BAJA FISH TACOS
These Baja fish tacos are made from crispy beer-battered cod tucked into corn tortillas, topped with a cabbage slaw and smoky chipotle sauce.

Steps:
- Toss the cabbage, red onion, cilantro, vinegar, oil and salt together in a medium bowl and set aside.
- Combine the mayonnaise, lime juice, chipotle chiles with sauce and garlic in a blender or mini food processor and blend until smooth. Set aside.
- Mix the flour, salt and pepper together in a medium bowl. Gradually add the beer, whisking until the batter is smooth with no lumps. Set aside.
- In a medium skillet, over medium heat, add enough oil to reach a depth of ½-inch. Heat the oil until a deep-fry thermometer registers 350 degrees F, or when the end of a wooden spoon sizzles when dipped into the oil.
- Working in batches so as not to crowd the pan, dip the fish strips in the beer batter and coat on both sides. Let the excess batter drip off, then fry the fish in the hot oil until golden brown and cooked through, about 2 minutes per side. Transfer to a plate lined with paper towels to drain.
- Smear each tortilla with a generous amount of the chipotle sauce, then top with the cabbage slaw. Lay one piece of fish inside each tortilla and serve with lime wedges.
- Note: 3 chipotle peppers and 2 teaspoons sauce will give you a spicy sauce. Use less for a milder sauce. You can freeze any leftover chipotle peppers from the can.

- Make the cabbage slaw: Combine the cabbage, onion, tomato, cilantro, jalapeño, lime juice, and salt in a large bowl. Toss well, then set aside.
- Make the crispy fish: In a large bowl, combine the flour, Old Bay, and baking powder. Add the beer and whisk until smooth. Let sit for 15 minutes.
- Heat the vegetable oil in a large pot until it reaches 350°F (180°C).
- Coat the fish in the batter, then transfer to the oil and fry until golden on the outside and cooked through, 5-7 minutes. Drain the fish on a wire rack set over a baking sheet lined with paper towels.
- Make the avocado crema: Add the avocados, sour cream, lime juice, and salt to a blender and blend until smooth.
- To assemble the tacos, add a bit of the cabbage slaw to a warmed tortilla. Top with a piece of fried fish, avocado crema, and sliced radish.

CRISPY FISH TACOS

- To fry the fish: Fill a large heavy bottomed pot about 1/3 full of peanut oil. Heat to 375 degrees F.
- While the oil is heating, put the breadcrumbs into a shallow dish. Break the eggs into another shallow dish, season with salt and pepper, and beat them with 2 tablespoons of water.
- Cut the fish into 1-inch wide strips. Dip them into the egg, then coat them well with the breadcrumbs.
- Set aside and let them rest for 10 minutes.
- Cook the fish a few pieces at a time until golden brown and cooked through, about 3 to 5 minutes.
- Drain on paper towels.
- To make the tacos: Heat a dry cast iron skillet over medium heat.
- Warm a corn tortilla in the pan until it softens, about 30 seconds.
- Place a fish strip on it, top with some of the shredded cabbage, and a big dollop of Chili Mayo.
- Squeeze on some lime juice, roll up, and eat!

- Prepare the cod by cutting them in one inch pieces about 3-4 inches long. Salt and pepper and set aside.
- In a medium sized bowl add the flour, chili powder paprika, garlic powder, cumin, salt and pepper. Add the beer and stir until combined.
- Preheat a medium sized skillet over medium high heat, add oil until it is about 1/2 inch up the side. Heat until the thermometer reads 350 degrees.
- Working in batches, dredge each piece of cod into the batter and add to the preheated oil. Fry until golden brown about 2-3 minutes each side. Remove and set aside on plate.
- Assemble the tacos on a flour tortilla and top with fresh pico and cilantro ranch dressing.

- Mix sour cream & Lawry marinade in a small bowl.
- Heat tortillas in microwave until warm.

BAJA FISH TACOS
This recipe is dedicated to my niece Ruth who lives in San Diego. When I visit we always drive down to Ensenada for fish tacos. The fish are fried in batter there. I've taken a few liberties and added beer and taco seasoning to the batter. I prefer the catfish nuggets because they are nice and firm, have a great taste and are usually the cheapest fish at the local market.

- Whisk together the flour, beer, and taco seasoning mix.
- Wash catfish nuggets and pat dry with paper toweling.
- In a food processor or blender, process for a few seconds sour cream, cilantro, lime juice and additional taco seasoning mix to taste.
- You don't want to totally liquify the cilantro.
- Prepare garnishes as you heat about 1/2" of oil in a cast iron skillet or heavy frying pan to 360F.
- Dip fish nuggets into batter and place in hot oil with a fork.
- Turn once after about 1 minute and brown the other side for another minute.
- Do this in batches.
- Don't crowd the fish.
- Drain on paper toweling and keep warm in a 200F oven until ready to serve.
- Heat tortillas in foil in the oven or nuke them wrapped in a clean kitchen towel.

Steps:
- Mix first four ingredients together to make sauce, place in refrigerator.
- Whisk flour, salt, pepper and cumin together in a mixing bowl.
- Slowly pour in beer while whisking until a smooth batter is formed.
- Allow this to stand about 15 minutes.
- Sprinkle fish strips with salt and pepper then squeeze lime juice over each strip.
- Allow this to stand 15 minutes.
- Heat oven to 200 F, wrap tortillas in aluminum foil and place in oven.
- Heat oil (about an inch deep) in large skillet over medium heat.
- Place fish in batter and thoroughly coat.
- Fry fish in oil until golden, (about 5 minutes).
- Place fish on baking sheet lined with paper towel and put in oven until all the fish is fried.
- Fill each tortilla with a couple fish strips, top with sauce, cabbage, and tomato.
- Serve with a wedge of lime and I like to put some Tapatio on the taco.

- mix well and set aside.
- combine cod, oil, lemon and the rest of the seasoning in a bowl.
