BANANAS IN BROWN SUGAR AND RUM

Bananas in Brown Sugar and Rum image

Be very careful to stand away from the stove when you add the rum -- the flames will be brief but dramatic.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 5

4 bananas, ripe but firm
2 tablespoons unsalted butter
1/4 cup dark-brown sugar
1/2 cup dark rum
Creme fraiche or sour cream, for topping

Steps:

  • Peel bananas, and carefully cut in half lengthwise.
  • In a medium saute pan over medium heat, melt 1 tablespoon butter. Add 2 tablespoons brown sugar, and swirl until dissolved.
  • Add 2 bananas, cut side down, and cook for about 2 minutes on each side, turning very carefully.
  • Pouring from a measuring cup, with the pan off the heat, add 1/4 cup rum. Stand back from stove, and return pan to heat. Shake the pan, allowing rum to ignite. Let the alcohol burn off, and again shake the pan, to coat the bananas. Cook until glazed and translucent, about 1 minute longer.
  • Remove bananas to warm plates, divide sauce between them, and repeat with remaining 2 bananas.
  • Garnish each banana with a little dab of creme fraiche or sour cream, and serve immediately.

WARM BANANA SPLIT IN A RUM SAUCE RECIPE

Warm Banana Split in a Rum Sauce Recipe image

The banana split has never been mistaken for health food, but at least there used to be a certain honesty to it: a sliced banana...

Provided by David Zinczenko and Matt Goulding

Categories     Dessert

Number Of Ingredients 9

1⁄2 Tbsp butter
2 bananas (You want ripe but firm bananas that will still hold their shape after being hit with the heat of the pan.)
1 Tbsp brown sugar
2 Tbsp dark rum or bourbon (optional)
4 large scoops vanilla ice cream (preferably Breyers All Natural)
1⁄4 cup pecans
toasted and chopped
4 Tbsp dark chocolate syrup or hot fudge sauce
Light whipped topping

Steps:

  • Heat the butter in a large skillet over medium heat. Slice the bananas in half crosswise, then lengthwise. Place the banana quarters in the hot pan with the brown sugar and cook on one side until deeply caramelized, about 2 minutes. Turn the bananas over and cook for another 30 seconds. Remove from the heat and add the rum. Be careful-even when the pan is removed from the heat, the alcohol can still ignite. Place 2 banana quarters and any accumulated liquid in each of 4 bowls. Top with the ice cream, nuts, chocolate, and whipped topping.

5 tablespoons unsalted butter, melted
1 teaspoon curry powder (preferably Madras)

BANANA-RUM SAUCE

Banana-Rum Sauce image

This is another dessert sauce I've had for awhile. It's wonderful over vanilla ice cream or pound cake. I like it because it's ready in about 10 minutes. You can substitute another liquer or juice for a change of flavour ( I like pineapple). Also try one of the flavoured rums (love that coconut rum).

Provided by Sweet PQ

Categories     Sauces

Time 10m

Yield 2 cups

Number Of Ingredients 5

3 tablespoons unsalted butter (I admit it, I've used regular butter)
1/3 cup brown sugar
3 tablespoons rum
2 tablespoons orange liqueur (or orange juice)
3 bananas, ripe & sliced

Steps:

  • Melt butter in a frying pan. Add the sugar & cook, stirring, over medium heat until dissolved. Add rum and liquer (or juice). Then add sliced bananas and stir until they are coated and the mixture is hot.
  • Serve slightly cooled.

Categories     Breakfast

Time 1h20m

Yield 8 crepes

Number Of Ingredients 17

2 large eggs
3/4 cup milk
1/2 cup all-purpose flour
2 tablespoons melted butter
2 tablespoons granulated sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 teaspoon vanilla
1 cup brown sugar, packed
2 tablespoons dark corn syrup
2 tablespoons rum
2 tablespoons butter
1/3 cup heavy cream
1 teaspoon vanilla
4 -5 bananas
cinnamon sugar
berries, pecans (or more)
