CHOCOLATE BANANA SORBET

4 ripe bananas, peeled and frozen
¼ cup cocoa powder
3 tablespoons powdered sugar
1 teaspoon vanilla extract
1 teaspoon instant coffee granules

Steps:

  • Combine bananas, cocoa powder, powdered sugar, vanilla extract, and instant coffee in a powerful blender such as a Vitamix®. Using the tamper, blend until all ingredients are incorporated. Serve immediately or freeze in a freezer-safe container for 3 hours for a firmer texture.

A quick and easy sorbet to serve after any meal with a bit of kick to it: Mexican, Indian, Thai, etc. You'll need a good blender or Vitamix. We use our Waring Beehive-style blender.

24 ounces frozen pineapple chunks (one bag of Trader Joe's frozen pineapple)
1 large ripe banana
1 lemon, juice and zest of
2 tablespoons agave syrup
2 cups unsweetened coconut milk, beverage (Trader Joe's)

Steps:

  • Place liquids in bottom of blender and slowly add the frozen pineapple and banana, stopping to stir as needed.
  • Add lemon zest, stir and freeze, stirring occasionally.
  • This softens easily in the microwave on "soften" setting.

This recipe is great for hot summer afternoons, or when you're just craving a cold snack! It is easy to make and uses only 3 simple ingredients. For one cup of mashed bananas, you will need about 3 bananas.

1 cup white sugar
1 cup water
1 cup mashed banana

Steps:

  • In a small saucepan, stir together sugar and water. Bring to a boil, then remove from heat and allow to cool.
  • When the sugar syrup is cool, stir in bananas. Pour into a freezer - safe baking dish. Freeze for 3 to 4 hours, until set at the edges.
  • Remove from the freezer and transfer to a mixing bowl. Use an electric mixer to beat until smooth. Return to the freezer until gently set, at least 2 hours.

3 large bananas
1/4 lemon juice, fresh squeezed
1 cup water
1 cup white sugar

Steps:

  • Mash bananas until smooth, stir in lemon juice.
  • In a small saucepan, bring water and sugar to a boil over high heat; reduce heat to medium and simmer for 2 minutes, until slightly thickened. Let cool to room temperature. (to speed up cooling of syrup place in fridge for 40 - 45 minutes.).
  • Stir cooled syrop into banana puree.
  • Freeze in ice cream maker according to manufacturers directions.
  • OR.
  • Place in a shallow pan covered with plastic wrap for at least 4 hours.
