COCA-COLA BARBEQUE SAUCE

1 cup Coca-Cola
1 cup ketchup
1/4 cup Worcestershire sauce
1 teaspoon liquid smoke
1/4 cup A-1 steak sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper

Steps:

  • Combine the ingredients in a heavy saucepan and gradually bring to a boil over medium heat. Reduce the heat slightly to obtain a gentle simmer. Simmer the sauce until reduced by 1/4, 6 to 8 minutes. Transfer the sauce to clean jars and let cool to room temperature, then refrigerate until serving. The sauce will keep for several months, refrigerated.
  • Use as you would any sauce, noting the strong affinity this sauce has for chicken, ribs, and pork.

4 cloves garlic, peeled
1/4 teaspoon kosher salt, plus a generous pinch for the garlic
3 cups cola
1 1/2 cups ketchup
1/4 cup cider vinegar
2 tablespoons Worcestershire sauce
1 slightly heaping tablespoon chili powder
1 teaspoon freshly ground black pepper, plus additional for seasoning
1/2 teaspoon hot sauce, plus additional for seasoning
1/4 teaspoon ground allspice
1 1/2 tablespoons freshly squeezed lime juice

Steps:

  • Smash the garlic cloves, sprinkle with a generous pinch of salt, and, with the flat side of a large knife, mash and smear mixture to a coarse paste.
  • Stir garlic paste, the 1/4 teaspoon salt, cola, ketchup, vinegar, Worcestershire, chili powder, 1 teaspoon black pepper, 1/2 teaspoon hot sauce, and allspice together in a small saucepan. Bring to a boil, reduce heat, and simmer until thickened, about 45 minutes. Allow to cool slightly, stir in the lime juice, and season with black pepper and hot sauce, to taste.
  • Know-How: Barbecue sauces are all about balance: a sweet note offset by sour with a jolt of spice, all of which flourish in a cloud of smoke. There are lots of ways to work this magic-thick, thin, and in-between. Concocting a signature sauce is compulsory in some barbecue circles. Start with this basic riff and play with variations to suit your style.

I use the Country Style Pork Ribs and I prefer cooking them on the grill using indirect heat for hours, but I have used the oven as well. I mop the sauce on often and generously. 1 cup Coca-Cola
1/2 cup A.1. Original Sauce
1 cup ketchup
1/2 teaspoon garlic powder
1 teaspoon liquid smoke
1/2 teaspoon fresh ground black pepper

Steps:

  • Combine all the ingredients in a heavy, non-reactive saucepan and gradually bring to a boil over medium heat.
  • Reduce the heat slightly to obtain a gentle simmer.
  • Simmer the sauce until reduced by a quarter, 6-8 minutes.
  • Use right away or transfer to a large jar, cover, cool to room temperature, and refrigerate.

1 medium onion, chopped
1 cup ketchup
1 cup Coca-Cola
2 teaspoons Worcestershire sauce
2 teaspoons molasses (may substitute brown sugar)
2 teaspoons white vinegar
2 teaspoons prepared mustard

Steps:

  • Mix all ingredients together.
  • Coat meat in sauce.
  • Place chicken or turkey pieces on baking pan (sprayed first with vegetable oil).
  • Bake at 325* for one hour or until done.
  • Alternate cooking methods: May cook in crockpot for 6-8 hours, or till done, or grill meat till done.

½ Scotch bonnet or habanero chile, seeds removed, deveined, finely chopped
1 12-oz. bottle or can of cola (such as Coca-Cola)
3 garlic cloves, finely chopped
¾ cup ketchup
½ cup (packed) dark brown sugar
½ cup grated sweet onion
1 Tbsp. Worcestershire sauce
½ tsp. ground allspice
2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt
½ tsp. coarsely ground black pepper

Steps:

  • Bring chile and cola to a simmer in a medium saucepan over medium heat; reduce heat to low and simmer 3 minutes. Whisk in garlic, ketchup, brown sugar, onion, Worcestershire sauce, allspice, salt, and pepper. Cook, stirring occasionally and adjusting heat as needed to maintain a simmer, until sauce is thick, 15-20 minutes. Let cool before using. Do ahead: Sauce can be made 2 days ahead. Transfer to an airtight container; cover and chill.

This is an awesome Barbecue Sauce. The taste is "just perfect". A lot of the bottled sauces are too tangy, too strong, etc. This does not get super thick and it has more of a mild flavor. You can use it on anything but the author highly recommends it on Chicken, ribs and pork. The recipe is from Steven Raichlen, author of The "Barbecue Bible".
