2 cups all-purpose flour
1 cup quick-cooking oats
1 tablespoon baking powder
3/4 teaspoon salt
1 cup unsalted butter, room temperature
1 cup sugar
1 cup packed golden brown sugar
2 large eggs
3 large mashed ripe bananas
2 teaspoons vanilla extract
1 (11 1/2 ounce) bag semi-sweet chocolate chips
1 cup pecans, toasted, chopped (optional)

Steps:

  • Preheat oven to 350°F Butter and flour 15x10x1-inch baking sheet. Blend first 4 ingredients in medium bowl. Beat butter in large bowl until fluffy. Add both sugars and beat until well blended. Add eggs 1 at a time, beating well after each addition. Beat in bananas, then vanilla. Stir in flour mixture, then chocolate and pecans.
  • Spread batter in prepared pan. Bake until tester inserted into center comes out clean and top is golden, about 45 minutes. Cool in pan on rack. Cut into 3x2-inch bars and serve.

Great recipe perfect for those 'keep-in-the-freezer' overrripe bananas, I cut mine to muesli-bar sized bars, but equally this would make a great slice (ice with melted chocolate if feeling naughty!)

Number Of Ingredients 9

1 cup brown sugar, firmly packed
1/2 cup unsalted butter
2 eggs, slightly beaten
1 teaspoon vanilla
1/2 cup milk chocolate chips
1/8 teaspoon cinnamon
2 cups rolled oats
2 cups plain flour
2 bananas, ripe, mashed

Steps:

  • Set your oven to 180°C (= 355 °F). Grease an 8" suqare baking pan.
  • Cream brown sugar and butter.
  • Mix in eggs, vanilla and cinnamon.
  • Mix in oats, flour, banana and chocolate chips.
  • Pour mix into baking pan. Bake 35 minutes.
  • Cool in pan 5 minutes and turn onto a baking rack to cool 15 further minutes.
  • Cut to required size and shape.

  • Preheat the oven to 350 degrees and line an 8x8 inch baking pan with parchment paper, leaving a little hanging over the sides to serve as a “handle”. Then grease with non-stick spray.
  • In a large mixing bowl, mash the banana with a fork. Then add all of the ingredients except the chocolate chips, using a plastic or wooden spoon to mix until combined. Gently mix in the chocolate chips.
  • Bake for 23-25 minutes. The texture of the bars should be soft but firm (not raw). Cool on the counter for 15 minutes, then chill in the refrigerator for at least one hour before cutting into bars.
