BUTTERNUT SQUASH HUMMUS



Butternut Squash Hummus image

1 1/4 pounds butternut squash, peeled and 1-inch-diced
3 tablespoons good olive oil
1 teaspoon ground cinnamon
Kosher salt and freshly ground black pepper
1 (15.5-ounce) can chickpeas (2 cups), drained with liquid reserved
1/2 cup plain whole-milk Greek yogurt
1/4 cup tahini (sesame paste)
1/3 cup freshly squeezed lemon juice (2 lemons)
4 teaspoons minced garlic (4 cloves)
1 teaspoon Sriracha
Pure Grade A maple syrup, for serving (optional)
Toasted pita bread, for serving

Steps:

  • Preheat the oven to 400 degrees.
  • Place the butternut squash on a sheet pan and drizzle with the olive oil. Sprinkle with the cinnamon, 2 teaspoons salt, and 1 teaspoon pepper. Toss with your hands and spread the squash out in one layer on the pan. Roast for 25 minutes, until tender, and set aside for 15 minutes to cool.
  • Reserve 1/4 cup of squash for the garnish and transfer the rest to the bowl of a food processor fitted with the steel blade. Add the chickpeas, yogurt, tahini, lemon juice, garlic, Sriracha, 1 tablespoon salt, and 1 teaspoon pepper and pulse until coarsely processed but not pureed. Add 1/4 cup of the reserved chickpea liquid and pulse a few times to combine. If the hummus is too thick, add more liquid a few tablespoons at a time. Taste for seasonings, transfer to a serving bowl, garnish with the reserved butternut squash, drizzle with maple syrup, if desired, and serve at room temperature with toasted pita bread.

2 cups canned chick-peas, drained, liquid reserved
1 1/2 teaspoons kosher salt
4 garlic cloves, minced
1/3 cup tahini (sesame paste)
6 tablespoons fresh squeezed lemon juice (approx 2 lemons)
2 tablespoons water (or liquid from the chickpeas)
8 dashes Tabasco sauce

Steps:

  • Place all ingredients in the bowl of a food processor fitted with a steel blade and process until hummus is coarsely pureed.
  • Serve chilled or at room temperature.

1 (29-ounce) can chickpeas, drained (3 cups)
1/2 cup freshly squeezed lemon juice (3 lemons)
1/2 cup sesame tahini
2 tablespoons chopped garlic (6 cloves)
1 1/2 teaspoons Sriracha
1/2 cup roasted red bell peppers
Kosher salt and freshly ground black pepper
Good olive oil
2 tablespoons toasted pine nuts, for serving
Toasted pita triangles and fresh vegetables, for serving

Steps:

  • Place the chickpeas, lemon juice, tahini, garlic, Sriracha, roasted red peppers, 4 teaspoons salt, and 2 teaspoons pepper in the bowl of a food processor fitted with the steel blade. Process until the mixture is coarsely pureed. Taste for seasonings, and transfer to a serving bowl. Drizzle with olive oil, sprinkle with toasted pine nuts, and serve cold or at room temperature with pita triangles and vegetables.

Steps:

  • Turn on the food processor fitted with the steel blade and drop the garlic down the feed tube; process until it's minced. Add the rest of the ingredients to the food processor and process until the hummus is coarsely pureed. Taste, for seasoning, and serve chilled or at room temperature.

After many attempts at making hummus I have finally perfected it...at least for my tastes. This is actually a combination of Ina Garten's Barefoot Contessa hummus recipe and Giada De Laurentis' Everyday Italian White Bean Dip with Pita Chips. *Total prep and cooking time is estimated.

3 pita breads
3 tablespoons olive oil
1/3 cup olive oil
1 teaspoon dried oregano
1 1/4 teaspoons salt
1 1/4 teaspoons ground black pepper
15 ounces canned chick-peas, drained, rinsed
2 tablespoons fresh lemon juice
1 small garlic clove
1/4 cup tahini (sesame paste)
2 dashes hot sauce

Steps:

  • Preheat oven to 400 degrees.
  • Cut each pita into 8 wedges and arrange over a large baking sheet.
  • Drizzle the pita wedges with 3 tbsp of olive oil, and then sprinkle with the oregano and 1 tsp each of the salt and pepper. Toss to coat pita wedges with oil, salt and pepper. Spread out evenly.
  • Bake for 5 minutes, then turn wedges over and bake until they are crisp and golden, about 5 minutes longer.
  • Meanwhile, in the bowl of a food processor, add the beans, lemon juice, garlic, remaining salt and pepper, tahini and hot sauce. Puree.
  • With the machine running (puree), stream in the remaining 1/3 cup olive oil until the mixture is smooth and creamy.
  • Season with more salt and pepper to taste if desired.
  • Serve warm or room temperature with pita chips.

  • Drain the water and the chickpea skins that float to the top, leaving the chickpeas in the pan. Add cold water, stir vigorously to loosen more skins, and drain off the water and skins that float to the top, again leaving the chickpeas in the saucepan. Do this 5 or 6 times, until most of the skins are drained off. Drain the chickpeas, setting aside 2 tablespoons for the garnish and place the rest in the bowl of a food processor fitted with the steel blade. Add the garlic mixture, Tabasco, the ¼ teaspoon paprika, ¼ cup warm water, 1 tablespoon salt, and 1 teaspoon pepper and process until very smooth. Add the tahini and 2 tablespoons of olive oil and puree for one full minute, until creamy. Add 2 to 3 tablespoons of extra lemon juice (to taste), 1 teaspoon salt, and enough warm water (1 tablespoon at a time) to make the hummus the consistency of thick yogurt.
  • Using a rubber spatula, spread the hummus on a large (12-inch) flat, round serving plate, leaving a 2-inch border. Sprinkle the reserved chickpeas and almonds (if using) evenly on top. Drizzle with extra olive oil, sprinkle lightly with extra paprika, and serve with toasted pita triangles.
