Peanut Butter and Banana Breakfast Sandwich image

Creamy peanut butter and bananas are the key ingredients to this quick and easy breakfast.

2 slices 100% whole wheat with honey bread
4 teaspoons reduced-fat creamy peanut butter
1 very small banana or 1/2 of a medium banana, sliced

Steps:

  • Toast bread. While toast is still warm, spread 2 teaspoons of the peanut butter on each slice. Arrange banana slices on one of the slices of peanut butter toast. Top with the other slice, peanut butter side down, to make a sandwich.

½ cup butter, softened
1 cup white sugar
2 eggs
½ cup peanut butter
2 bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a large mixing bowl, cream together butter and sugar. Add eggs; beat well. Stir in peanut butter, bananas, flour and baking soda until blended. Fold in walnuts. Pour into prepared pan.
  • Bake at 325 degrees F (165 degrees C) for 70 minutes, or until a toothpick inserted into center of the loaf comes out clean. Remove to a wire rack to cool.

3 small ripe bananas, mashed
½ cup vegetable oil
½ cup natural peanut butter
½ cup unsweetened applesauce
½ cup unsweetened soy milk
½ cup brown sugar
2 eggs
3 teaspoons ground ginger
½ teaspoon almond extract
1 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups rolled oats
¾ cup sunflower seeds

Steps:

  • Whisk together bananas, vegetable oil, peanut butter, applesauce, soy milk, brown sugar, eggs, ginger, and almond extract in a large bowl.
  • Stir whole wheat flour, baking powder, baking soda, and salt into the bowl with the banana mixture. Fold in oats and sesame seeds. Scrape the bowl using a rubber spatula to thoroughly combine.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease 4 or 5 cookie sheets, or bake in batches.
  • Use a small cookie scoop or spoon to drop tablespoon-sized mounds of dough onto the prepared cookie sheets.
  • Bake in the preheated oven until golden, about 15 minutes.

Steps:

  • Place oats, hemp powder, and cinnamon into small bowl and stir just to combine.
  • Place ingredients in a blender in the following order: almond milk, banana slices, chopped apple slice, peanut butter, honey, oats mixture from bowl, and ice cubes. Blend until smooth. Serve.
