BANANA PECAN BREAD BY TYLER FLORENCE
I saw this on Food Network today and it looks awesome! Two of the bananas are creamed and two are mashed chunky and folded in to give some texture. For an even greater treat, toast the slices of banana bread and dust with confectioners' sugar just before serving.

Steps:
- Preheat oven to 350° and lightly grease a 9 by 5-inch loaf pan.
- In a large bowl, combine the flour, baking soda, and salt and set aside.
- Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture and set aside.
- With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for 3 minutes to make a light and fluffy banana cream.
- Add the melted butter, eggs and vanilla and beat well.
- Scrape down the sides of the bowl.
- Mix in the dry ingredients just until incorporated - no need to overly blend.
- Fold in the nuts and the mashed bananas with a rubber spatula.
- Pour the batter into the prepared loaf pan.
- Give the pan a good rap on the counter to get any air bubbles out.
- Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean.
- Rotate the pan periodically to ensure even browning.
- Cool the bread in the pan for 10 minutes and then turn out onto a wire rack to cool completely before slicing.

Steps:

Over the years I have revised this recipe until I found just the right mix. It is incredibly moist and flavorful. It may take longer to cook so be patient.

- Preheat oven to 350 degrees F (175 degrees C). Spray two 9x5 inch loaf pans with non-stick cooking spray.
- Cream the shortening and sugar until light. Beat in the eggs one at a time.
- Sift together the flour, salt, baking soda, cinnamon, cloves, and nutmeg. Add to the shortening mixture and mix to combine.
- Thoroughly mash the bananas. Stir bananas into the batter then stir in the walnuts. Pour the batter into the prepared pans.
- Bake at 350 degrees F (175 degrees C) for 45 minutes to 1 hour or until a wooden skewer inserted near the center comes out clean. Check with a wooden skewer every 15 minutes after 45 minutes of baking. It can take up to 65 to 70 minutes to cook.

- Preheat oven to 300 degrees F (150 degrees C). Grease 2 - 9x5 inch loaf pans. In a medium bowl, mash bananas and stir in the eggs until well blended. Set aside.
- In large bowl, beat shortening and gradually add sugar. Stir in vanilla and banana mixture. Whisk together flour, baking soda, and salt; blend into batter. Add walnuts if desired. Divide between the prepared pans.
- Bake for 1 hour 15 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.
