BARBARA'S CHICKEN DISH
My mate Barb makes this wonderful dish brilliantly, even after half a bottle of white wine:) you can add tomato paste if you like, or even chopped capsicum or mushrooms. This dish is fine with just wine and water, but much much better with well flavoured chicken stock. I like to use about 1/2 cup of stock that I get when I do chinese chicken wings. You can use lite sour cream for this dish, but the sauce with most likely seperate, still tastes great though.

Steps:
- Heat the olive oil in a large fry pan.
- add the chicken, (cut in bite sized pieces) and the chopped onion.
- stir for about 2 minutes.
- add the garlic, and continue cooking till the chicken is golden.
- add the white wine.
- add the tomatos.
- add the stock or water.
- simmer until chicken is cooked and the sauce is reduced.(thats why you use a LARGE pan.).
- when done, salt and cracked pepper to taste, turn off heat and cover.
- when ready to serve, re-heat, stir in the sour cream, but dont re-boil.
- serve over pasta, (I like curls) with a green salad.

BARBARA BUSH'S BARBECUED CHICKEN
The former First Lady shared this recipe with "Hometown Cooking Magazine", and now I'm pleased to share it with you!

Steps:
- Place chicken in a plastic bag set in a shallow dish.
- For marinade, stir together 3 tablespoons lemon juice, cooking oil, salt, 1/2 teaspoon black pepper, and garlic.
- Pour over chicken.
- Close bag.
- Marinate in the refrigerator for up to 24 hours, turning often.
- In a saucepan, combine water, onion, sugar, butter, mustard, vinegar, and 1/2 teaspoon pepper.
- Bring to boiling, reduce heat.
- simmer, uncovered for 20 minutes.
- Stir in catsup, Worcestershire, 6 to 8 tablespoons lemon juice, and red pepper.
- Return to boiling, reduce heat.
- Simmer, uncovered for 50 to 60 minutes or until reduced to about 4 cups.
- Meanwhile, drain, chicken, disacrding marinade.
- In a grill with a cover, arrange preheated coals around a drip pan.
- Test for medium heat above the pan.
- Place chicken, bone side down, on grill rack over drip pan.
- cover and grill for 50 to 60 minutes or until chicken is done (170 degrees for breast meat and 180 degrees for thighs and legs), brushing often with barbecue sauce the last 10 minutes of grilling.
- To serve, pass additional barbecue sauce with chicken.

BARBARA TROPP'S CHINESE CHICKEN SALAD
This classic and delicious recipe is a great use for leftover chicken. Recipe was adapted from ''The China Moon Cookbook'' by Barbara Tropp and printed in the New York Times. Serves 4-6 main dish servings.

Steps:
- Whisk sugar, vinegar, mustard and ginger together. Whisk in oils, and season to taste with salt, pepper and more sugar and vinegar if needed. (Dressing should have a nice balance of sweet and tart.).
- In a large bowl toss lettuce with a few tablespoons of dressing until lightly dressed. Arrange around sides of a large serving bowl or platter.
- Toss chicken, celery, peppers and cilantro in a bowl with dressing until well coated. Arrange in center of serving bowl, and sprinkle with pine nuts and cilantro.

BARBARA'S PEACHY CHICKEN
I found this recipe as a sample in a flyer I got to buy a cookbook. It's a great combination of flavors and is good served over rice. You can substitute margarine easily for the butter.

Steps:
- Shake chicken pieces in bag with flour and salt & pepper (to taste); brown in butter and oil.
- Place browned chicken in a greased 3-quart casserole dish.
- Combine orange juice with vinegar, brown sugar, basil and nutmeg and pour over chicken.
- Cover (aluminum foil works great) and bake at 375 degrees F for 1.25 hours or until tender, but baste often.
- Then place peach halves between chicken pieces, baste well and bake uncovered for 15 minutes longer.

- Mix together cumin, smoked paprika, 3 tsp. Diamond Crystal or 1½ tsp. Morton kosher salt, ¾ tsp. garlic powder, and ½ tsp. pepper in a small bowl.
- Arrange chicken on a rimmed baking sheet; sprinkle all over with spice mixture. Let sit at room temperature 30 minutes, or chill, uncovered, up to 12 hours.
- Combine flour, curry powder, paprika, and remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt, 2 tsp. garlic powder, and 2 tsp. pepper in a medium paper bag. Close bag and shake well to combine. Add chicken to bag, close, and shake well to coat.
- Pour oil into a large cast-iron skillet or Dutch oven to come 1" up sides; clip thermometer to sides of pan and heat oil over medium-high until thermometer registers 350°. Working in 2 batches and returning oil to 350° between batches, cook chicken pieces, turning halfway through, until deep golden brown, 10–15 minutes per batch (an instant-read thermometer inserted into each piece should register 160° for light meat and 165° for dark). Transfer fried chicken to a wire rack and let cool slightly before serving.
