Extra-virgin olive oil, for the grill and for brushing
2 1/2 pounds large head-on, shell-on shrimp
Fine sea salt
Lemon wedges, for serving

Steps:

  • Preheat a grill to medium high and oil the grates. Devein the shrimp: Cut through the shell along the back of the shrimp with kitchen shears to expose the vein. Use the edge of the shears or the tip of a paring knife to remove the vein, leaving the shell intact.
  • Brush the shrimp with olive oil. Grill until the shells are pink and lightly charred, 2 to 3 minutes per side (any exposed meat should be opaque). Remove the shrimp to a platter and sprinkle with sea salt. Serve with lemon wedges.

1 tablespoon lemon juice
½ cup olive oil
1 teaspoon salt
1 teaspoon paprika
⅛ teaspoon white pepper
⅛ teaspoon garlic powder
2 (10 ounce) rock lobster tails

Steps:

  • Preheat grill for high heat.
  • Squeeze lemon juice into a small bowl, and slowly whisk in olive oil. Whisk in salt, paprika, white pepper, and garlic powder. Split lobster tails lengthwise with a large knife, and brush flesh side of tail with marinade.
  • Lightly oil grill grate. Place tails, flesh side down, on preheated grill. Cook for 10 to 12 minutes, turning once, and basting frequently with marinade. Discard any remaining marinade. Lobster is done when opaque and firm to the touch.

4 fresh lobster tails
melted butter
lemon juice

Steps:

  • Remove membrane from under side of tails.
  • Insert skewer lengthwise to prevent curling.
  • Start with shell side down on grill. Brush meat with melted butter.
  • Turn and grill other side.
  • Cooking time will vary from 5-10 minutes per side, depending on size of tails.
  • Serve with melted butter laced with lemon juice.

2 -6 ounces lobster tails (take out of shell and slice into 1 inch strips)
16 -20 large raw shrimp (peeled and deveined)
2 cups pineapple (cut into chunks)
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon lime juice
1 tablespoon soy sauce
3 tablespoons pineapple juice
2 tablespoons minced garlic cloves
1 teaspoon seasoning salt
1 teaspoon garlic seasoning
2 tablespoons parmesan cheese
2 teaspoons onion powder
3 teaspoons hot sauce
1/2 cup white wine

Steps:

  • mix last 12 ingredients to make marinade,mix or shake well.
  • pour over seafood and pineapple chunks put in fridge for at least 4 hours.
  • can be made into kabobs or grilled in a grill pan.depending on your grill and how high you have it, cook time can vary greatly,I cook on low for approx 15 min flipping and painting with leftover marinade.then turn to high right before done.

BARBECUED CALIFORNIA SPINY LOBSTER

6 California spiny lobsters
2 cloves garlic, minced
1/4 cup finely diced red onion
1 teaspoon chopped thyme leaves
1/4 cup olive oil
2 tablespoons white or red wine vinegar

Steps:

  • Submerge live lobsters in boiling water for 2 minutes. Remove from water. When cool enough to handle, remove heads from tails. With large knife, cut tails in half lengthwise. Place cut tails in large mixing bowl and toss with garlic, onion, thyme, olive oil and vinegar. Let marinate at room temperature for about 30 minutes.
  • Preheat a charcoal grill to medium-high heat. Once fire is hot, scatter fruit wood on top and allow to burn. As soon as the wood has turned to coal, place lobster tail halves on grill, meat side down. Cook until shell turns a lighter shade of red, about 3 to 5 minutes. Turn lobster tails and cook for an additional 3 minutes or until the meat begins to pull away from the shell. Remove lobsters from grill. Place on platter and pour remaining marinade from bowl over finished tails.
