HONEY BARBECUE CHICKEN WINGS
This is my own recipe. I love the way they get so gooey and sticky...goes really well with some homemade mac and cheese, some bbq baked beans, and a biscuit.....mmmmm....yum!

Steps:
- Wash, dry, and season the wings with the salt, garlic, pepper, cayenne, sugar, and paprika. Preheat the oven to 375.
- Spray a cookie sheet with a generous spray of cooking spray.
- Place the wings in a single layer on the cookie sheet, and place in the oven.
- Cook for 35-40 minutes, depending on the size of the wings, turning once.
- While they are baking, make the sauce by slowly simmering the sauce ingredients over the lowest heat.
- When the wings are done baking, carefully dip them in the sauce, and place them back in the oven for another 5 minutes, or until the sauce is bubbling.
- ENJOY!And remember to save some for everyone else!

- Preheat oven to 400 degrees. Divide wings between 2 rimmed baking sheets. Drizzle each sheet with 4 1/2 teaspoons oil. Season each with 1/2 teaspoon salt and a pinch of pepper; toss to combine. Bake until cooked through, about 30 minutes.
- Preheat grill to medium-high (if you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Brush wings with barbecue sauce. - For barbecue sauce, in large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. - Preheat the oven to 375 degrees Fahrenheit.
- Bend the wings and tuck the tips under the large joint to form a triangle.
- Season the chicken wings on both sides with salt and pepper.
- Set wings in a single layer in a large roasting or baking pan. Use two pans if you have to.
- Bake the chicken wings, turning once, until browned, about 45 minutes.
- Remove the wings from the oven.
- Pour off all the fat from the pan. If necessary, blot the wings with paper towels.
- Return the wings to the pan.
- Pour the barbecue sauce over the chicken wings and return to the oven.
- Bake for 10 minutes.
- Turn the wings over and bake 10 minutes longer.
- Serve hot, at room temperature, or cold.

- Preheat oven to 325 degrees F (165 degrees C). Line a jelly roll pan with aluminum foil and lightly brush with 1 teaspoon oil.

- 1. Prepare the barbecue sauce ahead of time: Combine all of the sauce ingredients in a heavy saucepan. Cook over medium-low heat, stirring, to heat through and to blend the flavors, 10 to 12 minutes. Do not boil. Strain to remove the garlic. Cool to room temperature. (Makes 3 cups.) Use immediately or refrigerate, covered, for up to 2 weeks.
- 2. Preheat the oven to 350ºF.

- Cut 3 pounds of chicken wings into three sections; save the wing tips for stock. Toss the wings with a little neutral oil to keep them from sticking.
- Heat a charcoal or gas grill; the fire should be moderately hot and the rack 4 to 6 inches from the heat. Leave one side of the grill cooler for indirect cooking.

- Cut each wing at the joint so you have a mini wing and a drumette. Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine.
