1/2 cup butter, softened
1-2/3 cups sugar
2 large eggs
1-1/2 cups mashed ripe bananas
2-1/2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
2/3 cup buttermilk
1/2 cup chopped pecans
FROSTING:
1/3 cup butter, softened
3 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
3 to 4 tablespoons fat-free milk
1/3 cup finely chopped pecans, toasted

Steps:

  • Preheat oven to 350°. Coat a 15x10x1-in. baking pan with cooking spray., In a large bowl, beat butter and sugar until blended. Add eggs, one at a time, beating well after each addition. Add bananas, mixing well (mixture will appear curdled)., In another bowl, whisk flour, baking powder, salt and baking soda; add to butter mixture alternately with buttermilk, beating well after each addition. Fold in pecans., Transfer to prepared pan. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack., For frosting, in a large bowl, combine butter, confectioners' sugar and vanilla. Add enough milk to achieve desired consistency. Frost cake. Sprinkle with toasted pecans.

1 cup sour cream
1/2 cup butter soft

3 large ripe bananas mashed
2 1/2 tsp vanilla
2 cup flour

3 Tbs cocoa powder
6 Tbs milk
4 cup powdered sugar
1 tsp vanilla

Steps:

  • Preheat oven to 375.
  • Line a 12"x17" or 10"x15" pan with parchment paper or silpat mat, set aside
  • In stand mixer beat together sugar and butter until combined.
  • Add in eggs and mix until blended.
  • Add in bananas and vanilla.
  • In bowl whisk together flour, baking soda and salt.
  • Add into your wet ingredients and mix until just combined.
  • Spread into your prepared pan and bake for 20-25 minutes until center is set.
  • Meanwhile to make your frosting in saucepan on stove melt together butter, cocoa powder and milk and bring to a gentle boil.
  • Remove from heat and whisk in powdered sugar and vanilla.
  • Pour and spread over warm cake.
  • Let sit 15-20 minutes for frosting to set.
  • Serve with sliced bananas if desired.

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter
1 cup white granulated sugar

1 vanilla bean (scraped clean, outside discarded), or 1 teaspoon of vanilla extract
1 cup mashed ripe bananas (2 large or 3 medium bananas)
1/2 cup full fat sour cream
Frosting
6 ounces cream cheese, room temp
4 tablespoons (1/4 cup) unsalted butter, room temp
2 cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice

Steps:

  • Preheat the oven to 350°F (175°C) . Place the oven rack in the middle of the oven.
  • Whisk together the dry ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • Beat together the butter, sugars, and eggs: In a mixer, beat together butter and the sugars. Add eggs one at a time and beat.
  • Mix in the vanilla and bananas: Add vanilla and bananas and beat until just mixed in.
  • Mix in the flour and sour cream: Mix in half of the flour mixture, then the sour cream, then the other half of the flour mixture.
  • Spread the batter in baking pan: Spread batter evenly in a greased 10- x15-inch baking pan. Bake at 350°F (175°C) for 20 minutes, or until nicely browned and the surface bounces back when you press it with your finger. Cool completely before frosting.
  • Make the frosting and frost the cake: To make the frosting, mix all of the ingredients together with an electric mixer. If too stiff to spread, add a teaspoon or two of water. Spread the frosting evenly over the cake and slice to serve.

3/4 cup packed brown sugar
1/2 cup sugar
2 eggs
1 cup mashed ripe banana (about 2-3 medium bananas)
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup buttermilk
1/2 cup chopped nuts
1/2 cup packed brown sugar
1/4 cup butter
6 tablespoons milk
2 1/2-3 cups powdered sugar

Steps:

  • Cream together shortening and the sugars.
  • Add eggs, one at a time, beating well after each addition.
  • Mix in bananas and vanilla.
  • Combine flour, soda and salt in a separate bowl, then add to the creamed mixture alternately with buttermilk.
  • Stir in nuts.
  • Pour into a vegetable oil-sprayed 13x9" pan.
  • Bake at 350 degrees for 25-30 minutes, or until a toothpick inserted near the center comes out clean.
  • Cool before frosting.
  • TO PREPARE FROSTING: Combine brown sugar, butter and milk in a saucepan.
  • Bring to a boil for 2 minutes, stirring constantly.
  • Remove from heat.
  • Cool a bit.
  • Gradually beat in powdered sugar till frosting reaches spreading consistency.

1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup butter (softened (1 stick))
2 cups granulated sugar
3 large eggs
1 1/2 cups mashed ripe banana ((about 3 medium, see note 1))
2 teaspoons vanilla extract
1 (8 ounce) package cream cheese (softened)
1/2 cup butter (softened (1 stick))
4 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees. Coat a 15" x 10" x 1" pan (jelly roll pan) with nonstick cooking spray. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  • In an electric mixer fit with the paddle attachment, or with an electric hand mixer, beat butter and sugar until pale and fluffy, about 2 minutes.
  • Add eggs and beat until incorporated. Beat in banana and vanilla until incorporated. Gradually add flour mixture and mix until uniformly combined. Spread into prepared pan.

This Banana Sheet Cake is chock full of banana flavor and has a not too sweet Cream Cheese Frosting.

1 2/3 cups sugar
1/3 cup butter, softened and at room temperature
2 eggs (extra-large preferred)
1 teaspoon vanilla
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups mashed banana (about 3 1/2 large)
2/3 cup buttermilk
2/3 cup chopped walnuts, pecans or mini chocolate chips
Cream Cheese Frosting

Steps:

  • Preheat oven to 350 degrees. Grease and flour jelly roll pan, 10 1/2 by 15 inches. Set aside.
  • Beat sugar and butter in a large bowl. (Will look "crumbly.") Add in eggs and vanilla.
  • In another bowl, mix flour, baking soda and salt with a whisk until well blended. Add to butter mixture, making sure to use a spatula to mix in flour from bottom. It's ok if it's not completely smooth.
  • Beat in mashed bananas and buttermilk at low-speed. Stir in walnuts, pecans or chips by hand.
  • Bake for 20 to 30 minutes (the larger size pan bakes more quickly) until the corners are just pulling away from the sides of the pan and the top when gently pressed in the center, springs back. Turn halfway through baking.

½ teaspoon salt
½ cup unsalted butter, softened

Steps:

  • Place chocolate chips in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Let cool.

Mix in powdered sugar 1 cup at a time, whisking thoroughly after each addition. Keep whisking over low heat until frosting is smooth and shiny, 1 to 2 minutes.
  • Remove chocolate frosting from heat and immediately pour approx 1 to 2 tablespoons over each cookie while still warm. Use the back of a spoon to gently smooth out frosting as needed. Allow cookies to cool and frosting to set completely before gently removing from the baking sheets.
