Bara Brith image

A sweet, yeast-less Welsh bread studded with dried fruit. I generally soak my raisins in Irish breakfast tea, but feel free to experiment with flavors.

1 cup hot brewed tea
¾ cup dried currants
¾ cup golden raisins
¾ cup demerara sugar
1 ¼ cups self-rising flour
1 egg, beaten

Steps:

  • Pour hot tea over currants and raisins in a bowl; soak 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a sheet of parchment paper and use it to line a 2-pound loaf pan.
  • Stir demerara sugar into tea and fruit mixture until dissolved completely.
  • Mix flour and egg into the tea and fruit mixture until completely integrated into a batter.
  • Spread batter evenly into the prepared bread pan.
  • Bake in preheated oven until golden-brown, about 40 minutes. Cool in the bread pan 5 minutes before transferring to a rack to cool completely.

300g mixed fruit
200g light muscovado sugar
zest 1 orange
250ml hot black tea
350g self-raising flour
2 tsp mixed spice
1 large egg , beaten
50g soft butter , plus extra for greasing and to serve (optional)

Steps:

  • Tip the fruit into a bowl with the sugar and orange zest. Pour over the tea, stir everything together and leave to soak overnight.
  • Heat oven to 160C/140C fan/gas 3. Grease and line the base and short sides of a 900g/loaf tin with 1 strip of baking parchment. Tip the flour and spice into a bowl, and beat in the fruit and soaking liquid. Add the egg, followed by the butter. Beat until you have a well-combined, stiff batter, then tip into the prepared loaf tin. Bake for 1¼ hrs, covering with foil or parchment if the top starts to get too dark. Check with a skewer - if it doesn't come out clean, give it another 5-10 mins in the oven.
  • Leave to cool in the tin for 10 mins, then remove and leave to cool completely. Serve sliced and buttered, if you like.

Bara Brith originates like myself from Wales. Traditionally eaten as a snack with tea/coffee. I prefer it to normal fruit cakes.

1 lb self-raising flour
1 lb mixed dried fruit
2 tablespoons warm marmalade
1 egg (beaten)
6 ounces brown sugar
1/2 pint warm strained tea
1 teaspoon mixed spice

Steps:

  • Place the fruit and sugar in a mixing bowl, and soak overnight in the strained tea.
  • Sieve the flour and mixed spice, and warm the marmalade.
  • Add the flour, warm marmalade and egg to the soaked fruit.
  • Mix well, pour the mixture into a greased loaf tin.
  • Bake for 1 1/2 hours on 180c, 350f.
  • Cool on wire rack.
  • Serve sliced and buttered.

A traitional Welsh family 'Bara Brith' recipe. Delicious smothered in butter with a nice hot cup of tea.

300g dried mixed fruit
350ml boiling water
3 tea bags (I use PG Tips)
180g soft brown sugar
230g self raising flour
1 medium egg
1/2 tsp mixed spice
1 tsp ground cinnamon

Steps:

  • Place the three tea bags into a jug and add the boiling water. Leave to brew for 5 minutes.
  • Place the dried mixed fruit in a mixing bowl, pour over the tea and dispose of the tea bags. Leave overnight.
  • Add the sugar to the mixture and stir until disolved. Next add the whole egg, the flour and finally the mixed spice and ground cinnamon. Mix until the mixture resembles a thick cake like batter.
  • Grease a loaf tin and pour in the cake mixture. It should come up no higher than half way, as the cake will rise in the oven.
  • Place on the middle shelf of a preheated oven at 150 degrees for 1 hour and 15 minutes.
  • Once done, remove from the oven and leave to cool for 10 minutes or so until the cake comes away from the sides of the tin.
  • Leave to cool on a cooling rack.
  • Serve with butter and a nice hot cup of tea!

Bara Brith is a lovely Welsh tea time fruit cake enjoyed throughout Wales as well as the rest of the United Kingdom; it's also easy to make.

1 pound/450 grams dried fruit (mixed)
2/3 pint/300 milliliters cold tea
2 tablespoons marmalade
1 egg ( free-range , beaten)
2 tablespoons brown sugar (soft)
1 teaspoon mixed spice
1 pound/450 grams self-rising flour
Glaze: honey

Steps:

  • Gather the ingredients.
  • In a large bowl, pour the cold tea over the fruit and leave to soak for a minimum of 6 hours, or overnight if possible.
  • The next day, preheat the oven to 325 F/170 C/Gas 3 and grease a 2-pound (900-gram) loaf tin with butter and put to one side. To the soaked fruit, add the marmalade, egg, brown sugar, spice, and flour and mix well.
  • Spoon the batter into the prepared loaf tin and bake for 1 1/4 hours, or until the center is cooked through (when a cake tester comes out clean). Check from time to time to see that the top doesn't brown too much, and cover with a sheet of foil if necessary.
  • Remove from the oven and leave the Bara Brith to stand for 5 minutes, then turn out of the tin and place on a cooling rack. Brush the honey over the top to glaze and leave to cool completely on a rack.
  • Slice and enjoy. Bara Brith is even tastier when served with a little butter spread over a thick, fruity slice, or for added sweetness, a little jam or honey.

