
  • Cook over low heat, stirring constantly, until mixture has thickened; remove from heat. Gradually stir in reserved drippings plus enough broth or water to equal 1 cup. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in a few drops browning sauce for darker color. Stir in salt and pepper.

Homemade gravy is quick and easy. If you've roasted chicken, turkey or beef, use the drippings left in the roasting pan. They make the gravy extra flavorful and seasoned. You can make gravy without drippings and use stock or broth in it's place. Store-bought stock is usually under seasoned. Take care when seasoning with salt and pepper towards the end of the recipe. Finally, for more flavor, whisk in mushroom powder. This is optional, but adds a deep savory flavor.

1/4 cup unsalted butter
1/4 cup all-purpose flour
3 cups warm stock (poultry, beef or vegetable stock) or use pan drippings, see note below
1/2 teaspoon mushroom powder, optional, see our recipe
1/2 tablespoon chopped fresh herbs or 1/2 teaspoon dried herbs (try sage, thyme or rosemary)
2 to 3 tablespoons half and half or cream, optional
Sea salt and fresh ground black pepper to taste

Steps:

  • In a wide skillet with sides, melt butter over medium heat. When melted and sizzling, whisk in the flour. Whisk until the flour and butter turn into a smooth paste and look medium blonde in color; about 1 minute. It smells toasty, like browned butter.
  • Pour in stock and whisk until smooth. Bring the gravy to a low simmer. As it simmers, it thickens and becomes glossy.
  • Whisk in the herbs and mushroom powder then cook at a low simmer for a minute or two. Remove from the heat then stir in half and half or cream (optional).
  • Taste for seasoning and adjust with salt and black pepper (we like a generous amount of pepper).
  • Substitute some or all the butter with fat left in the pan from roasting. If there are juices left in the pan, strain them then swap all or some of the stock for the pan juices. Pan drippings and juices will be well seasoned compared to the stock. When seasoning, taste the gravy first then adjust with more salt and/or pepper. If you used a stove-top safe pan such as a Dutch oven or stainless steel pan for roasting, there is no need for the skillet. Make the gravy directly in the roasting pan.

Pan drippings from roasted meat
2 tablespoons unsalted butter
1/4 cup all-purpose flour* (see Note to substitute cornstarch)
Up to 1 cup broth or stock, any flavor to match your meal
2 tablespoons whole milk
Salt, to taste (preferably kosher)

Steps:

  • Place meat drippings in a measuring cup and refrigerate 15 minutes.
  • Skim 2 tablespoons fat off the top and place in roasting pan. Discard any remaining fat. If you don't have enough, add enough butter to equal 2 tablespoons total fat.
  • Add enough broth to the liquid drippings to equal 1 cup.
  • On the stovetop over medium heat, melt the fat and butter in the roasting pan, scraping up any brown bits left in the pan.
  • Stir in the flour to form a roux (paste) and cook for 1 minute or until lightly brown.
  • Slowly whisk in the liquid drippings mixture. Bring to a boil then cook until thickened, about 3-5 minutes.
  • Remove from the heat and stir in the milk. Taste and add salt as needed. Gravy will thicken as it cools. If this happens, reheat and stir in a little bit of broth to thin it out if needed.

NOTE: I'm not sure how 1-2 TEAspoons of Worcestershire got changed to 1-2 TABLEspoons.... which is way too much! I've changed the recipe back to 1-2 TEAspoons of Worcestershire.

3 tablespoons butter or 3 tablespoons margarine
3 tablespoons all-purpose flour
1 (10 1/2 ounce) can condensed chicken broth (flavor of your choice, I usually use beef) or 1 (10 1/2 ounce) can condensed vegetable broth, undiluted (flavor of your choice, I usually use beef)
1 -2 teaspoon Worcestershire sauce, to taste
1/4-1/2 teaspoon garlic powder (do not use garlic salt... results will be too salty)
1/4 teaspoon ground pepper (to taste)

Steps:

  • Melt butter in saucepan over medium heat.
  • Whisk in flour til well blended.
  • Slowly add broth, whisking continually.

  • Keep an eye on the saucepan, the thickening process goes quickly.

My children were always calling to ask how I made my gravy without lumps. I made a recipe book for each of them and included my basic pan gravy. They have injoyed the recipes and now we can talk about the grandchildren when they call and not about lumpy gravy! : )

2 tablespoon(s) all-purpose flour
1 cup(s) liquid(water, chicken broth, milk or combo)
- salt and pepper (or garlic powder) to taste

Steps:

  • After the meat is removed from the pan and put in a warm place, pour off all but 2 tablespoons of the pan juices in a skillet.
  • Sprinkle the flour over the heated drippings ( or oil), stir constantly so the flour and oil are mixed and the flour cooks about a minute. Gradually add the liquid, stirring constantly until the gravy begins to thicken. Add salt and pepper to taste (I often add a little garlic powder).
  • Tips: Have your ingredients ready with everyting at your fingertips. Use a large serving spoon. Add liquid gradually and stir quickly (eliminates lumps). Keep heat on medium (too hot causes gravy to thicken too quickly). Gravy keeps cooking and thickening even after it's removed from the pan. Pour it up just before you think it is thick enough(Experience is the best teacher). If gravy is too thick, thin with a little warmed liquid and reheat. End results... you should have a nice gravy and no lumps! :)

Steps:

  • Gather the ingredients.
  • Pour the turkey or chicken pan drippings into a 2-cup measuring cup or gravy separator and skim the fat off. Alternatively, put the measuring cup in the refrigerator until the fat solidifies on top and can be easily skimmed off.
  • Put about 1/4 cup of the fat into a saucepan over medium heat.
  • Stir in 1/4 cup of all-purpose flour .
  • Cook, stirring for 2 minutes.
  • Discard any remaining skimmed fat from the drippings. Add enough stock or water to the liquids left in the measuring cup to make 2 cups of liquid. Pour into the flour and fat mixture. Cook, stirring or whisking continuously, until thickened and bubbling. Continue cooking for about 1 minute, stirring constantly.
  • Add kosher salt and freshly ground black pepper to taste.
  • Serve immediately. Enjoy.

  • Remove the chicken (or turkey, beef, or pork) from the pan. Use a rubber spatula to scrape up all of the browned bits that might be stuck to the pan. Then pour all of the pan drippings through a fine mesh strainer or piece of cheesecloth and into a clear container.
  • Melt the butter in a small saucepan over medium heat. Once the butter has melted, whisk in the flour. Let cook, whisking constantly, until the butter and flour (the roux) mixture becomes golden brown.
  • Use a baster to suck up the chicken drippings below the layer of fat. Whisk this into the roux. Continue until all of the drippings have been added. (I discard the fat later). If you don't have a baster, you can spoon off the excess fat and then pour the drippings into the pan. Just make sure you put the fat into a container where it can harden and be thrown away - it's bad to dump it down the drain. (Or save it for cooking!)
