PULLED PORK SHOULDER
A variation of Alton Brown's recipe. If you have only cooked pulled pork in the oven, you are really missing out on a treat. The smoke gives a beautiful flavor and adds the smoke ring that to me is the mark of good barbecue. You can use whatever type of sauce you prefer on this- vinegar based, mustard, or tomato based. Whichever type you use, it is best if it is on the thin side, so water it down if you need to.

Steps:
- Combine ingredients for the brine.
- Place the pork roast into the brine, making sure it is submerged, and refrigerate for 10-12 hours, or overnight.
- Using a spice mill or mortar and pestle, grind ingredients for the spice rub into a fine powder.
- At the appropriate time, drain the pork roast from the brine and pat dry with paper toweling.
- Apply the spice rub to the pork roast, massaging it in, using gloves if desired to keep the rub from sticking to your fingers.
- Mix together ingredients for mop/baste and set aside.
- Prepare smoker or grill.
- When the smoker/grill temperature has reduced to 210F, add the pork roast, cover grill, and cook for approximately 10 hours, or until internal temperature has reached 165-190°F.
- Do not exceed 190F for an internal temperature in the meat or it will be dry.
- Maintain smoker/grill temperature of 210F throughout cooking time (you may add soaked wood chips to the coals occasionally, if desired).
- During the last hour or so of cooking, brush on mop liberally, about every 15 minutes or so.
- When the pork is cooked, it should be tender enough that sticking it with a fork loosens the meat easily.
- The roast will appear dark (it's what is called a"bark") when fully cooked.
- Allow pork roast to"rest" for 45 minutes to an hour before pulling (try not to pick at it and eat all of it before you get a chance to pull it!).
- To pull, use your fingers or 2 forks to shred meat on a cutting board.
- To make a sandwich, thin your preferred barbecue sauce and toss with meat in a bowl.
- Place meat on a bun/roll with some cole slaw (if desired).
- May also just eat off the plate, no sandwich.
- You'll find yourself grabbing pieces to munch on anyway.

Steps:
- Using a sharp paring knife, carefully cut a few deep slits into each piece of pork shoulder, then insert sliced garlic into each pocket. Set aside. Add all listed BBQ dry rub ingredients to a small bowl or jar. Whisk or shake to combine. Set aside or store in an airtight container on your spice rack for up to 1 month.
- Season the pork with the BBQ dry rub & arrange the seasoned pork in a heavy-bottomed pot or Dutch oven with a lid, sprinkling any excess BBQ dry rub over top. Add in all liquid ingredients - beer, soy sauce, apple cider vinegar, sesame oil, & liquid smoke. Bring to a boil over high heat. Reduce heat to low to maintain a steady simmer. Cover & simmer for 3-4 hours, until the BBQ pork is fall-apart tender.
- Carefully transfer the pork to a plate or cutting board. Use tongs or 2 forks to shred the pork into bite-sized pieces. Serve your BBQ pulled pork immediately or cool & store for later use (see Recipe Notes for Serving Ideas, & Storage & Freezing guidance). Enjoy!

OVEN BARBECUED PULLED PORK
The Pork comes out real moist and full of flavor. The only way you'll be able to tell that it wasn't smoked outside, is by the lack of smoke flavor. However, when you don't have a smoker available, this is the next best thing. To eat the sandwich "Carolina Style" place some Slaw on top of the meat in the sandwich, and serve baked beans on the side. I served it with Potato Salad. You may not be a fan of making Pulled Pork in an oven, because you'd rather be smokin' it outside. However, there are also a lot of you out there that don't have access to either a grill or a smoker, and you've got to find a different way of cooking if you want something like pulled pork. Butt Kickin' Blacken contains neither salt nor sugar, and is available at http://www.capnrons.com/index.html?id=RZPP

