BARBECUE CASHEW-CHICKEN PIZZA WITH FRENCH-FRIED ONIONS



Barbecue Cashew-Chicken Pizza with French-Fried Onions image

A simple sauce complements the chicken and crunchy topping.

1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
1/4 cup whiskey-flavored or regular barbecue sauce
1 tablespoon concord grape jelly
1/4 teaspoon pepper
1/4 cup chopped sweet onion (such as Maui or Walla Walla)
1 1/2 cups cubed cooked chicken breast
1/3 cup cashew halves and pieces
2 tablespoons chopped fresh cilantro
1 cup finely shredded mozzarella and Parmesan cheese blend or Italian cheese blend (4 oz)
3/4 cup French-fried onions (from 2.8-oz can)
8 fresh cilantro sprigs, if desired

Steps:

  • Heat oven to 400°F. Spray 13x9-inch pan or 12-inch pizza pan with CRISCO® Original No-Stick Cooking Spray. Unroll pizza crust dough on pan; press dough to edges of pan. Bake 8 to 12 minutes or until golden brown.
  • Meanwhile, in medium bowl, mix barbecue sauce, jelly, pepper and chopped onion. Spread evenly over partially baked crust. Top with chicken, cashews, chopped cilantro and cheese.
  • Bake 8 to 13 minutes longer or until cheese is melted and crust is deep golden brown.
  • Sprinkle French-fried onions over pizza. Bake 2 to 3 minutes longer or until onions are golden. Garnish with cilantro sprigs.

1/4 cup whiskey-flavored barbecue sauce or 1/4 cup regular barbecue sauce
1 tablespoon grape jelly
1/4 teaspoon pepper
1/4 cup chopped sweet onion (such as Vidalia, Maui or Walla Walla)
1 1/2 cups cubed cooked chicken breasts
1/3 cup cashew halves
2 tablespoons chopped fresh cilantro
1 cup finely shredded mozzarella cheese or 1 cup Italian cheese blend
3/4 cup French-fried onions
8 fresh fresh cilantro stems, if desired

Steps:

From Kraft Foods, the combination of onion, bbq sauce and feta is so yummy with the cheese! For this recipe I use Recipe #35805 for the pizza crust!

1 prepared pizza crust (12 inch)
1 cup shredded mozzarella cheese, divided
1 cup grilled chicken breast, coarsely chopped
1/4 cup prepared barbecue sauce
1 (4 ounce) package crumbled feta cheese
1 small red onion, halved, thinly sliced and separated into rings

Steps:

  • Preheat oven to 450°F
  • Place pizza crust on ungreased baking sheet and sprinkle with 1/2 cup of the mozzarella cheese.
  • Toss chicken with barbecue sauce; spoon evenly onto crust.
  • Top with feta cheese, onions and the remaining 1/2 cup mozzarella cheese.
  • BAKE 10 to 12 minute or until cheese is melted and crust is golden brown.
  • Let stand 5 minute before cutting to serve.

French Fried Onions image

A homemade alternative to the Durkee brand. I use these for casserole recipes when I can keep them from being eaten first.

Number Of Ingredients 5

3 large onions, sliced into thin rings
2 cups milk
2 cups all-purpose flour (I use gluten-free)
oil (for frying)
salt

Steps:

  • Soak the onions in the milk for 5 minutes.
  • Heat the oil in a large skillet or deep fryer.
  • Take a handful of onions and run them through the flour with a fork to coat.
  • Fry in batches in the oil, stirring as needed to brown evenly.
  • Drain on paper towels and season to taste.
  • Store in an air-tight container.

1 -2 boneless skinless chicken breast
2 garlic cloves, minced
1 tablespoon olive oil
1 red onion, sliced in thin strips
1/2-1 cup barbecue sauce
1/2 cup cilantro, chopped
1 (6 ounce) can crushed pineapple, drained
8 ounces shredded mozzarella cheese
1 recipe pizza dough (I use recipe #126504) or 1 Boboli pizza crust, crust (I use Nonfat Pizza Dough (Bread Machine))

Steps:

  • Sauté chicken with garlic and onion in olive oil for 2-3 minutes.
  • Add 1/2 cup BBQ sauce and continue to cook until chicken is done. Cool slightly.
  • Prepare dough, if using.
  • Brush dough with additional BBQ sauce.
  • Cover with about 4 ounces of cheese.
  • Top with chicken, pineapple, cilantro and remaining cheese.
  • Bake at 500º for about 10 minutes or until cheese is bubbly.
  • (If using Boboli crust, follow package directions).

Steps:

  • Slice onions into rings, about 1/4 inch thick and separate into rings.
  • Heat oven to 300. Heat oil about an inch deep in fryer to 375 degrees. Beat ingredients, except onions until smooth. Dip each ring into batter allowing excess to drip into bowl. Fry a few at a time in hot oil for about 2 minutes, turning once until golden brown; drain. Keep warm on cookie sheets in oven.
