BANANA RAMA BUNDT CAKE
I love to experiment in the kitchen and I had some ripe bananas that I wanted to do something with, so I just started putting a bundt cake together using some of my recipes. I like this cake. It was moist and easy to take to pot lucks or wherever it needs to go..It can be drizzed with melted store bought icing or you can make...

Steps:
- 1. Preheat oven to 375 degrees. Prepare bundt pan by coating with shortening and shaking flour on top to coat.
- 2. In a medium bowl, combine all of the first 5 ingredients. Mix well and set aside.
- 3. In a large bowl, beat eggs until foamy and pale yellow in color. Add oil and rum extract and mix to blend. Add flour mixture beating until all is used. If it gets too thick, use paddle or wooden spoon. Stir in bananas and nuts and pour into bundt pan.
- 4. Bake for one hour. Use toothpick inserted in center to see if it is done. If toothpick does not come out clean, bake for an additional 5 or 10 minutes.
- 5. Let set in pan for a few minutes, then put on cake plate. Remove top of frosting and the foil and put in microwave for one minute. Drizzle on top of warm cake....Top with walnuts.

- Pour the milk into the bowl-pour the amount you need of the drink and add the amount of banana you think will give it flavour, for a pint of milk roughly 1 1/2 bananas. Mix it all together in your mixer and pour it into a glass voila!

Steps:
- Make ice cream: combine bananas, sugar, and 1/2 cup milk in a food processor or blender. Puree until smooth. Add the cinnamon, vanilla, and the remaining cup of milk. Puree until smooth and transfer into a 8X8 metal or plastic container. Cover and freeze for 4 hours or overnight.
- Remove from the freezer and break up the mixture with a knife. Working with half of the mixture at a time, process briefly in a food processor or blender. The mixture will transform from icy to smooth. Return it to the freezer in the 8X8 container, cover and freeze for at least 30 minutes before serving.
- Make chocolate sauce: Combine the water, sugar, cocoa, and cornstarch in a medium saucepan. Stir with a wire whisk until smooth. Cook over medium heat, stirring frequently with a wooden spoon until smooth and thickened, about 5 minutes. Remove from heat, and stir in the butter and vanilla.
- Serve in small cups with a small scoop of ice cream and sliced bananas. Drizzle with chocolate sauce.
