MOIST PINEAPPLE BANANA BREAD



Moist Pineapple Banana Bread image

Our four kids like slices of this moist tropical-tasting banana bread for breakfast. I sometimes bake it in mini loaf pans, then freeze the loaves so we can enjoy a small portion at a time. -Mary Watkins, Chaska, Minnesota

Number Of Ingredients 10

3 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 eggs
1-1/4 cups canola oil
2 teaspoons vanilla extract
1 can (8 ounces) crushed pineapple, drained
2 cups mashed ripe bananas (4 to 5 medium)

Steps:

  • In a large bowl, combine the flour, sugar, salt, baking soda and cinnamon. In another bowl, whisk the eggs, oil and vanilla; add pineapple and bananas. Stir into the dry ingredients just until moistened. Pour into two greased 8x4-in. loaf pans., Bake at 350° for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

1/2 cup all-purpose flour
3 tablespoons sugar
1/4 teaspoon salt
1/4 cup cold butter
FILLING:
1 can (8 ounces) crushed pineapple
1 package (8 ounces) cream cheese, softened
3 tablespoons sugar
1 tablespoon all-purpose flour
1 large egg, lightly beaten
1 cup milk
1 teaspoon vanilla extract
Ground cinnamon

Steps:

  • In a bowl, combine the flour, sugar and salt; cut in butter until mixture is crumbly. Press into an ungreased 8-in. square baking dish. Bake at 325° for 12 minutes. Cool on a wire rack. , For filling, drain pineapple, reserving the juice; set pineapple and juice aside. In a large bowl, beat the cream cheese, sugar and flour. Add egg; beat on low just until combined. Add pineapple juice. Gradually add milk and vanilla. Sprinkle pineapple over crust. Slowly pour filling over pineapple. Sprinkle with cinnamon. , Bake at 325° for 1 hour or until a knife inserted in the center comes out clean. Cool on wire rack for 1 hour. Store in the refrigerator.

2 ½ cups graham cracker crumbs
¾ cup melted butter
4 cups confectioners' sugar
2 (8 ounce) packages cream cheese
1 (8 ounce) can crushed pineapple, drained
3 medium bananas, quartered
1 (12 ounce) container frozen whipped topping, thawed
8 maraschino cherries, halved
¼ cup chocolate syrup
½ cup pecan halves

Steps:

  • Blend the melted butter or margarine with the graham crackers and press into the bottom of one 9x12 inch pan.
  • Blend the confectioner's sugar and the cream cheese together until smooth. Spread over the graham cracker crumb layer. Layer the crushed pineapple and the bananas over the cream cheese layer. Then spread the whipped topping over the top. Decorate with maraschino cherry halves. Drizzle chocolate syrup over the top and sprinkle with pecans. Chill for at least 4 hours then serve.

1 pkg. (11.1 oz.) JELL-O No Bake Real Cheesecake Dessert
2 Tbsp. sugar
6 Tbsp. margarine, melted
1 large banana, halved
1 tsp. lemon juice
1-1/4 cups cold milk
1 can (8 oz.) crushed pineapple in juice, drained
1/2 cup sliced fresh strawberries
1/4 cup chopped walnuts, toasted

Steps:

  • Mix Crust Mix, sugar and margarine with fork in 9-inch square pan until blended. Press onto bottom of pan with dry measuring cup.
  • Mash half the banana. Thinly slice or chop remaining banana; toss with lemon juice.
  • Beat milk, Filling Mix and mashed bananas with mixer on low speed just until blended. Beat on medium speed 3 min. (Filling will be thick.) Spoon over crust.
  • Refrigerate 1 hour. Top with sliced bananas, pineapples, strawberries and nuts.

Number Of Ingredients 10

1 1/4 cups flour
1/3 cup sugar
1/2 cup sweet butter
2 tablespoons candied orange peel, thinly chopped (may substitute with 1 tbsp freshly grated orange peel)
8 ounces cream cheese, softened
1/4 cup sugar
1 large egg
1 tablespoon fresh lemon juice
1/2 cup candied pineapple, coarsely chopped
1/8 cup candied ginger, finely chopped

Steps:

  • Preheat oven to 350°F.
  • For crumb mixture - combine in a small bowl, flour, sugar, butter and candied orange peel.
  • Beat on low speed for 2 minutes until well mixed.
  • Set aside 1/2 cup of the crumb mixture for later use.
  • Press the crumb mixture into an ungreased 8" square pan.
  • Bake for 12 - 15 minutes, just until edges are lightly browned.
  • Set aside to cool, while you make the filling.
  • For the filling - Combine cheese, sugar, egg and lemon juice.
  • Beat on medium speed for 2 minutes until light and fluffy.
  • Stir in the candied pineapple and ginger.
  • Spread the cream cheese mixture over the warm crust.
  • Sprinkle the reserved crumb mixture on top.
  • Put back in the oven and bake for 15 - 20 minutes longer.
  • Cool completely, cut into squares and store covered in the fridge.
