1/4 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups whole wheat flour
1/4 cup olive oil
1/4 cup 1% low-fat milk
2 medium bananas, mashed (around 1 cup)
1 teaspoon vanilla
1/3 cup raisins

Steps:

  • Preheat oven to 375º degrees.
  • In a large bowl add sugar, baking soda, salt, and flour. Stir well to combine dry ingredients.
  • Add oil, milk, mashed bananas and vanilla, mix just until flour is moistened. Fold in raisins.
  • Using a non-stick muffin pan or muffin papers, fill muffin cups approximately 2/3 full with batter.
  • Bake for approximately 15-20 minutes or until golden brown. Remove from pan and let cool.

1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 dash ground nutmeg
3 very ripe bananas
½ cup white sugar
⅓ cup butter, melted
¼ cup lightly packed brown sugar
1 egg
1 teaspoon vanilla extract
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
  • Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
  • Divide batter evenly among the muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

1/2 teaspoon cinnamon
3/4 cup whole wheat flour
3/4 cup all-purpose flour
1/4 cup oil
1/3-1/2 cup milk
2 bananas, Ripe
1 teaspoon vanilla
1/3 cup raisins
turbinado sugar

Steps:

  • Preheat oven to 375 degrees.
  • Measure first 6 ingredients into a bowl and mix.
  • In a separate bowl, mash bananas and add oil, milk and vanilla.
  • Add wet ingredients into dry and mix lightly.
  • Fold in raisins.
  • Fill muffin cup liners 2/3 full and sprinkle with Turbinado sugar.
  • Bake 15 - 20 minutes or until golden brown.
  • Remove from pan to cool.
  • Enjoy!

1 cup unbleached white flour
2 medium bananas (about 7-inch long)
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 cup Quaker Oats (grind in food processor to desired texture)
6 ounces nonfat banana yogurt
1/4 cup raisins
1/4 cup brown sugar (packed)
1/2 teaspoon baking soda
1 teaspoon baking powder
2 egg whites
olive oil (spray works best)

Steps:

  • Preheat your oven to 400°F, and coat the baking tins with a bit of olive oil to prevent sticking.
  • Combine the dry ingredients (flour, oats, cinnamon, nutmeg, brown sugar, baking soda, baking powder) in a large bowl and mix well.
  • Mash the bananas into a pulp and then combine with the banana yogurt until thoroughly mixed.
  • in a separate bowl, whip the egg whites for 3 minutes until they are somewhat stiff and fluffy.
  • Then mix the egg whites with the yogurt and banana mixture.
  • Finally, add the raisins.
  • Now pour the wet ingredients (banana/yogurt/egg/raisin mixture) into the dry ingredients (flour/oats/nutmeg/cinnamon/baking powder/baking soda).
  • Mix until just combined (make sure nothing stays dry).
  • Fill the muffin tins and bake for about 20 minutes.
  • Cool for 5 minutes and then remove from tins and place on cooling racks to cool further.

1 1/2 cups wheat bran
1 cup buttermilk
1/3 cup vegetable oil
1 egg
1/3 cup brown sugar, plus
1 tablespoon brown sugar
1/2 teaspoon vanilla
2 small bananas, mashed
1 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup raisins

Steps:

  • *1 cup milk with 1 tablespoons lemon juice may be substituted for 1 cup buttermlk.
  • Preheat oven to 375 degrees.
  • Mix together wheat bran and buttermilk; let stand ten minutes or so.
  • Combine vegetable oil, egg, brown sugar, vanilla and bananas, then add to buttermilk/bran mixture.
  • Mix together flour, baking soda, baking powder and salt.
  • Add to first mixture and stir until just blended.
  • Add raisins and spoon into greased or lined muffin tins.
  • Bake for 15-20 minutes and enjoy! :).
