Banana bread and gingerbread come together in this delicious recipe. It's a great way to use up those extra bananas during the holidays or wintertime. A thick vanilla glaze is the perfect finishing touch.

2 large ripe bananas
⅔ cup packed dark brown sugar
½ cup molasses
½ cup vegetable oil
2 eggs
¼ cup milk
2 cups all-purpose flour
2 teaspoons ground ginger
1 ½ teaspoons ground cinnamon
1 ¼ teaspoons baking soda
½ teaspoon ground cloves
½ teaspoon ground allspice
¼ teaspoon salt
2 tablespoons milk
1 tablespoon light corn syrup
1 tablespoon butter, melted
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Mash bananas in a large bowl with a fork. Add brown sugar, molasses, oil, eggs, and 1/4 cup milk. Stir until combined. Stir flour, ginger, cinnamon, baking soda, cloves, allspice, and salt together in another bowl. Stir flour mixture into the banana mixture until just incorporated. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes. Let cool completely, at least 30 minutes. Turn bread out of the pan.
  • Combine 1 tablespoon milk, corn syrup, and butter in a bowl. Add confectioners' sugar and stir. Add vanilla extract and enough remaining milk to achieve a drizzling consistency. Pour glaze over the cooled bread.

  • Cream together butter, banana, lemon juice and vanilla. Slowly beat in confectioners' sugar, adding more if needed to make a nice fluffy, spreadable icing. Makes about 2 1/3 cups.

1 Numbers banana mashed
1/2 cup sugar
1 cup boiling water
1 tablespoon butter
1 tablespoon corn starch

Steps:

  • Mix the boiling water, corn starch and the sugar in a large bowl. Stir continuously so that the sugar dissolves completely. Cook this mixture in a sauce pan on low flame for 10 minutes.
  • Now add the mashed bananas and the butter, and stir continuously until the butter melts. Serve with buns and pancakes.

I first tried Hummingbird cake while visiting Amish country in Pennsylvania. A lovely Bed-N-Breakfast served it with breakfast. I was in love! I began searching for a recipe. I combined 3 recipes (one from an Amish cookbook I purchased in PA tweeked with 2 different recipes here on this site). However, I wanted a glaze for the icing rather than cream cheese frosting. I wanted something lighter tasting than a heavy frosting. So, I added my mom's delicious banana cake glaze and it was perfect!

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups sugar
1 1/2 tablespoons cinnamon
3 large eggs, beaten
1 cup vegetable oil
2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple, undrained
1 cup chopped pecans
2 1/2 cups chopped bananas
1/2 cube butter, softened
1/2 banana, mashed
1/2 teaspoon vanilla extract
2 cups powdered sugar

Steps:

  • Combine 1st 5 ingredients in a large bowl; add eggs, and oil, stirring just until dry ingredients are moistened.
  • Add vanilla, pineapple, pecans, and bananas. Fold in with a fork - do not beat.
  • Pour batter into greased 9x13 pan.
  • Bake at 350 degrees for 50-60 minutes or until toothpick inserted into center comes out clean.
  • For glaze frosting:.
  • Combine all ingredients in a small bowl and beat until well mixed. Frost cake while hot - the glaze will melt over the cake. Yum!
  • Note: Don't feel like you have to spread all the frosting/glaze on the cake - just until it's the desired thickness. I put it on pretty generously and usually still have about 1/4 of a cup left. If you want it less sweet, then use less.

I've searched high and low for the *perfect* banana cake; well, I think I've found it! This is moist and delicious, easy to make, and the perfect way to use up the oldest, blackest bananas you can find. The glaze topping is a nice change from the typical cream cheese icing, because it's not overpowering--it really allows the full flavor of the banana cake to shine through. Use your choice of ground walnuts or ground pecans in this cake--I've tried both, and either one works fine. I hope you enjoy this recipe as much as I do !! I think it's just fantastic!! (Chris says it reminds him of Entemann's banana cake, only better! How's that for a compliment!) Number of servings depends on how big you make your slices.

1/2 cup butter, softened
1 1/2 cups sugar

1 teaspoon vanilla extract

Steps:

  • In mixing bowl, cream butter and sugar until light and fluffy.
  • Add eggs, one at a time, combining well, then add vanilla.
  • In seperate bowl, combine all dry ingredients (flour, salt, spices, baking powder, and baking soda).
  • Add dry ingredients to creamed butter mixture, alternating with milk and bananas (you can combine milk with mashed bananas to make this step easier).
  • Stir in nuts, and pour into a greased 9 x 13 inch baking dish.
  • Bake at 350 degrees for 30-40 minutes, or until done (insert toothpick or caseknife into center of cake-if it is clean when removed, cake is done).
  • Allow to cool in pan before glazing.
  • GLAZE: Cream butter and sugar, then add vanilla and just enough milk to reach spreadable consistency-you may need as much as 4 tablespoons.
  • Decorate surface of glazed cake with nuts, if desired.
  • This cake refrigerates very well, making it a great"make ahead" dessert.
  • For OAMC, freeze slices of unglazed cake-allow cake to thaw before glazing.

8 whole bananas
1 pint heavy cream
1/2 cup sugar
1/2 teaspoon chopped candied fruit (as angelica or red cherries)
1 teaspoon black raisins
1 tablespoon chopped peanuts
1 tablespoon slivered almonds

Steps:

  • In a blender, beat mashed bananas, cream and sugar until frothy.
  • Pour into freezer trays and freeze for 1 to 2 hours until partially firm.
  • Cut 8 bananas in half lengthwise and then in half across.

2 apples (peeled, cored, and diced)
2 cups water
4 Tablespoons lemon juice
1/4 cup honey

Steps:

  • In a saucepan, combine the bananas, apples, and water over medium heat and bring to a boil. Stir and reduce heat to simmer. Cook until the apples are soft, about 10 minutes.
  • Add the lemon juice and honey and stir well.
  • Blend the mixture until smooth, either with an immersion blender or in a traditional blender (just make sure to vent the top because it will be hot!).
