BAREFOOT CONTESSA'S SUN-DRIED TOMATO DIP (LIGHT VERSION)
Adapted from The Barefoot Contessa Cookbook, 1999. This wonderful dip is just as good as the original, using lower fat versions of cream cheese, sour cream, and mayonnaise. I bet you can't tell the difference!

- Puree the tomatoes, cream cheese, sour cream, mayonnaise, Tabasco sauce, salt, and pepper in a food processor fitted with a metal blade.
- Add the scallions and pulse twice.
- Serve at room temperature.

Steps:
- Place the tomatoes, cream cheese, sour cream, mayonnaise, Tabasco sauce, salt and pepper in a food processor fitted with a metal blade. Blitz to blend well. Add the scallions and pulse twice. Cover and refrigerate until ready to serve. Let dip come to room temperature, garnish with sliced scallions if desired, then serve with flat bread, fresh vegetables, crackers, chips or all of the above.
- *It is important that the cream cheese be room temperature so there are no lumps.

- Put the cream cheese, tomatoes, garlic and 1 T oil in a blender.
- Process just until the ingredients are blended, but not creamy as there should still be some small pieces of sun-dried tomatoes in the dip.
- Serve with assorted vegetables, chips, crackers or seafood.

This is so tasty I could eat it by the spoonful. The recipe comes from my Kraft What's Cooking Magazine. If at all possible use homemade sundried tomatoes (I used Mirj's recipe #14681 - awesome!), they add so much more flavour.

I got this recipe out of "The Barefoot Contessa Cookbook" and have been making it for years. It is easy to double and has always been a big hit at parties.

- Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade.
- Add the scallions and pulse twice.
- Serve at room temperature.
- If making in advance, store in the refrigerator and take out the morning of to let the cream cheese soften.

PASTA WITH SUN-DRIED TOMATOES
Steps:
- Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package. Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, mozzarella, and chopped sun-dried tomatoes.
- For the dressing, combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt, and pepper in a food processor until almost smooth.
- Pour the dressing over the pasta, sprinkle with the Parmesan and basil, and toss well.
SUN-DRIED TOMATO DIP
If you love semi dried tomatoes, you should enjoy this! Originally came from a magazine, but I tweeked it to my own tastes. Please use "real" mayonnaise, the other types make it too sweet. This dip can be served with just about anything & is also great as a sandwich spread. Cook time refers to refrigeration.

- Add mayo, tomatoes and garlic to food processor& blend until smooth.
- Chop 1/2 of the extra tomatoes into small pieces.
- Fold into blended mixture together with basil.
- Top with remaining tomatoes.
- Chill for at least 30mins before serving.
- This is great served with vegetables, chicken, lamb or even chips.
- Adjust ingredients depending on your tastes, desired consistency, etc.

GOAT CHEESE BALSAMIC SUN DRIED TOMATO DIP
A tangy topping of basil and sun-dried tomatoes pairs nicely with the goat cheese. I have made this appetizer several times and it's always a crowd pleaser. Choose a bowl that's shallow and wide enough so the cheese mixture is about 1 inch thick. I doubled the topping once but it was too much. You could increase the topping by 1/2 for those that love the tangy flavour. This can be made ahead; cover and refrigerate cheese and sun-dried tomato mixture separately for up to 1 day. Bring to room temperature before serving. Serve this with sliced baguette, water crackers or spear of endive. This recipe was a runner up in a Tabi Classic Recipe Contest submitted by Christine Dewar published by Canadian Living.
