1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
3 large bananas, mashed
¾ cup white sugar
1 egg
⅓ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
  • Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
  • Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.

1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 dash ground nutmeg
3 very ripe bananas
½ cup white sugar
⅓ cup butter, melted
¼ cup lightly packed brown sugar
1 egg
1 teaspoon vanilla extract
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
  • Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
  • Divide batter evenly among the muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

Steps:

  • In a large bowl, combine dry ingredients. In another bowl, mash the bananas. Add egg, oil and vanilla; mix well. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups half full. , Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.

These mini muffins have a mild rum and cinnamon flavor of traditional Bananas Foster. I am posting the recipe as written from The Party Girl Cookbook but you may want to reduce the amount of glaze in half as it makes more than necessary. If you want a strong rum flavor eat them right after they have cooled down. I prefer them the second and third day- when you don't even notice the rum. They are very tender and moist.

1 1/2 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon, plus
1/4 teaspoon cinnamon
1 1/4 cups mashed ripe bananas (about 3 large bananas)
1/4 cup firmly packed dark brown sugar
1/2 cup sugar, plus
2 tablespoons sugar
1/2 cup unsalted butter, melted
1/4 cup milk
8 tablespoons dark rum (divided use)
1 large egg

Steps:

  • Preheat oven to 350°F.
  • Sift flour, baking soda, salt, and 1/2 teaspoons cinnamon into a large bowl. Combine bananas,brown sugar, 1/2 cup sugar, butter, milk, 2 tablespoons rum, and egg in medium bowl. Mix into dry ingredients.
  • Fill greased mini-muffin pans 3/4 full.
  • Bake until muffins are golden brown and tester inserted into center comes out clean, about 15 minutes. While muffins are baking, dissolve the remaining 2 tablespoons sugar and 1/4 cinnamon into the remaining 6 tablespoons rum. Brush the glaze onto the muffins while still warm in the pan. Cool the muffins on a rack.
  • Store tightly covered at room temperature for up to 3 days, or freeze for longer storage.

non-stick cooking spray
4 tbsp unsalted butter
1/2 cup dark muscovado or brown sugar (packed (I used dark brown sugar))
4 ripe bananas
1 cup unbleached all-purpose flour (preferably organic)
2 tsp baking powder
1/2 tsp freshly grated nutmeg
pinch of salt
1/2 cup dark muscovado or brown sugar (packed)
1/3 cup canola oil
2 large eggs (room temperature)
3 tbsp whole milk
3 tbsp dark rum
1 tsp vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat to 375 F. Lightly spray a 12 cup muffin pan with cooking spray.
  • To prepare the pans, place 2 teaspoons of the butter and 2 teaspoons of the brown sugar in each muffin cup. Bake until the mixture in each cup is melted and bubbly, about 10 minutes. Remove the pan from the oven and cool for a few minutes. Peel the bananas and cut them on a diagonal into 48 thin slices. In each muffin cup, place two banana slices on the bottom and two banana slices along the sides.
  • To make the muffins, sift together the flour, baking powder, nutmeg, and salt in a medium sized bowl. In a separate bowl, whisk together the brown sugar, oil, eggs, milk, rum, and vanilla. Make a well in the center of the dry ingredients, add the egg mixture, and stir just until blended. Do not overbeat. Divide evenly among the prepared muffin cups, filling them as full as possible (be sure to divide them evenly, they will be about 3/4 way full).
  • Bake until the center of a muffin springs back when pressed gently with your finger, about 18 minutes. Immediately invert and unmold the muffins onto a wire rack. Cool briefly and serve. The muffins are best the day they are made.

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Add 12 muffin cups to a muffin tin.
  • In a medium bowl, whisk the all-purpose flour, cinnamon, ginger, baking powder, baking soda, and kosher salt.
  • In another medium bowl, mash the banana. Whisk in the egg, granulated sugar, vegetable oil, and vanilla.
  • Mix the wet ingredients into the dry ingredients using a spatula, and stir until a smooth batter forms. Avoid the urge to overmix. Gently fold in the chocolate chips. Divide the batter evenly into the muffin cups.
  • Bake the muffins for 15 minutes, until puffed and golden on top. Cool for 5 minutes in the pan, then transfer to a rack to cool fully, about 1 hour. Store up to 4 days in a sealed container at room temperature, refrigerated up to 1 week or more (allow to come to room temperature before serving), or frozen up to 3 months.

  • Make the bananas. Heat a large sauté pan over medium heat. Melt butter in pan. Once melted add bananas and sugar. Cook until bananas have softened and are slightly caramelized and the sugar has turned into a thick syrup. Remove from heat and stir in rum. Let cool while you prepare the batter.
  • In a medium bowl, stir together flour, baking powder, baking soda, and salt. In a large bowl, stir together sugar, oil, vanilla, milk, and eggs until well combined. Add 1/3 of the banana mixture and mash until it is well combined with the other wet ingredients. Add the flour mixture and mix until just combined. Add the rest of the bananas and stir into the batter until evenly distributed.
  • Using a regular sized ice cream scoop, scoop batter into prepared muffin tin, filling all the way to the top. Bake for 20-25 minutes, rotating halfway through if necessary, until a toothpick inserted in the center of the muffins comes out with only a few moist crumbs. Cool completely in pan. May be stored at room temperature in an airtight container for up to 3 days, or frozen wrapped in parchment and foil and placed in a zipper bag for up to 3 months. Thaw at room temperature for several hours or in a 350 degree F oven for about 15 minutes.
