THE BEST CLAM DIP RECIPE EVER
This is my family's signature dip recipe and will make everyone a fan of clams in cream cheese whether they think they like it or not!

Steps:
- In a medium sized bowl, mash softened cream cheese with a fork until soft and creamy. Slowly add in 1 tablespoon of clam juice while mixing with fork and cream well. Add lemon juice and Worcestershire sauce.
- Add green onion and clams to mixture. Add a few dashes of Tabasco to taste. If mixture seems thick, add remaining clam juice in one tablespoon increments to desired consistency. Serve with potato chips or refrigerate for up to 2 days.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine the clams, lemon juice, onion, butter, pepper, and bread crumbs in a mixing bowl, and stir until blended. Pour the mixture into a baking dish, and sprinkle the top with Cheddar cheese. Bake until the mixture is bubbly, about 20 minutes. Serve warm.

These fried clams are nothing like the ones you find frozen in the supermarket, these are the real McCoy. I like to serve them with my KFC Coleslaw Recipe #110948, chips, or onion rings and french fries and of course tartar sauce is an absolute must! AYUH thats the truth. Note:the cook time is 1-1/2minutes PER BATCH

- In a medium sized bowl mix milk, egg yolk, butter, and salt. Sift the flour into the milk mixture stir until smooth. In a small chilled bowl beat the egg white with an electric mixer until soft peaks form. (For best results: refrigerate the bowl, mixer blade and egg white prior to mixing) Fold the beaten egg white into the milk mixture.
- In a large saucepan or deep fat fryer heat oil to 375'. Poke each clam with fork. Dip clams into the batter. Fry a few at a time around 1-1/2 minutes or until golden brown, turning once. Remove with slotted spoon, drain on paper towels or on brown paper bags. Keep warm in a 300' oven while frying the remaining clams.
- Serve with tartar sauce.

Steps:
- Slice the top inch off each sourdough boule and use a paring knife to cut a circle around the boule without cutting through the bottom of the boule.
- Cut the circle about ½ inch away from the edge.
- Remove the bread disc.
- Brush the inside of the boule with melted butter and place on a baking pan and bake for 15-20 minutes until the bread bowl starts to brown.
- Place a large pot over medium heat and sauté the chopped onion and celery for 5 minutes.
- Then, add the clams, clam juice, chopped potato, chicken broth, and salt and pepper.
- Cover the pot and bring everything to a boil.
- Reduce the heat and cook for 15 minutes.
- In a separate bowl, dissolve the cornstarch in the heavy cream and once dissolved add the cream to the soup.
- Cook for an additional 5 minutes and be sure to stir frequently.
- Fill the bread bowls with chowder!

- In a large dutch oven, cook the pancetta over medium heat until nicely browned (approximately 10 mintues). Turn with tongs ever couple of minutes. Remove cooked pancetta from pan and set on paper towel lined plate.
- Add onion, shallot, and celery to pan and cook until soft and translucent (approximately 8 minutes). Add garlic and cook another 2 or 3 minutes.
- Add potatoes and celery root. Cook another 8 minutes stirring often. Then add the flour cook another minute or two stirring until veggies are well coated.
- Add the clam juice, chicken stock and dried herbs. Bring to a boil and then let simmer until veggies are soft (approximately 20 minutes).
