BANGKOK MEATBALLS ON SKEWERS
Anyone who has been to Bangkok will have come across various meatballs being cooked out in the markets. Here is a version to do at home.

Steps:
- Put the skewers into water to soak.
- This helps prevent them burning.
- Combine the char sui sauce, water and chile-garlic sauce in a small bowl and set aside.
- This is the glazing sauce.
- Combine all the remaining ingredients in a bowl and mix thoroughly.
- The best way is to use your hands.
- Roll mixture into 18 meatballs.
- About a rounded tablespoon mixture each.
- Thread 3 meatballs onto each skewer.
- If you like you can add slices of red or green pepper between meatballs.
- Plce them on a baking sheet.
- Bake in a preheated 350 degree oven for 10 minutes.
- Remove skewers and brush meatballs with the glaze all over.
- Turn on the broiler.
- Place skewers under the broiler and cook for about 2 minutes each side.
- Serve.
- These could also be prepared ahead up to the broiler part and then barbequed.

THAI BEEF MEATBALLS
These can be served as Hors D'oeuvres, just skewer each meatball with picks from cleaned stalks of lemon grass. Serve on a platter with Homemade Thai Chili, or Purchased chili, or sweet and sour sauce, in a small bowl for dipping. Cooked meatballs can be frozen for up to 3 months and reheated in the microwave.

Steps:
- Combine all ingredients in large bowl; mix lightly but thoroughly.
- Using a 1 tablespoon measure, shape into 1-inch balls. Place in a single layer on lightly oiled foil-lined baking trays.
- Cook in 400F oven for 15-20 minutes or until completely cooked and digital rapid-read thermometer inserted in the center of several meatballs reads 160°F.

EASY MEATBALL KEBOBS
I always have some cooked meatballs in my freezer so this is an easy recipe for me to make!. They look quite elegant and could be served to company any time. You will neeed 8 1" pieces of green pepper and 8 1" pieces of red pepper and 8 pieces on onion. I have simple said !/2 pepper and 1 onion to keep the ingredient list simple. If using Bamboo skewers soak for 45 minutes in water to prevent scorching. The cook time is apprx depending on your method of cooking and the size of your meatball. I used a griddler and it took 7 minutes, BBQ perhaps 15 minutes and broiling about 15 minutes 6" from the broiler. The meatballs are already cooked so it is just a matter of heating them through and getting them golden. The peppers will still be crunchy but hot through

Steps:
- Defrost your meatballs.
- Thread a piece of onion then a meatball, add 1 piece of green papper, then another meatball, add a red pepper etc until you have 6 meatballs on the skewer ending with a piece of onion.
- Repeat for your second skewer.
- Paint both sides of the skewered ball & peppers,.
- BBQ over mediun heat, or Broil 6" from broiler, or bake 375f until the balls are golden and heated through apprx 15-20 minutes.
