EASY 5-MINUTE BANANA SMOOTHIE
Our banana smoothie is extra creamy and fruity. Depending on how ripe or sweet your banana and orange are, you may need to add a little extra honey, so add based on your taste. There are many additions you can make. For a green smoothie, add 1/2 cup to 1 cup of fresh greens like spinach or kale. You can also add more fruit. Add 1/2 cup of strawberries, mango, frozen berries, pineapple, or other favorite fruit.

- Roughly chop the banana and orange quarters, and then add to a blender. Top with yogurt and water (or milk). Turn blender on and blend until creamy and smooth. Taste, and then adjust with honey if needed.

BANANA SOLE
This lovely summer dish has a magical flavor combination of filet of Sole, bananas and lemon sauce. Easy to prepare and you can substitute any other mild flavored seafood.

Steps:
- Slice bananas lengthwise.
- Remove bones from fish if needed.
- Heat oil on medium-high heat.
- Dredge fish in flour and shake off excess, then dip in eggs.
- Place battered fish in hot oil. Flip when ready.
- Remove from pan when cooked and keep warm on a plate.
- Repeat the same process with the bananas, flour, egg and cook.
- Sauce.
- This is a basic Francese Sauce.
- Saute shallots in oil until soft.
- Add white wine and lemon juice and let reduce by 1/4.
- Add chicken stock and bring to boil, then reduce to a simmer.
- Mix cornstarch with about a 1/4 cup of water.
- Slowly add starch mixture to sauce and stir. Add more until desired thickness is reached.
- Serve over a bed of rice and top with parsley.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium saucepan over medium heat, blend the butter, flour, and milk. Cook, stirring constantly, until a thick sauce has formed.
- Arrange sole in a single layer in a medium baking dish, and cover with the wine and lime juice. Season with salt and pepper. Pour 1/2 the sauce over the fish. Arrange bananas over the fish, and cover with remaining sauce. Sprinkle with Parmesan cheese.
- Bake 25 minutes in the preheated oven, until the cheese is lightly browned and the fish is easily flaked with a fork. Drain any of the remaining wine and lime juice mixture before serving.

BREADED FILLETS OF SOLE

- Put the fillets on a flat surface. There may be a small bone line running partly down the center of each fillet. If so, cut on both sides and discard it.
- Beat the egg, salt, pepper, water and one tablespoon of oil in a flat dish.
- Put the flour in a flat dish and toss the fillets in it. Shake off excess.
- Put bread crumbs in a flat dish.
- Dip the floured fillets, one at a time, in the egg mixture to coat well. Dip them on both sides in the bread crumbs and pat lightly to make the crumbs adhere.
- Heat the remaining one-third cup of oil in a heavy skillet and add enough breaded fillets to make one layer without crowding. Cook until golden brown on one side, about one and one-half to two minutes. Turn and cook about one and one-half minutes on the second side. The cooking times will depend on the thickness of the fish. It may be necessary to add more oil if it disappears. As the fillets are cooked transfer them to a warm serving platter. Continue cooking until all the fillets are done.
- Pour off the oil from the skillet and wipe it out with paper towels.
- Put the butter in the skillet and swirl it around over high heat until it starts to foam. Continue cooking until it starts to become hazelnut brown. Pour this over the fish. Sprinkle the fish with the lemon juice and serve.
