This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

4 pounds pork spareribs
1 cup brown sugar
¼ cup ketchup
¼ cup soy sauce
¼ cup Worcestershire sauce
¼ cup rum
½ cup chile sauce
2 cloves garlic, crushed
1 teaspoon dry mustard
1 dash ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings. (I usually freeze the drippings to use later in soups.) Place ribs in a large roasting pan.
  • In a bowl, mix together brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper. Coat ribs with sauce and marinate at room temperature for 1 hour, or refrigerate overnight.
  • Preheat grill for medium heat. Position grate four inches above heat source.
  • Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with marinade.

2 cups soy sauce
1/2 cup light brown sugar, packed
1 tablespoon dark molasses
1 teaspoon salt
5 pounds meaty pork ribs
One 14-ounce bottle ketchup
One 12-ounce bottle chili sauce
1/2 cup light brown sugar, packed
1 teaspoon dry mustard

Steps:

  • For the ribs: In a medium saucepan, combine the soy sauce, brown sugar, molasses, salt and 1 cup water. Bring to a boil and set aside to cool to room temperature.
  • Put the ribs in a large, turkey-sized baking bag or sealable plastic bag. Support the bag in a 12-by-14-inch baking pan. Pour the marinade over the ribs and seal the bag. Marinate the ribs in the refrigerator for a few hours, turning the bag occasionally to thoroughly coat the meat.
  • Preheat the oven to 375 degrees F.
  • Drain and discard the marinade. Cut four slits in the top of the baking bag, if you are using one. Otherwise, remove the ribs, transfer them to the baking pan, and cover the pan with foil or a lid. Bake for 2 hours.
  • For the barbecue sauce: While the ribs are baking, blend the ketchup, chili sauce, brown sugar, dry mustard and 1/3 cup water in a large saucepan. Bring the mixture to a boil, stirring to dissolve the sugar, then remove from the heat.
  • When the ribs are cooked and tender, remove them from the baking bag. Lower the oven temperature to 350 degrees F.
  • Brush the ribs on both sides with the barbecue sauce and return them to the oven to bake, uncovered, for 30 minutes longer. Just before serving, throw the ribs under the broiler to give them a bit of a char.

BOURBON BARBECUED PORK CHOPS

1/2 cup packed dark brown sugar
4 8-to-10-ounce bone-in pork loin chops, trimmed of excess fat
1/2 cup bourbon or apple cider
1/4 cup apple cider vinegar
2 teaspoons Worcestershire sauce
3 cloves garlic, minced
1 tablespoon minced peeled ginger
1 medium onion, cut into 1/2-inch-thick rounds
2 medium beefsteak tomatoes, halved crosswise
1 tablespoon vegetable oil

Steps:

  • Prepare a grill for indirect heat: For gas, preheat to medium high, then turn off the burners on one side and turn the other burners to medium low. For charcoal, once the coals ash over, push them to one side.
  • Whisk 1/4 cup salt, 1/4 cup brown sugar and 3 cups warm water in a large bowl. Add the pork and soak 10 minutes. Meanwhile, mix the bourbon, vinegar, Worcestershire sauce, the remaining 1/4 cup brown sugar, the garlic and ginger in an ovenproof saucepan. Put on the grill over direct heat; bring to a boil, then remove from the grill.
  • Grill the onion and tomatoes over direct heat until charred, about 3 minutes per side for the tomato and 4 to 5 minutes per side for the onion. Add to the saucepan, then return the pan to the grill and cook until the sauce is thickened, about 15 more minutes.
  • Remove the chops from the brine; pat dry. Brush with the vegetable oil and grill over direct heat, 2 to 3 minutes per side. Transfer to the cooler side of the grill and cook 3 to 4 more minutes per side, brushing with the sauce. Serve with the remaining sauce and vegetables.

