3 medium zucchini
3/4 pound ground beef
3/4 cup chopped onion
1/2 cup chopped green pepper
2 garlic cloves, minced
1-1/2 cups water, divided
3/4 cup canned fire-roasted diced tomatoes or chopped fresh tomatoes (with seeds and juices)
1/2 cup chopped roasted sweet red peppers
1/3 cup chopped fresh mushrooms
1/4 cup uncooked ditalini or other small pasta
2 teaspoons minced fresh thyme or 1 teaspoon dried thyme
1/2 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese
1 cup shredded Italian cheese blend, divided
Pasta sauce, optional

Steps:

  • Preheat oven to 350°. Halve zucchini lengthwise; place cut sides down in an ungreased 13x9-in. baking dish. Bake 10 minutes. When cool enough to handle, scoop out seeds, leaving a 1/4-in. shell., Meanwhile, in a large skillet, cook beef, onion, green pepper and garlic over medium heat 8-10 minutes or until beef is no longer pink, breaking beef into crumbles; drain. Stir in 1 cup water, tomatoes, red peppers, mushrooms, pasta, thyme, oregano, salt and pepper. Cook until mixture is thickened and pasta is al dente, 12-15 minutes. Stir in Parmesan cheese., Spoon mixture into zucchini shells. Place in an ungreased 13x9-in. baking dish; sprinkle with 3/4 cup Italian cheese blend. Pour remaining water into bottom of dish. Bake, covered, 20 minutes. Sprinkle with remaining cheese. Bake, uncovered, until zucchini is tender and cheese is melted, about 5 minutes longer. Serve with pasta sauce if desired.

2 cups water
1 cup brown rice
5 zucchini, halved lengthwise
10 (1 ounce) slices Provolone cheese, halved
1 pound ground chicken breast
2 tablespoons extra-virgin olive oil
1 red onion, finely chopped
2 jalapeno peppers, seeded and chopped
1 clove garlic, chopped
1 teaspoon Worcestershire sauce
½ teaspoon dried basil
¼ teaspoon dried oregano
¼ cup tomato sauce, or to taste
1 tablespoon freshly grated Parmesan cheese
salt and ground black pepper to taste
2 tablespoons freshly grated Parmesan cheese, or to taste - divided

Steps:

  • Bring the water and brown rice to a boil in a saucepan. Reduce the heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Scoop the flesh from the zucchini halves using a melon baller, starting about 1/2 inch from one end, creating a 'boat'. Chop and reserve zucchini flesh. Place the zucchini boats face down onto the prepared baking sheet.
  • Bake zucchini boats in the preheated oven for 15 minutes. Flip over the halves using tongs and line each zucchini boat with 2 half-slices of provolone cheese.
  • Heat a large skillet over medium-high heat. Cook and stir ground chicken in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix rice into chicken.
  • Heat olive oil in a non-stick pan over medium heat; cook and stir onion, jalapeno pepper, and zucchini flesh in the hot oil until onion is slightly softened, about 5 minutes. Add garlic, Worcestershire sauce, basil, and oregano; stir well. Mix in chicken-rice mixture, tomato sauce, 1 tablespoon Parmesan cheese, salt, and pepper. Scoop mixture into the zucchini boats; sprinkle each boat with about 1 rounded teaspoon Parmesan cheese.
  • Bake in the preheated oven until cooked through and Parmesan cheese is melted, 25 to 30 minutes.

1 can (14-1/2 ounces) diced tomatoes
2/3 cup medium pearl barley
1/2 teaspoon ground cumin
6 medium zucchini (8 to 9 inches)
1/2 pound ground beef or turkey
1 medium onion, finely chopped
2 garlic cloves, minced
3/4 teaspoon ground allspice
1 tablespoon olive oil
1/4 cup minced fresh parsley
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese
2 tablespoons butter, melted

Steps:

  • Drain tomatoes, reserving juice. Set the tomatoes aside. Add water to juice to measure 2 cups; place in a saucepan. Add barley and cumin; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until tender. , Meanwhile, place zucchini in a Dutch oven and cover with water; bring to a boil. Cook for 6 minutes or until slightly tender. Drain; cool slightly. Slice zucchini in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. Chop pulp and set aside. , In a skillet, cook beef, onion, garlic and allspice in oil until meat is no longer pink; drain. Add barley mixture, parsley, salt, pepper, tomatoes and zucchini pulp; mix well. Spoon into zucchini shells. , Combine bread crumbs, Parmesan cheese and butter; sprinkle over zucchini. Place in two greased 13-in. x 9-in. baking dishes. Cover and bake at 350° for 35-40 minutes or until zucchini is tender.

Stuffed zucchini boats are healthy and satisfying and perfect when you want a light yet flavorful meal. Filled with a vegetarian mixture and topped with mozzarella, these zucchini boats are easy and fun!

