Steamed Asparagus image

Provided by Food Network Kitchen

Categories     side-dish

Time 10m

Yield 3 to 4 servings

Number Of Ingredients 4

1 pound medium asparagus, stalks trimmed and peeled
1 to 2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 lemon, cut into wedges

Steps:

  • Pour about 1-inch of water into a large saucepan, and set up a collapsible steamer inside. Bring the water to boil, lay the asparagus in the steamer, cover, and steam until crisp-tender, about 4 to 5 minutes. Transfer asparagus to a heated serving dish, drizzle with the olive oil, and season with salt and pepper, to taste. Garnish with lemon and serve immediately.
  • Cook's Note: You may finish the asparagus with the grated zest of a small lemon, a tablespoon of unsalted butter, and a teaspoon of minced flat-leaf parsley leaves, instead of the oil.

SIMPLE ROASTED ASPARAGUS

Simple Roasted Asparagus image

I've always enjoyed steamed or boiled asparagus - Until I discovered roasted asparagus. I got it from food newtork. It was intended to be a side dish but my family ate most of it while we were waiting for the rest of the meal to finish cooking. In learned some time ago (food Network again) that lage stalks, peeled, offer a much meatier, flavorful vegetable than the skinny ones.

BASIC BOILED ASPARAGUS

Basic Boiled Asparagus image

Provided by Food Network

Categories     dessert

Time 20m

Yield 4 servings

Number Of Ingredients 2

2 pounds asparagus, the thicker the better
2 tablespoons salt (for boiling water)

Steps:

  • Bring about 6 quarts of water to a rapid boil in a covered pot large enough to hold the asparagus. Cut the bottom section- usually about 1 to 2 inches off the asparagus stalks with a sharp knife. Peel the asparagus by laying them flat, one at a time, on a cutting board. If the asparagus are thinner than 1/2-inch, use a vegetable peeler and peel the asparagus starting at the base of the tip and peeling them all the way down to the base, eliminating the fibrous peel and revealing the pale green flesh. If the asparagus are very thick or woody, use a paring knife and start peeling from the base. When ready to cook, toss the salt into the boiling water and carefully lower in the asparagus. Turn the heat to low and simmer the asparagus, uncovered, until the spears are easily penetrated with a knife, usually after about 5 minutes but from 1 minute for very thin asparagus to 12 minutes for the very thickest. If serving cold asparagus, plunge the hot cooked asparagus into ice water or rinse under cold water in a colander. Pat dry.

  • Cook eggs on the stove until hard boiled (I usually let them boil for 5 minutes). Or make Instant Pot hard boiled eggs, so easy.
  • In a large pot, add 3/4 cold water and bring to a boil (you can use the same pot you used for cooking eggs previously). While water is coming to a boil, trim asparagus by snapping the end of one spear and cutting remaining asparagus with a knife the same length.
  • Then chop asparagus spears into 2 inch pieces, add to boiling water, and cook for 60 seconds if it is thin or for 3 minutes if the stalks are thick. Pierce with a knife or fork and stop cooking while vegetable is still bright green.
  • Drain asparagus, return to the pot and fill it with cold water and ice to cover. This will stop the cooking process. Set aside.

  • Trim about an inch and a half off the ends of the asparagus (I do this with a sharp knife while they're still tied with the rubber band).
  • Add the butter and water to a deep skillet over medium-high heat. As soon as the butter has melted, add the asparagus to the pan.
  • Cover and cook for 5 minutes. I found this time perfect for medium-thickness asparagus to be slightly more done than tender-crisp. If your asparagus is thicker or thinner or you prefer it to be more crisp, you may need to add or subtract a minute or two.
  • Season the asparagus generously with salt & pepper. You can spoon some of the buttery poaching liquid over top if you wish when serving.

  • Meanwhile, trim about 1/2 inch from the ends of the asparagus. Lay the spears on a work surface and peel them with a sharp vegetable peeler, starting about 1 1/2 inches from the top and running evenly down the length of each spear. (Spears are brittle and can snap when peeled in midair.) Gather the spears into 2 to 4 bundles and tie them loosely with kitchen string, then lower them into the simmering water.
  • Cook, increasing the heat to maintain a simmer, if necessary, until the asparagus is tender when pierced with the tip of a knife, anywhere between 8 and 30 minutes, depending on the thickness of the spears. Lift the bundles from the water with kitchen tongs and drain them on paper towels.