6 pounds pork butt, sliced to 1-inch wide and 1/4-inch thick
3 cups 7-up
2 cups soy sauce
2 cups vinegar
2 cups oyster sauce
3 cups brown sugar
1 tablespoon ground black pepper
1 cup garlic, peeled and minced
10 Thai chili peppers (siling labuyo), minced
2 cups banana ketchup
1/2 cup sesame oil
1 cup white vinegar
3 cloves garlic, peeled and minced
1/2 onion, peeled and finely chopped
3 Thai chili peppers, chopped
1/8 teaspoon freshly ground pepper
1/4 teaspoon salt

Steps:

  • Rinse pork strips and drain well. Pat dry.
  • In a large bowl, combine 7-up, soy sauce, vinegar, 1 cup of the oyster sauce, brown sugar, garlic, black pepper, and chili peppers.
  • Add pork and massage meat to fully incorporate. Marinate, turning meat once or twice, in the refrigerator for at least 4 hours or overnight for best results.
  • Thread 2 to 3 meat slices onto each skewer.
  • In a bowl, combine remaining 1 cup of oyster sauce, banana ketchup, and sesame oil. Set aside.
  • Grill meat kebabs over hot coals for about 2 to 3 minutes each side.
  • When pork starts to lose its pink, baste with oyster sauce-ketchup mixture. Continue to grill and baste, turning on sides, until meat is cooked through. Remove from heat and serve as is or with spicy vinegar dip.

3 tablespoons Bbq sauce
1 tablespoon low sodium soy sauce
1 tablespoon olive oil
2 teaspoons packed brown sugar
2 teaspoons balsamic vinegar
1 teaspoon Worcestershire Sauce
1 teaspoon minced garlic
1/4 teaspoon salt
1/8 teaspoon pinch cayenne pepper)
4 pork chops or cutlets, (around 7-8oz or 200-250g each (bone in or boneless))
1/2 teaspoon each garlic powder, (onion powder and paprika)
Seasoning salt and cracked black pepper, (to season)

Steps:

  • Move oven shelf is about 8-inches/20cm from the top heat element. Preheat oven to 430°F (220°C) for standard oven, or 390°F (200°C) for fan forced/convection.
  • Lightly grease a baking sheet/tray with oil. Line with foil or parchment paper, set aside.
  • Combine together Bbq sauce, soy sauce, olive oil, brown sugar, balsamic vinegar, Worcestershire Sauce, minced garlic, salt and cayenne pepper in a bowl, Mix well, set aside.
  • Rub pork chops with salt, pepper, garlic powder, onion powder and paprika. Arrange chops onto prepared baking sheet.
  • Take two-thirds of the marinade to slather each chop generously all over. Reserve the rest for basting later.
  • Bake for 15 minutes. Remove from oven. Flip pork over and baste each chop with the reserved marinade, brushing all over to evenly coat (or spread using the back of a spoon).
  • Change oven setting to broil (grill) on medium-high heat setting. Broil until edges are caramelized, about 7-10 minutes (please make sure oven shelf is about 8-inches/20cm from the top heat element).
  • Remove from oven. Flip once more and baste all over with the pan juices. Return to broiler for a further 1-3 minutes until nice and golden.
  • To serve, brush all pan juices back onto the pork. Season with a little extra cracked black pepper and garnish with parsley or fresh herbs of choice.

  • In a shallow dish, combine soy sauce, Worcestershire sauce, garlic, lemon juice, pepper and oil. Add pork chops, and turn to coat evenly. Cover, and refrigerate for at least 1 hour.
  • Preheat oven to 190 C / Gas mark 5.
  • Place marinated pork chops in a roasting tin, and bake in preheated oven for 35 to 40 minutes, basting meat often with marinade. If using other meat or pork steaks use the cooking instructions on the packet.

It can be made the day that it is to be served, but the best is to cook it the day before, place it in the refrigerator overnight, and then heat it in the slow cooker the next day to serve. This way, it soaks up all of the added flavoring.

1 teaspoon white pepper
2 teaspoons liquid smoke flavoring
4 cloves garlic
2 teaspoons freshly ground black pepper
2 tablespoons hot pepper sauce
3 tablespoons Worcestershire sauce
5 pounds boneless pork chops
2 tablespoons barbeque sauce
2 medium onions, finely chopped
1 medium green bell pepper, finely chopped
1 medium red bell pepper, finely chopped
1 medium yellow bell pepper, finely chopped

Steps:

  • In a bowl, mix the wine, white pepper, liquid smoke, garlic, black pepper, pepper sauce, and Worcestershire sauce. Place pork in a slow cooker, and cover with the sauce mixture. Cover, and cook 4 to 5 hours on Low, or until the meat shreds easily.
  • Shred the pork with a fork. Mix in the barbeque sauce, onion, green bell pepper, red bell pepper, and yellow bell pepper. Continue cooking 30 minutes, or until vegetables are tender.
  • Place pork in a strainer to remove excess liquid, pushing down with a large spoon to extract as much moisture as possible. Liquid may be reserved as a dipping sauce.
