My husband loves to barbecue, so when it's hot outside, we do entire meals on the grill. Since our kids love rice, we often include this tangy side dish as part of the menu. -Shirley Hopkins, Olds, Alberta

Yield 4 servings.

Number Of Ingredients 8

1-1/3 cups uncooked instant rice
1/3 cup sliced fresh mushrooms
1/4 cup chopped green pepper
1/4 cup chopped onion
1/2 cup water
1/2 cup chicken broth
1/3 cup ketchup
1 tablespoon butter

Steps:

  • In a 9-in. round disposable foil pan, combine the first seven ingredients. Dot with butter. Cover with heavy-duty foil; seal edges tightly. , Grill, covered, over medium heat for 12-15 minutes or until liquid is absorbed. Remove foil carefully to allow steam to escape. Fluff with a fork.

My husband loves this rice. Works well as a side for ribs, pulled pork sandwiches and more.

Number Of Ingredients 6

1 c white rice
2 c water
3 Tbsp sweet baby rays bbq ( or your favorite brand)
1 dash(es) liquid smoke flavoring
2 chicken bouillon cubes
1 pinch salt

Steps:

  • 1. In Medium Sauce pan combine ingredients. Cook uncovered til rice boils. stir occasionally. Reduce heat to low and cover until rice is tender.

This is a different but delicious rice side dish- Once you try it you will make it often. Great also with added BBQ chicken or,some scrambled hamburger, or a pork chop or a nice piece of fish. Recipe fro "Kitchen Chatter" recipe cookbook #1 1968.

Number Of Ingredients 12

1 tsp seasoned salt
1 pinch pepper
1 Tbsp worcestershire sauce
1/4 c chopped onion
1/4 c whole kernel corn,drained
1 c heinz sweet chili sauce or tomato ketchup
1 c water
6 slice lemon, thin sliced and quartered
2 tsp ground mustard
3 Tbsp brown sugar
2 c instant brown rice
3 Tbsp butter or margarine

Steps:

  • 1. Melt butter in a large cast iron skillet. Add uncooked rice and brown, stirring constantly. Add onion, salt, pepper, Worcestershire sauce, chili sauce, mustard, brown sugar,water, lemons and corn. Stir to mix Cover and simmer about 30 minutes or until rice has absorbed most of the liquid.
  • 2. This is a great side for BBQ pork, or chicken or fish. Or if you want to add scrambled cook hamburger that tastes great too- that's the way my kids liked it when they were small.

Number Of Ingredients 21

1 Tbsp vegetable oil
1/2 c onion chopped
1/2 c green bell pepper chopped
1 1/4 c water
1/2 c converted white rice
1 c kidney beans , canned drained
1/3 c barbecue sauce
BARBECUE SAUCE
1 Tbsp vegetable oil
1/2 c chopped onion
1/2 c finely chopped bell pepper
3 garlic cloves minced
1 - 8 oz. can(s) stewed tomatoes
1/2 c beer your choice
1/4 c tomato paste
1/4 c brown sugar, firmly packed
1 1/2 Tbsp white vinegar
2 tsp anchovy-free worcestershire sauce
1 tsp dijon mustard
1/4 tsp tabasco sauce
1/8 tsp salt or salt to taste

Steps:

  • 1. FOR RICE AND BEANS: In a 2 quart saucepan, heat the oil over medium - high heat. Add the onion and bell pepper cook stirring until softened about 3 minutes.
  • 2. Stir in the water, bring to a boil. Stir in the rice return to boil. Reduce heat and simmer covered 20 minutes.
  • 3. Stir in the beans and barbecue sauce. Simmer covered 10 minutes.
  • 4. FOR THE BARBECUE SAUCE: In a quart saucepan, heat the oil over medium high heat. Add the onion, peppers, and garlic cook, stirring until softened about 3 minutes. Add the tomatoes and break them up with the back of a spoon. Stir in the remaining ingredients.
  • 5. Bring to a boil reduce heat and simmer uncovered 40 minutes or until thickened.
  • 6. For a smooth sauce, place the cooled sauce in a blender container. Cover and process until smooth.
