BANANA WAFFLES

Banana Waffles image

Who needs sugar when you have ripe bananas to sweeten these moist and fluffy gluten-free waffles?

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 9

6 large eggs, beaten
3 very ripe bananas, peeled and mashed
3 tablespoons virgin coconut oil, melted and cooled slightly, plus more for the waffle iron
1 1/2 teaspoons pure vanilla extract
6 tablespoons coconut flour
1 1/2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Raspberries, raw honey and chopped toasted pecans, for serving

Steps:

  • Whisk the eggs, bananas, coconut oil and vanilla in a medium bowl until completely combined. Vigorously whisk in the coconut flour, baking powder, cinnamon and salt until no lumps of dry flour remain.
  • Prepare a waffle iron for medium-high heat and brush both sides with coconut oil. Fill each section of the iron about three-quarters of the way full (there should still be some waffle iron showing). Cook until the waffles are golden brown and slightly crisp, 6 to 10 minutes. Keep the waffles warm in a 200-degree F oven or covered with foil on a plate; repeat with the remaining batter. Serve with raspberries, a drizzle of honey and chopped pecans.

1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons granulated sugar
1/2 teaspoon cinnamon
1 1/3 cup milk

BANANA WAFFLES RECIPE

Banana Waffles Recipe image

Provided by By Christine's Recipes

Yield 12 pieces (each about 12cm / 4.5 inch diameter)

Number Of Ingredients 12

2 ripe bananas
200 gm cake flour
1½ tsp baking powder
25 gm sugar
⅛ tsp salt
1 large egg, whisked
220 ml milk
3 tsp oil
½ tsp vanilla extra
vanilla ice-cream, homemade or store-bought
chocolate sauce, for garnish, to taste
walnuts or pecans, chopped

Steps:

  • Method: Mash a ripe banana with a fork until smooth. Set aside Sift the cake flour. Mix in the baking power, sugar and salt. Stir in the whisked egg, milk, oil and vanilla extract. Add in the mashed banana. And stir until just combined. At this stage the batter shouldn't be too thick and can drip off from the whisk easily. If you find the batter too thick, you may add a little of milk to adjust the consistency. Cover and leave it for about 20 to 25 minutes. Preheat a waffle iron to medium-high. Spray oil on the top and bottom of the waffle iron. Pour in about 3 tablespoons of batter in the middle. Close and cook until the waffle is golden brown. Repeat this step with the rest of the batter. Slice another banana. Place banana slices on top of the waffles. Spoon ice-cream on top. Drizzle chocolate sauce. Sprinkle chopped walnuts. Serve immediately.
