This is an old Seattle recipe for a simple cake to turn overripe bananas into a delicious dessert.

1 cup white sugar
½ cup unsalted butter
2 eggs
4 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9 x 13 inch cake pan.
  • Cream together the butter or margarine and the sugar.
  • Add eggs, bananas, flour, soda, salt, nuts, and vanilla. Mix thoroughly and pour batter into the prepared pan.
  • Bake at 375 degrees F (190 degrees C) for 30 minutes. Cool and frost cake.

1/2 cup margarine, melted
2 cups graham cracker crumbs
2 eggs
2 cups sifted powdered sugar
3/4 cup margarine, softened
1 teaspoon vanilla
1 (20 ounce) can crushed pineapple, drained
4 medium bananas, sliced
1 (9 ounce) carton frozen whipped topping, thawed
1/2 cup coarsely chopped pecans
1/2 cup maraschino cherry

Steps:

  • Combine melted margarine and cracker crumbs, mold and pat into bottom of a 13x9x2-inch pan.
  • Beat eggs at high speed until light, about 4 minutes.
  • Add powdered sugar, softened margarine and vanilla.
  • Beat 5 minutes at high speed.
  • Spread mixture over crumbs mixture.
  • Chill 30 minutes.
  • Spread pineapple over cream mixture; arrange bananas over the pineapple, then spread with whipped topping.
  • Sprinkle with pecans and garnish with Cherries.
  • Chill 6 hours or overnight.

crust ingr:
1 cup flour
2 tbl. sugar
1 stick butter
1/4 cup crushed pecans
cream cheese mixture :
1 8oz. cream cheese
1 cup 10x sugar
2 bananas
pudding mixture:
1 pkg. instant french vanilla pudding
1 pkg. instant vanilla pudding
3 cups of milk

Steps:

  • 1. For the crust: Mix the 1 cup flour, 2Tbl sugar, and the 1 stick of butter(melted), and the 1/4 cup of crushed pecans.Mix in a 9x13 pan, and flatten out.Bake at 375 degrees for 15 mins.Set aside and cool
  • 2. Cream cheese mixture: Mix your 8oz. cream cheese with your 1 cup 10x sugar. Then add in your 1 cup of coolwhip. Spread in your cooled crust.Slice 2 bananas on top of your cream cheese mixture.
  • 3. Pudding Mixture: Mix your Instant French vanilla pudding, and your reg box of instant vanilla pudding with your 3 cups of milk.Spread your pudding mixture on top of the bananas.
  • 4. Spread 1 cup of coolwhip on top and garnish with leftover crushed pecans

CAKE:
18 .5 oz banana cake mix
MIDDLE:
20 oz can crushed pineapple with juice
3/4 c granulated sugar
2 Tbsp rum extract
2 pkg 3 oz. size each instant banana pudding
3 c cold milk
2 medium bananas, not too ripe but not green either
TOPPING:
8 oz thawed whipped topping
1/4 c powdered sugar
1 tsp vanilla
3/4 c chopped nuts
1/2 c flaked coconut, or slices of banana, optional

Steps:

  • 1. CAKE: Make and bake cake according to package directions in a 9x13-inch pan sprayed and line with parchment paper and spray it.Poke holes all over cake with a chop stick and fork tines as soon as it comes out of the oven. Set aside to cool.
  • 2. MIDDLE: Place pineapple with juice in a medium saucepan and add sugar. Heat over medium heat for 10 minutes, until sugar is dissolved, remove from heat. Mix in the rum then pour evenly over the whole cake. Let cool to room temperature.
  • 3. Mix puddings and milk together until blended set aside to thicken slightly. Spread evenly over pineapple. Thinly slice bananas over pudding. Cover cake pan with plastic wrap and chill overnight or longer-- so cake absorbs syrup and moistens cake.
  • 4. TOPPING: Mix the powdered sugar into the whipped topping and stir in the vanilla. Spread evenly over bananas; top with chopped nuts and toasted coconut if desired.

1 3/4 cups flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
2 bananas, overripe, mashed
1/2 cup vegetable oil
1 teaspoon vanilla
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350F and line 12 muffin cups.
  • Mix dry ingredients.
  • Add oil, milk and vanilla; stir until the mixture starts comes together.
  • Mix in mashed bananas; do not over mix.
  • Fill muffin cups 1/3 full, place a few chocolate chips in center of each muffin, and then cover with remaining batter.
  • Bake on center rack about 30 minutes (toothpick comes out clean).
  • If making chocolate chip cupcakes, mix in 1 cup chocolate chips with the bananas, and mini cupcakes take about 13 minutes to bake.

5 digestive biscuits, E.G Custard Creams, Rich Tea, Digestives, Chocolate Digestives
chocolate, one chunk of your favourite chocolate (or more)
10 g sugar

Steps:

  • Firstly Take a bowl and Mash banana until smooth
  • Then take another bowl and Crush Biscuits.
  • Mix in one bowl.
  • Add Sugar.
  • Serve in A bowl , Ramekin , Wine Glass , Whatever.
  • Once in your Choice of Bowl, Grate Chocolate over the top. Enjoy !

Super easy and quick to make. A nice way to use up ripe bananas. And only 7 ingredients.

5 Tbsp butter or margarine
1 c quick oats
1 box 9.9 oz. box of coconut pecan frosting mix
4 medium bananas (mashed)
4 medium eggs
1 c milk
1 box 1.25 pound box yellow cake mix

Steps:

  • 1. Preheat oven to 350 degrees. In medium pan, melt butter, add oatmeal and frosting mix.(Do not follow box directions). Mix until crumbly, set aside.
  • 2. In a large bowl, blend bananas, eggs & milk. Beat w/ mixer at medium speed for 1 min. Add yellow cake mix (do not follow box directions). Mix until well blended.
  • 3. Pour alternate layers of frosting mixture and cake mixture into greased bundt pan, starting and ending with frosting mixture. Press last layer down with spoon to moisten.
  • 4. Bake 1 hour. cool 15 minutes before removing from pan. HINT: for best results, use very ripe bananas.

The ingredients in this may sound strange together but it's actually a light and refreshing dessert. My Mom always made it to take to church potluck dinners and it was always a hit. I needed a quick dessert that would feed a crowd and this one was perfect. My husband is a choc-aholic even likes this one! Origination unknown.

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup margarine, melted
2 (15 ounce) cans blueberry pie filling (depending on brand the size may vary)
3 bananas
8 ounces cream cheese, softened
1 (2 5/8 ounce) box kraft Dream Whip (use 2 individual packages)
1 cup milk
1/2 cup sugar

Steps:

  • For crust: mix graham crackers crumbs, melted margarine and 1/4 cup sugar in a 9x13 glass pan. Press into the bottom of the pan to make a crust. Chill in the refrigerator while making the topping. (Note: You may need to add a little more melted margarine if the crumbs appear to be too dry, however, you don't want the crust to be greasy.).
  • In a deep bowl, mix cream cheese, Dream Whip, milk and 1/2 cup sugar with a hand mixer until smooth.
  • Pour cream cheese mixture over crust.
  • Slice bananas in 1/4 inch slices and cover cream cheese mixture. (You may need more than 3 bananas if they are small.).
  • Pour blueberry pie filling over bananas and spread evenly.
  • Chill until ready to serve.
