Fill your cake tin with this simple banoffee traybake, bursting with banana, toffee and chocolate flavours. It's guaranteed to be a new family favourite

- Heat oven to 180C/160C fan/gas 4. Butter and line a 20 x 30cm baking tin with two strips of criss-crossed baking parchment. In a jug, mash the bananas with a fork, then add the butter and sugar and mix with an electric whisk until smooth and creamy.
- Add the eggs one at a time, beating well after each addition, then add the vanilla and a pinch of salt. Use a spatula to fold through the flour, yogurt and chocolate chunks. Scrape the mixture into the tin and smooth over the surface. Bake for 30 mins until risen and golden and a skewer inserted into the centre of the cake comes out clean. Cool for 10 mins in the tin, then transfer to a wire rack.
- Cut the traybake into 12 squares, then top each one with a spoonful of caramel and a banana chip, if you like. Will keep in a tin for up to five days, or in the freezer - without the toppings - for up to a month.

CLASSIC BANOFFEE PIE
Make a homemade dessert that's sure to have everyone talking with our tempting banoffee pie recipe. Classically delicious, it's a sure favourite of ours here at Carnation and is made with our own creamy Carnation Condensed Milk to make a smooth and golden caramel. An impressive party piece and an ever-popular dessert, you'll be forgiven for thinking that it's difficult to make, but our Banoffee pie recipe is actually incredibly straightforward!

- Put the crushed biscuits into a bowl with the melted butter. Mix it together thoroughly, then press the mixture into the base and sides of the tin. Chill for 10 minutes. Has your base turned out too crumbly? Be sure to make sure it's well chilled before you go to the next step - you can chill in the freezer if you're short on time!
- Place 75g butter and sugar into a heavy based, non-stick saucepan over a low heat, stirring all the time until the sugar has dissolved. Add the condensed milk and bring to a rapid boil for about a minute, stirring all the time for a thick golden caramel. Spread the caramel over the base, cool and then chill for 1 hour. If your caramel's too runny, you probably didn't get it hot enough. The mixture needs to boil for 1 minute until it starts to thicken, but no more or it may catch and go grainy. To avoid it catching or going grainy, you should always use a heavy based, non-stick pan, keep stirring so it doesn't catch and make sure you use a timer!
- Carefully remove the pie from the tin and place on a serving plate. Slice the bananas and place on top of the caramel, top with the softly whipped cream. For the perfect finishing touch, dust with cocoa powder or use grated chocolate to decorate the banoffee pie. Chill until ready to serve.

- Lightly grease the base and sides of a square 8" pan with some oil or vegan butter, then line with parchment paper.

- Remove label from the unopened can of condensed milk. Fill a deep medium saucepan with water. Bring to the boil. Carefully place the can in the saucepan, ensuring there’s enough water to completely cover the can at all times, topping up water frequently throughout the cooking process. Simmer, uncovered for 3 hours. (Alternatively use Carnation tinned Caramel)
- Line a square cake tin (9”x9”x2”) with rolled out pastry. Prick bottom of base and spread with toffee (condensed milk). Spread with a layer of sliced bananas.
- Make frangipane by creaming the butter and sugar together, beat in eggs one at a time, adding ground almonds slowly after each addition. Add flour, remaining almonds and any surplus bananas mashed up can be incorporated into the frangipane.

- Preheat the oven to 180C/fan 160C/350F/Gas 4 and lightly grease a 20x33cm/8x13in square-cornered Swiss roll tin.
- Press the mixture firmly into the base of the tin, to create a flat surface and clean edge. Prick all over with a fork and bake for 20-30 minutes, or until lightly golden-brown and firm.
- To make the caramel, place the butter, sugar, syrup and condensed milk into a saucepan and stir over a low heat until the butter has melted, stirring all the time.
- Remove from the heat and allow to cool slightly before stirring through the banana chips and reserved banana powder. Pour over the baked shortbread base and sprinkle over the sea salt flakes.
- Melt the chocolate in a bowl set over a pan of simmering water (do not allow the bottom of the bowl to touch the water). Pour the chocolate over the banana salted caramel layer and leave to set in the fridge.
- Cut into bars with a very sharp, heavy knife and stack up on a serving plate. Decorate with gold leaf-covered hard and chewy banana chips if you like.
