An easy banana muffin recipe loaded with chocolate chips and maraschino cherries

Number Of Ingredients 10

1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
pinch salt
3 large bananas
1/2 cup granulated sugar
1 large egg
1/4 cup avocado oil (or vegetable oil)
1 cup halved maraschino cherries
3/4 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees and spray 12 muffin cup muffin pan with non-stick spray. Sift flour, baking soda, baking powder and salt, and set aside In a large bowl mash bananas. Add sugar, egg, and oil and whisk until well combined. Fold dry ingredients into wet ingredients. Add cherries and chocolate chips and gently fold just to combine. Divide batter between 12 muffin tins and bake for 20-22 minutes, until toothpick inserted into a muffin comes out clean, with just a few crumbs.

1 tsp each baking soda and salt
1 egg
1/2 cup Miracle Whip
3 ripe bananas mashed
Miniature semi-sweet chocolate chips, chopped nuts and maraschino cherries

Steps:

  • Mix flour, sugar,baking soda and salt in large bowl. Beat egg in small bowl; stir in dressing. Add to flour mixture; stir just until moistened. Stir in bananas Spoon into greased or paper-lined muffin pan, filling each cup almost full. Sprinkle with chips and nuts. Bake in preheated 375 oven for 20-25 minutes or until lightly browned. Remove from oven; press 1 cherry into each muffin. Makes 12

1 1/2 cups walnuts, coarsely chopped
1 1/2 cups all-purpose flour
3/4 cup semisweet mini chocolate chips
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup dark brown sugar, packed
1/4 cup canola oil
1/4 cup fat free Greek yogurt, plain
1/4 cup nonfat milk
1 large egg
1 banana, very ripe, mashed (about 1/3c)
1 teaspoon vanilla extract (not artifical)

Steps:

  • Preheat the oven to 375. Coat a 12-cup muffin tin with cooking spray.
  • Measure 1/2 cup of the walnuts into a food processor and grind to a fine meal. Place the ground walnuts, flour, chocolate chips, baking powder, cinnamon, and salt in a large bowl and stir until thoroughly combined.
  • Combine the brown sugar, oil, yogurt, milk, egg, banana, and vanilla extract in a medium bowl and stir until smooth. Add the banana mixture to the flour mixture and stir until thoroughly combined. Stir in the remaining 1 cup walnuts and mix well (the batter will be thick).
  • Fill the muffin cups three-fourths full and bake for 13 to 15 minutes, or until the tops spring back lightly when touched. Remove the muffins from the pan and let cool on a rack.

cooking spray
2 cups all-purpose flour
½ teaspoon salt
¾ cup white sugar
1 teaspoon baking soda
1 cup applesauce
1 egg
3 ripe bananas, diced
1 cup mini chocolate chips
1 cup dried cherries

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a muffin tin with cooking spray.
  • Combine flour, sugar, baking soda, and salt in a medium bowl.
  • Mix applesauce and egg together in another bowl. Add applesauce mixture to the flour mixture. Stir in bananas, chocolate chips, and dried cherries.
  • Spoon batter into the prepared muffin tin, filling each cup almost to the top.
  • Bake muffins in the preheated oven until lightly browned, about 20 minutes. Let cool for 5 minutes before transferring to a wire rack to cool completely.

1 teaspoon baking soda

1 dash ground nutmeg
3 very ripe bananas
½ cup white sugar
⅓ cup butter, melted
¼ cup lightly packed brown sugar
1 egg
1 teaspoon vanilla extract
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
  • Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
  • Divide batter evenly among the muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

1 ½ cups unbleached all-purpose flour
1 cup rolled oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg
¾ cup milk
⅓ cup vegetable oil
½ teaspoon vanilla extract
1 cup mashed bananas

Steps:

  • Combine flour, oats, sugar, baking powder, soda, and salt.
  • In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
  • Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.
