MOIST & DELICIOUS BANANA NUT BREAD
I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

Steps:
- Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
- *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.

BRILLIANT BANANA LOAF
A cross between banana bread and a drizzle cake, this easy banana loaf recipe is a quick bake that can be frozen. It's great for using up overripe bananas, too.

- Heat oven to 180C/160C fan/gas 4.
- Butter a 2lb loaf tin and line the base and sides with baking parchment.
- Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
- Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
- Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
- Cool in the tin for 10 mins, then remove to a wire rack.
- Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
- Drizzle the icing across the top of the cake and decorate with a handful of banana chips.

- Heat oven to 180C/160C fan/gas 4. Grease a 2lb loaf tin with some butter and line the base with baking parchment, then grease this as well.
- In a large bowl, mix together the butter, sugar and egg, then slowly mix in flour and baking powder. Peel, then mash the bananas. Now mix everything together, including the nuts.
- Pour your mixture into the tin and bake for 1 hr, or until a skewer comes out clean. Allow the cake to cool on a wire rack before removing from the loaf tin. The loaf can now be wrapped tightly in cling film and kept for up to 2 days, or frozen for up to 1 month. Defrost and warm through before serving. EASY BANANA WALNUT LOAF

- Preheat oven to 375 F. Thoroughly grease a 9-inch loaf pan.
- Combine flour, baking powder, baking soda, salt, 5-spice powder and walnuts.
- Mash the bananas. Stir in the melted butter.
- Beat the eggs. Add sugar and continue to beat till dissolved. Stir in vanilla. Add mixture to the bananas.
- Fold the wet ingredients into the dry ingredients till combined and all the flour is mixed. Do not over-mix the flour as it will result in a tough bread. A lumpy batter is alright.
- Pour the batter into a greased 9" loaf pan. Bake at 350F for 45-50 min or until a toothpick inserted into the center comes out clean.

- 1. Using mixer cream butter till fluffy. Add sugar to this and blend well. Add eggs one at a time mixing well in between each egg.
- 2. In seperate bowl sift flour, baking soda and salt.
- 3. Add a third of the dry mix and a third of the mashed banana to the creamed butter mix, blending well. then repeat this until all dry mix and bananas are blended into creamed butter mixture.
- 4. Now add your vanilla and blend in. Then blend in sour cream or yogurt (i used sour cream) gently until well mixed. Add cinnamon and blend into batter. Now fold in walnuts.
- 5. Using a non stick loaf pan sprayed with non stick cooking spray (or lined with parchment paper) Pour batter into pan.
- 6. Place pan into preheated 350 degree oven. Bake for about an hour (checking after 45 minutes by inserting toothpick into center, if it comes out clean it is done. Top of bread should be firm not jiggly)
- 7. Allow to cool on wire rack.
- 8. Invert onto plate or tray and allow to cool completely. (you may have to run a butter knife gently around pan to loosen, and/or tap gently on bottom. make sure cake is cooled so it doesnt fall apart when inverted)
- 9. Empty 1/2 to 3/4 can of white icing into a small bowl. Add banana extract and stir until completely blended. taste frosting and add additional extract until it is the flavor you desire. Frost top of cake with banana frosting. (it may drizzle down sides)
- 10. Enjoy with a cup of coffee, iced coffee or maybe a scoop of ice cream (i like banana or vanilla)
BANANA WALNUT LOAF

- Preheat oven to 350 degrees. Next, prepare a loaf pan by lining the sides with parchment paper. Alternatively, if using a loaf pan with a design, like the one in the photos, generously coat the inside of the loaf pan with non-stick cooking spray. Set aside.
- In a large mixing bowl, use a spatula to mix together all of the ingredients except the walnuts. There is no need for mixing the wet ingredients first or sifting the dry ingredients together. (I told you this was easy!)
- Once a batter has formed, add the walnut pieces and fold into the batter.
- Spoon the batter into the prepared loaf pan. Tap the filled loaf pan 3 or 4 times on the counter top to remove air bubbles and to ensure the thick batter has settled into the loaf pan's corners.
- Bake for 45-50 minutes. Test for doneness by inserting a toothpick into the middle of the loaf. If the toothpick comes out clean, the loaf is done, if not, place the loaf back in the oven for an additional 5 minutes.
- Cool completely on a cooling rack before slicing.

- In a medium bowl, combine the flour, baking soda, salt, and cinnamon.
