Carla's Basic Meatballs image

A snap to make and a breeze to freeze! This is a basic recipe for meatballs suitable for all uses. Feel free to be creative and add any additional spices or flavors you need to suit your tastes.

Number Of Ingredients 10

10 ounces lean ground beef
1 large egg
1/4 cup onion, finely chopped
1/4 cup carrot, shredded then minced
1/4 cup green pepper, finely minced
1/3 cup Italian seasoned breadcrumbs
1/3 cup milk
1 teaspoon Worcestershire sauce
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Mix ground beef, egg, onion, carrots, breadcrumbs, milk, Worcestershire sauce, salt and freshly ground black pepper to taste together.
  • Shape mixture by Tablespoonfuls into 1-1/2-inch balls.
  • Place the meatballs in a lightly greased 13x9x2-inch or 15-1/2x9-1/2x1-inch baking dish.
  • Bake, uncovered, in a 400 degree Fahrenheit oven until light brown, about 20 to 25 minutes.
  • Drain off any excess fat.
  • Use meatballs as desired.
  • FREEZING:.
  • Cover and allow meatballs to cool slightly before freezing. No special equipment is needed in the preparation for freezing. Ziplock bags work fine for me. Allow meatballs to thaw about 30 minutes at room temperature before using. Use as desired with your favorite recipes.

4 eggs, lightly beaten
2 cups dry bread crumbs
1/2 cup finely chopped onion
1 tablespoon salt
2 teaspoons Worcestershire sauce
1/2 teaspoon white pepper
4 pounds lean ground beef (90% lean)

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls, about 12 dozen. , Place meatballs on greased racks in shallow baking pans. Bake at 400° for 10-15 minutes or until no longer pink, turning often; drain. Cool. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Reheat on a greased 15x10x1-in. baking pan in a preheated 350° oven until heated through.,

1/4 cup water
1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. A wonderful all-purpose meatball to use in a variety of recipes! Easy to make, and with ingredients usually on hand. The yield is based on 1-1/2" meatballs, but you can make them smaller. I get about forty-eight 1" meatballs out of this same recipe.

1 egg, beaten
3/4 cup soft breadcrumbs (about 1 slice bread)
1/3 cup milk
1 teaspoon Worcestershire sauce
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon garlic powder
1 1/2 lbs ground beef (I prefer 90% lean or higher)

Steps:

  • Combine all ingredients except beef.
  • Mix in beef well, and shape into meatballs.
  • Place all on single layer in pan.
  • Bake 20 minutes at 350.
  • Remove and drain on paper towels, and let cool 15 minutes.
  • Put in freezer bag or freezer container or use immediately.
