Cheesy BBQ Meatloaf Recipe has barbecue sauce, Parmesan cheese and cheddar cheese for a flavorful meatloaf the whole family loves. This easy recipe is a family favorite that is perfect for an easy weeknight meal!

2 pounds ground beef (80/20 works best)
1 tablespoon dried minced onions
1 teaspoon garlic powder
1 teaspoon sea salt
1 teaspoon ground black pepper
2 large eggs
2 tablespoons barbecue sauce
1/2 cup dried breadcrumbs
1/4 cup Parmesan cheese (grated)
1/4 cup BBQ sauce
1 cup cheddar cheese (shredded)

Steps:

  • Preheat oven to 350 degrees, and spray baking dish with non stick cooking spray or line with foil for easier clean up
  • Add the eggs to a large mixing bowl, and beat slightly
  • In a small bowl, mix the dried onions, garlic powder, salt and pepper together, and sprinkle over beef
  • Add the ground beef, dried onions, garlic powder, salt, pepper BBQ sauce, bread crumbs and Parmesan cheese, and mix gently with hands until combined
  • Place in prepared casserole or baking dish, and form into loaf shape
  • Bake for 1 hour, or until internal temperature reaches 160 degrees, according to meat thermometer. Add BBQ sauce to the top about halfway through cook time
  • Top with shredded cheddar cheese and allow to melt, then remover from oven, and serve

2 1/2 lbs ground beef
3/4 cup onion, coarsely chopped
3/4 cup quick-cooking oats
2 eggs
1 cup milk
1 tablespoon salt
1 tablespoon parsley, snipped
1/2 teaspoon italian seasoning
1/4 teaspoon pepper
1/2 cup chili sauce
2 tablespoons brown sugar, packed

Steps:

  • Heat oven to 350 degrees F.
  • Line loaf pan, 9X5X3,with waxed paper.
  • In large bowl, mix beef, onion and oats with hands.
  • In small bowl combine eggs,milk,salt,parsley,savory leaves and pepper. Mix well.
  • Pour into meat mixture and mix well with hands.
  • Pat firmly into prepared pan.
  • Mixture will be wet.
  • Invert loaf into an ungreased baking pan 13X9X2 inches.
  • Carefully remove waxed paper.
  • Bake uncovered 30 minutes.
  • Mix chili sauce and brown sugar; brush over top and sides of loaf.
  • Bake an additional 45 minutes to one hour, brushing occasionally.
  • 8 servings.

This is one of those dishes that anytime I make it, I get a request for the recipe. It's an old family favorite.

1 cup milk
⅔ cup dry bread crumbs
1 ½ pounds ground beef
1 egg, beaten
¼ cup diced onion
1 teaspoon salt
ground black pepper to taste
¼ cup ketchup
3 tablespoons brown sugar
1 teaspoon ground mustard
¼ teaspoon ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour milk over breadcrumbs in a large bowl; soak until crumbs are softened, at least 5 minutes.
  • Mix ground beef, egg, onion, salt, and black pepper with the bread crumbs and milk. Shape the beef mixture into a loaf and transfer to a baking dish.
  • Stir ketchup, brown sugar, mustard, and nutmeg together in a bowl until smooth; spread over the loaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