1/2 cup brown rice, uncooked
4 zucchinis
1 Tablespoon extra-virgin olive oil
1 shallot, finely chopped
4 garlic cloves, minced
2 teaspoon Italian seasoning
1 tomato, diced
1/2 teaspoon salt
1 cup mozzarella, grated
1/4 teaspoon red pepper flakes

Steps:

  • Cook the rice according to package instructions.
  • Halve zucchinis lengthwise and hollow out the flesh using a spoon. Place flesh in a small bowl and roughly chop.
  • Place zucchini halves into a large baking dish or baking sheet. Preheat oven to 350 degrees F.
  • In a large skillet over medium-low heat, warm olive oil for 1 minute. Add zucchini flesh and cook until water is gone, about 5-7 minutes. Add shallot and cook for an additional 3-4 minutes. Add garlic and Italian seasoning and cook for 1 more minute. Remove from heat.
  • To zucchini flesh-shallot mixture, add cooked rice, tomato, and salt. Stir to combine.
  • Distribute rice mixture evenly into each zucchini half. Place in oven and bake for 30 minutes. Top each zucchini half with mozzarella and bake for an additional 10-15 minutes, or until the cheese melts and starts to brown.

1 cup chicken broth
1 large portabello mushroom cap, diced small
2/3 cup quick-cooking barley
2 medium zucchini
1/8 cup parmesan cheese
2 tablespoons parmesan cheese
1 (14 1/2 ounce) can diced tomatoes with basil, garlic and oregano
1 (15 ounce) can black-eyed peas, drained
1/2 cup Italian seasoned breadcrumbs
1 teaspoon dried thyme leaves
1 dash black pepper

Steps:

  • Slice zucchini in half lengthwise.
  • Microwave, flat side down on a paper towel for 3 or 4 minutes.
  • Let cool a bit and scoop out pulp to form each half into a "boat".
  • Put "boats" aside.
  • Chop zucchini pulp.
  • In a medium sauce pan, combine broth, mushrooms and barley.
  • Bring to a boil, reduce heat and simmer, covered for 15 minutes.
  • In a large bowl, combine cooked barley mixture, chopped zucchini pulp, bread crumbs, thyme, black pepper, black eyed peas and 1/8 cup of Parmesan cheese.
  • Fill zucchini with filling.
  • Place remaining filling into a greased baking pan.
  • Place filled zucchini "boats" on top of stuffing.
  • Pour can of tomatoes (with liquid) evenly on top of zucchini.
  • Sprinkle with 2 T. Parmesan cheese.
  • Bake, uncovered @375 degrees for about 45 minutes.

Extra virgin olive oil
1/2 cup grated Parmesan cheese
2 tsp fresh thyme leaves, (no stems)
1 tsp dried oregano
1/2 tsp sweet paprika
1/2 tsp black pepper
pinch kosher salt

Steps:

  • Preheat your oven to 350 degrees F.
  • Mix together the grated Parmesan, thyme, and spices in a medium bowl.
  • Prepare a large baking sheet that's topped with a wire baking rack. Lightly brush the wire baking rack with extra virgin olive oil (or use a healthy cooking spray.) Place the zucchini spears, skin-side down, on the baking rack in a single layer. Brush each one with extra virgin olive oil.
  • Sprinkle the herb and cheese topping on each zucchini stick so they are all lightly coated.

4 medium zucchini ((about 8 oz each))
2 Tbsp olive oil, (divided)
Salt and freshly ground black pepper
1 lb. Italian turkey sausage*
1 Tbsp minced garlic ((3 cloves))
1 cup chopped yellow onion, ((1 small))
1 (14.5 oz) can petite diced tomatoes, (drain off 1 - 2 Tbsp liquid)
2 tsp Italian seasoning
2/3 cup panko breadcrumbs, (divided)
1/2 cup shredded mozzarella
2/3 cup finely shredded parmesan cheese, (divided)
1 1/2 Tbsp chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees. Spray a 13 by 9-inch baking dish with non-stick cooking spray.
  • Using a spoon, scoop centers from zucchini while leaving a 1/4-inch rim on all sides to create boats. Drizzle with 1 Tbsp olive oil, then season with salt and pepper.
  • Bake in preheated oven 15 minutes.
  • Meanwhile heat 1 Tbsp olive oil in a large skillet over medium-high heat. Add onion and saute 3 minutes.
  • Add sausage in crumbles, cook through, while breaking up meat during cooking. Add garlic during last 1 minute of cooking.
  • Remove from heat stir in tomatoes, 1/3 cup panko bread crumbs and Italian seasoning. Season with salt and pepper to taste.
  • Sprinkle 1/3 cup parmesan over zucchini boats, then divide filling among the zucchini boats.
  • In a small mixing bowl stir together the mozzarella cheese, remaining 1/3 cup parmesan and remaining 1/3 cup panko bread crumbs. Sprinkle mixture over zucchini boats.
  • Bake in preheated oven until tender, about 10 - 15 minutes. Sprinkle with parsley and serve warm.