Bara brith (literally "mottled bread") is sometimes made with yeast but Mary's family recipe omits it, giving a wonderfully sticky texture. It is best spread with plenty of butter.

450g/1lb dried mixed fruit
250g/9oz brown sugar
300ml/½ pint warm black tea
2 tsp mixed spice
450g/1lb self-raising flour
1 free-range egg, beaten

Steps:

  • In a large bowl soak the fruit and sugar in strained tea and leave overnight.
  • Next day preheat the oven to 170C/325F/Gas 3. Line a 900g/2lb loaf tin with baking parchment.
  • Mix the remaining ingredients into the fruit mixture and beat well.
  • Pour the mixture into the loaf tin and bake the oven and bake for 1½ hours or until a skewer inserted into the middle comes out clean.

6 ounces dried fruit
8 ounces dark brown sugar
1/2 pint strong hot tea
10 ounces self-raising flour
1 egg

Steps:

  • This is Wales' traditional rich fruit bread.
  • South Wales makes it with baking powder; Northerners prefer yeast as the raising agent. Either way it's delicious.
  • Soak the dried fruit and sugar overnight in the tea.
  • You can use either fresh tea, or the cold dregs from the teapot (this gives a good strong colour). Next day, sieve the flour and fold it it into the fruit. Mix in the lightly beaten egg.
  • Line a small loaf-tin with buttered paper then tip in the mixture, smoothing it well into the corners.
  • Bake in a gentle oven at 300 F (150 C) for 1-1/2 hours.
  • Cool and store for at least 2 days in a tin so that it matures moist and rich.
  • Traditionalists say you should never butter the Bara Brith, but it's lovely that way!

110 g Butter
210 g Sugar (Brown or golden)
175 g Mixed dried fruit
275 ml Milk
2 Tea Bags
25 ml Boiling water
1 Egg (Beaten)
280 g Self raising flour
1 tsp Ground cinnamon
1 tsp Mixed spice

Steps:

  • Place the tea bags into a cup and just cover with boiling water and leave to soak while you prepare the other ingredients.
  • Place the milk, butter, dried fruit, sugar and the soaked tea bags into a small pan and bring to a simmer over a medium heat.
  • Let the mixture bubble for a few minutes and then turn off the heat.
  • Leave the mixture to cool in the pan for an hour or two.

  • Put the raisins, sultanas and currants in a bowl along with the candied lemon and orange peel. Pour the hot tea over the fruit, stir, cover and let sit overnight.Depending on how dry or moist your raisins/currants were to begin with they will have absorbed nearly all of the liquid. If there is some liquid remaining reserve about 2 or 3 tablespoons of it to brush on top of the finished bread.
  • In the bowl of a stand mixer, place the flour, baking powder, salt and spices and stir to combined. Add the fruits and their juices (except for the juice you reserved) along with all remaining ingredients. Use the paddle attachment to mix the ingredients into a batter that resembles a soft cookie dough. (If the batter seems too dry after you've mixed it add either a little melted butter or a little bit of egg yolk.)
  • Scoop the batter into a greased loaf pan and use the back of a spoon or your fingers to smooth the top. Bake for 70-85 minutes or until a toothpick inserted into the center comes out clean.Spoon or brush the reserved dried fruits liquid over the top of the hot bread and let it cool for a few minutes before removing it from the loaf pan to cool completely on a wire rack.

  • In a large mixing bowl, rub the lard or butter into the flour with your fingertips until the mixture resembles breadcrumbs. Then stir in the instant yeast, the brown sugar, the raisins or currants, and the candied peel (optional) till well combined.

  • You Will Need. For my family's traditional recipe, you will need: On day 1: 350g Dried mixed fruit. 400ml Hot strong tea (not shown) On day 2: 250g Brown sugar - I use soft, dark brown sugar.
  • Day 1: Soak Fruit in Tea Overnight. The evening of Day 1. Make your tea with boiling water. I use organic Earl Grey tea bags. Remove teabag. When you remove the tea bag, top up the liquid to 400ml.
  • Day 2: Mix in Sugar. Day 2: Pre-heat your oven 180*C / 350*F / Gas Mk 4. After the fruit has soaked overnight, add it to a large mixing bowl and add the sugar.
  • Mix in Egg. Beat your egg and add to the mixture. Or half your beaten egg if using half the ingredients for a smaller loaf.
  • Mix in Flour. Mix in your flour a little at a time. I always find that, toward the end of the 600g of flour, the mix gets a little stiff, but keep at it.
  • Pour Into Tin(s) and Bake. Line your tin(s) and pour in the mixture. Smooth the top. Bake at 180 °C / 350 °F / Gas Mk 4 in the middle of the oven.
  • Glaze and Allow to Cool Down. Turn out onto a wire rack and ... Glaze (optional): I cheat and mix 2 heaped teaspoons with a little boiling water and brush over whilst it's still hot.
  • Serve. Serve with butter. I also use this recipe for my Yule / Christmas cake. I just change the shape of the tin to a round one then ice and decorate it to your needs.
  • Variations and Alternatives. This simple recipe can be changed to suit your needs as follows: Spices: Add a teaspoon of allspice when adding the flour.
