BARBEQUED PINEAPPLE
Barbecued Pineapple! Serve in a bowl or a banana boat with pineapple on either side and a scoop of ice cream or two on top and drizzled with juice glaze. You may substitute juice (1/2 cup) for the sugar and rum part of the marinade.

- Peel the pineapple and, leaving it whole, cut out the center core. Slice into 8 rings, and place them in a shallow glass dish or resealable plastic bag. In a small bowl, mix together the rum, brown sugar, cinnamon, ginger, nutmeg, and cloves. Pour marinade over the pineapple, cover, and refrigerate for 1 hour, or overnight.
- Preheat grill for high heat. Lightly oil grate.
- Grill pineapple rings 15 minutes, turning once, or until outside is dry and char marked. Serve with remaining marinade.

RUM BUTTERED GLAZED GRILLED PINEAPPLE WITH VANILLA SCENTED MASCARPONE
Steps:
- Melt butter, sugar and rum in a small saucepan. Grill pineapple on both sides until golden brown, about 2 to 3 minutes per side. Spoon rum glaze over grilled pineapple.
- Whisk together mascarpone and vanilla seeds. Top each slice of pineapple with a dollop of vanilla mascarpone. Garnish with a few fresh blueberries.

- In a baking dish, mix together the honey, lime juice, and cinnamon. Place the pineapple slices in the glaze and let marinate 2 hours, turning occasionally.
- Preheat a grill pan over medium heat.
- Place the pineapple slices on the preheated grill. Grill on both sides until the glaze caramelizes and grill marks form, about 2 minutes per side.
- To serve: Place the pineapple slices on individual plates and top with a scoop of ice cream. Drizzle the remaining honey syrup over the top.

- 1. Peel, core, and cut pineapple into 3/4-1 inch slices.
- 2. In a small saucepan mix together the rum, marmalade, brown sugar, butter, vanilla, chipotle pepper, and cinnamon. Note: Use 1/2 teaspoon of chipotle pepper for an added 'Kick'n Dance Step' if you wish.
- 3. Heat and stir until the sugar is dissolved.
- 4. On a pre-heated "hot" grill lightly oil the grill. Place pineapple slices on the grill.
- 5. With a basting brush, baste the pineapple slices with the 'Danc'n Orange' glaze while grilling.
- 6. Turn the slices over and baste the other side. Note: The recipe for the glaze/basting sauce is enough to handle the grilling of '3' fresh pineapples.
- 7. Continue basting and turning over the pineapple slices occasionally; grilling for 10-15 minutes.
- 8. Remove slices from the grill and paint some more glaze on them.
- 9. Leave rings whole or cut each slice/ring in half and serve.
- 10. For a dessert, serve hot with a scoop of vanilla ice cream.
RUM-GLAZED GRILLED PINEAPPLE WITH LIME CRèME FRAîCHE

- Heat the rum in a small pan over a low heat with 50ml water and stir in the sugar until it dissolves. Turn the heat up to medium and bring to the boil. Boil for 2-3 mins until the mixture thickens slightly. Remove from the heat. Stir in the spices. Mix the crème fraîche with the lime zest and juice in a separate bowl.
- Arrange the coals on one side of the barbecue and light (or see tip below for cooking indoors). When the flames have died down and the coals are ashen, lay the pineapple wedges over the coals. Cook for 2-3 mins until char marks appear, then turn over.
- Brush the pineapple wedges with the rum syrup and cook for 10 mins more, moving them around the grill using tongs so they don't burn. When ready, they will be golden and soft. Remove from the barbecue, sprinkle with the chilli, if using, and serve with the lime crème fraîche.
