Banana Bread Using Frozen Bananas image

This Banana Bread Recipe Using Frozen Bananas is everyone's favorite. It's so simple to make and the entire family will love it!

Number Of Ingredients 7

3 bananas, frozen and thawed (can substitute ripe, mashed bananas)
1 cup sugar
2 eggs, well beaten
3 tbsp milk
¼ cup butter, melted and cooled
1 tsp baking soda
2 cups flour

Steps:

  • Preheat oven to 375° F. Grease loaf pan.
  • In a large bowl, stir together all the ingredients, in order, except for the flour. Mix in the flour until combined. Pour into greased loaf pan.
  • Bake for one hour or more, until a toothpick inserted in the center comes out clean. Let cool in pan for about five minutes before removing to a rack.

4-5 (about 220g) ripe or overripe bananas, peeled
¼ cup (60ml) melted butter or canola oil
1 tsp (5ml) baking powder
2 cups (about 300g) cake or wholewheat flour
½ tsp (3ml) salt
2 eggs, whisked
1 tsp (5ml) vanilla essence
⅔ cup (135g) brown (or white) sugar
½ tsp (3ml) ground cinnamon
¼ cup (60ml) chopped walnuts (or almonds), plus extra for topping
Butter, softened
2 tsp (10ml) honey
¼ cup (60ml) blueberries

Steps:

  • Preheat oven to 180°C.
  • Place 3 bananas in a large zip-seal bag and mash with your hands.
  • Add butter or oil.
  • Combine baking powder, flour and salt and add to banana mixture.
  • Combine eggs and vanilla and add to banana mixture.
  • Add sugar, cinnamon and walnuts to mixture, then seal bag.
  • Massage mixture with your hands for about 5 minutes, or until well combined.
  • Grease a loaf tin with butter and line with baking paper.
  • Spoon batter into loaf tin.
  • Slice remaining bananas lengthways and arrange on top of batter, then scatter with extra nuts.
  • Bake for 1 hour and 10 minutes, or until a skewer inserted into the centre of the loaf comes out clean.
  • Cool completely in loaf tin before turning out onto a wire rack.
  • Slice and serve with softened butter, honey and blueberries, if using.

Steps:

  • Peel all the bananas - keep all the banana - even if "ugly" and dark.
  • I normally use 3 med to large bananas for each bag as that suits my recipe.
  • place in ziplock bags, press the air out to lay flat {or use FoodSaver if you have one - I do now ! :) }.
  • seal and freeze for up to 8 mos. (I have kept them up to 1 yr, but some people get nervous for some reason?).
  • I leave them whole and smash up when I thaw them to use in recipes.
  • Banana Breads, pancakes, cakes, drinks etc etc.
  • My sister smashes hers to the smoothness she likes and puts them in 1 cup measurements in muffin pans or plastic measuring cups and after they are frozen enough to hold shape removes them to place in ziplock bags or FoodSaver - other freezer containers could be used.
  • We used to smash them smooth and freeze in the ice cube trays for our babies as it was a good serving size, then move the cubes to containers with pop off lids to pull out just what we needed that day.
  • ( A medium sized flat Tupperware with 2cubes of banana - alongside the cubes of pureed chicken - green beans *cooked then frozen* in the diaper bag made our babysitter really happy when we took the kiddos over!).

  • 1. Spread your bananas (with the peels on) onto a dish made for the oven and pop them in the oven at 300 degrees for an hour. Really that's all it takes.
  • 2. They will come out looking very black. But don't worry, on the inside they are nice and soft and sweet. The heat from the oven will activate the sugars in the banana, simulating the ripening process.
  • 3. You can stick them in the fridge for a few minutes until the bananas are cool enough to handle, and then peel them open and see, They will not be burnt at all! Just soft and ready to mash into whatever recipe you want to make.
