HERBED GOAT CHEESE SANDWICHES



Herbed Goat Cheese Sandwiches image

8 ounces low-fat cream cheese, room temperature
10 1/2 ounces mild goat cheese, such as Montrachet, at room temperature
1 1/2 teaspoons minced garlic (2 cloves)
1/2 teaspoon minced fresh thyme leaves
3 tablespoons minced fresh parsley
5 to 6 tablespoons low-fat milk
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 loaf dense 7-grain bread, thinly sliced
1 hothouse cucumber, unpeeled

Steps:

  • To make the spread: Place the cream cheese, goat cheese, garlic, thyme, parsley, 5 tablespoons milk, salt, and pepper in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until well mixed. Add an additional tablespoon of milk if the spread is very thick.
  • To make the sandwiches: spread each slice of the bread with the goat cheese spread. Slice the cucumber into thin rounds and arrange on half of the bread slices. Top with the remaining bread and press slightly. Cut the sandwiches into halves, thirds, or triangles.

Barefoot Contessa's Roasted Pepper and Goat Cheese Sandwiches image

I had seen Ina Garten prepare this sandwich on one of her Barefoot Contessa episodes. It looked to die for, and when I finally had time to try it, my suspicions were confirmed. It is so flavorful and just down right yummy. She also prepared a Fresh Pea soup to pair with it, I can't wait to try that, too.

4 large red bell peppers, may substitute yellow
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 garlic cloves, minced
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
2 tablespoons capers, drained
1 large ciabatta, halved horizontally
1 (11 ounce) garlic and herb goat cheese, at room temperature
8 -10 large basil leaves
3 slices red onions, very thin
kosher salt
fresh ground black pepper

Steps:

  • Preheat the oven to 500 degrees F.
  • Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 30 minutes, or until the peppers are cool enough to handle.
  • Meanwhile, combine the olive oil, balsamic vinegar, garlic, salt, and pepper in a small bowl. Set aside.
  • Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds and place the peppers in a bowl along with any juices that have collected. Discard the stems, peels, and seeds. Pour the oil and vinegar mixture over the peppers. Stir in the capers. Cover with plastic wrap and refrigerate for a few hours to allow the flavors to blend.
  • To assemble the sandwiches, spread the bottom half of the loaf with the goat cheese. Add a layer of peppers and then a layer of basil leaves. Separate the onions into rings and spread out on top. Sprinkle with salt and pepper. Cover with the top half of the ciabatta and cut into individual servings.

1 large ciabatta bread, halved horizontally
1 (11-ounce) garlic-and-herb or plain goat cheese (recommended: Montrachet) at room temperature
8 to 10 large basil leaves
3 thin slices red onion

8 - 10 large fresh basil leaves

Steps:

  • Heat oven to 500 degrees F. On a baking sheet, arrange bell peppers in a single layer and roast, turning twice, until skins are completely wrinkled and charred, 30 to 40 minutes. Remove from oven and immediately cover baking sheet tightly with foil. Let stand until peppers are cool enough to handle, about 30 min. 2. Meanwhile, in a small bowl, whisk together oil, vinegar, garlic, salt and pepper until combined well; set aside. 3. Remove and discard stems from peppers and quarter each. Remove and discard peels and seeds; transfer to a bowl along with any juices. Pour oil-and-vinegar mixture over peppers; stir in capers. Cover with plastic wrap and marinate in the refrigerator at least 4 hours or overnight. To assemble sandwiches: 1. Spread cut side of bottom half of ciabatta with goat cheese. Add a layer of peppers, then a layer of basil leaves. Separate onion slices into rings and spread out over basil; season with salt and pepper. Cover with top half of ciabatta and cut into individual servings. Makes 4 to 6 servings.