Steps:
- The day before: Trim some of the fat from the meat. All this will do is inhibit the flavors form being absorbed my the meat. Since you'll be cooking this covered, in an oven, the meat won't need it to remain moist. After cutting off the fat, score it as you would if you were doing a baked ham.
- Sprinkle the Blacken all over, rub it into the meat, then do the same with the Salt and Brown Sugar. Now you can drizzle it with a little oil, and rub it in again. The oil will aid in blending the spices, and will help sear the meat later when you're cooking it.
- Cover with plastic wrap, and let it sit in the refrigerator overnight.
- When your ready to cook, about 3 1/2 hours prior to wanting to serve it. Preheat the oven to 500 degrees. Take the meat out of the refrigerator, and add about 1/2 bottle of Sam Adams, or another, full bodied beer. Place in the oven, uncovered for 15 minutes. This lets the top crust up a bit. If you don't want to use beer, you could use Wine, Apple juice, Cranberry / Raspberry juice, etc.
- After 15 minutes, cover it real well with aluminum foil, turn the oven down to 325 degrees, and place the pork back into the oven.
- Cook at 325 degrees for another 2 3/4 hours. Your time may vary by the thickness of the meat. You can test if it's done, by sticking a fork into it and twisting. If the fork twists real easy, and the meat pulls apart, it's done. You should also notice that the meat has shrunk form the bone.
- Let the meat rest, covered, for at least 15 minutes before you start to "pull" it. The traditional method of "pulling" pork is to use 2 forks, I like to use tongs and a fork. After it's pulled I sprinkle another tablespoon of Butt Kickin' Blacken on and stir it in, for a little extra flavor. It should be real moist, because of the beer you had in the pan during cooking, but if do you notice that it's a little dry, you can add a little more beer or BBQ sauce at this time.
- My 6 1/2 pound piece of pork ended up making a pile of pulled pork. It was enough for about 10 sandwiches in all.

SLOW COOKER BBQ PULLED PORK
If you've spent any time on Pinterest or food blogs, you've likely come across a recipe for three-ingredient barbecue pulled pork that can be made in the slow cooker. Methods and ingredients vary, but the recipe almost always calls for boneless pork shoulder, some sort of dark cola (usually Dr Pepper or root beer) and barbecue sauce. Dubious? We were too, so we asked the members of our NYT Cooking Community Facebook page if anyone had ever made it and if they liked it. We received more than 150 very opinionated responses. Many readers have come up with their own clever twists, like using coffee or beer in place of cola, adding onions or chipotles, rubbing the meat with a spice blend and searing the meat before cooking. We tried cooking it a few different ways and found we liked this adaptation best. It calls for a few more ingredients and an extra step or two, but it's got layers of flavor and it's still mostly fuss-free. (You can find the pressure-cooker version of this recipe here.)

Steps:
- In a small bowl, combine the garlic and onion powders, smoked paprika, salt and black pepper. Rub the spice mixture all over the pork. If you have time, cover with plastic wrap and refrigerate for 2 hours or up to overnight. If you don't, no worries; proceed to Step 2.
- Lightly grease the crock of a slow cooker. Heat 2 tablespoons vegetable oil in a large skillet over medium-high. Sear the pork until golden brown on all sides, about 2 minutes each side. Add onion, if using, to the slow cooker. Add the pork on top of the onion. Pour soda over the pork and set the slow cooker to low for 6 to 8 hours, until the meat has collapsed and shreds easily.
- Drain most of the liquid from the slow cooker and shred the meat directly in the pot. Add about 1/2 cup of the barbecue sauce and stir to combine. (At this point, if you like crisp bits in your pulled pork, you can spread the shredded pork on a sheet pan and place under a broiler for a couple minutes then return to the slow cooker.) Taste and add more barbecue sauce, hot sauce, salt or pepper, if desired. Serve with soft rolls and extra sauce on the side.
BARBECUED PORK-SHOULDER CHOPS
Garlic and sage, rubbed into the pork ahead of time, impart an earthy, aromatic flavor. The meat is thenmoistened by a beer marinade. The pork chops arebasted on the grill with a thick, tangy tomato-basedsauce -- the signature of a Saint Louis-style barbecue -- resulting in a smoky taste and almost-candied edges.
