- In a bowl, combine the sugar, oil and eggs; mix well. Stir in bananas and orange juice. Combine the dry ingredients; add to banana mixture, beating just until moistened. Stir in walnuts. Pour into 2 greased 8x4-in. loaf pans. , Bake at 325° until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes; remove from pans to a wire rack to cool completely. Freeze option: Securely wrap cooled loaves in foil; freeze. To use, thaw at room temperature.

The beauty of this recipe is its versatility. Experiment as you wish with the ingredients. Some people like raisins or currant in their loaves (I do not, but that should not stop anyone). This recipe is a delicious, healthy version of an old standby, and one which the entire family can enjoy. The following recipe has batter sufficient for one loaf; I have doubled the ingredients to create two loaves and bake them at the same time. Eat one, and freeze the other. Enjoy. IMPORTANT: Please note nut ingredients. Omit nuts if there are allergy implications. This recipe was originally created by Tracy Holly, General Manager of the Cory Holly Institute. - Preheat oven to 375°F.
- Mix all the dry ingredients together in a large bowl.
- Add all wet ingredients in a blender and mix for 15 seconds.
- Add the blended ingredients to the dry ingredients and mix well.
- Pour mixture into a well-greased bread pan and place on middle rack in preheated oven.
- Bake for approximately 45 minutes.
- Insert toothpick to test for doneness (it should come out clean).
- Cover the loaf with foil if it is starting to brown too quickly on top.
- Let cool for 30 minutes and then enjoy.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, stir in the mashed bananas.

- Stir together flour, baking powder, salt, and nuts.
- In a large bowl, beat together butter or margarine and 1 cup sugar. Beat in eggs one at a time. Stir in rind and 1/2 cup juice. Pour in flour mixture, and stir until moistened. Turn into a greased 9 x 5 x 3 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour, or until done. Remove loaf from oven, but not from pan.
- Combine 1/2 cup orange juice with 1/4 cup sugar in a small saucepan. Heat and stir to dissolve sugar. Spoon glaze over hot loaf. Let stand in pan for 10 minutes before removing loaf to rack to cool.

- Preheat oven to 350 In a large mixing bowl, cream together the butter, oil, and sugar until light and fluffy.
- Add mashed bananas and mix well.
- Add salt, vanilla, orange juice and zest and mix until well combined.
- Add eggs, one at a time, mixing after each addition.
- Mix in baking soda and baking powder.
- Mix on low, gradually adding flour until combined.
- Divide batter evenly between two 8.5"x4.5" loaf pans. Bake 50 minutes or until toothpick inserted into the center comes out clean. Allow to cool 15 minutes before removing from pans. Let cool completely before glazing.
- Whisk together powdered sugar and orange juice until it reaches a glue like consistency. Add more juice if too thick, or more sugar if too runny. Drizzle over cooled loaves. Add orange zest to tops, if desired.

- 1. Preheat oven to 350 degrees: Combine sugar and margarine (or butter). Add eggs one at a time, mixing well after each addition.
- 2. Add mashed bananas and orange juice. Mix well. Add combined dry ingredients, mixing until just moistened. Stir in (roasted) chopped nuts and orange zest and raisins.
- 3. Pour into a greased and floured 9x5 inch loaf pan. Bake for 1 hour and 15 min., or until a cake tester inserted in centre comes out clean.
- 4. Cool in pan for 5-10 minutes then remove from pan. While loaf is still HOT, cover loaf with a few tablespoons of fresh honey or marmalade or both. Smear over top (it will melt and be easy to spread)
- 5. A touch of fresh orange juice may be added to mix of honey and marmalade. Be sure to GLAZE HEAVY. Sprinkle with coarse white sugar.
- 6. Finish cooling on rack for approx. 2-3 hrs. Cover loosely while cooling. When completely cool, wrap well in plastic wrap and foil. May be stored in freezer up to 2 months. Store in fridge for 1-2 wks. Store on shelf for approx.2-3 days. (you will want to eat before the time is up :)

- Grease the bottom and sides of a 9x5x3-inch loaf pan. Alternately, line the loaf pan with parchment paper and then spray with nonstick cooking spray. Set aside.
- Preheat the oven to 350ºF.
- In a small bowl, combine the blueberries with 1 tablespoon of the flour and the orange zest. Toss lightly to combine.
- In a large bowl, mix together the remaining 3 cups of flour, sugar, baking powder, baking soda and salt. Make a well in the center of the mix.
- In another bowl, or in a large liquid measuring cup, combine the egg, milk, orange juice and oil.
- Pour the liquid into the well in the center of the dry mixture. Stir just until moistened. (Do not worry about making the batter smooth - there should be some lumps left.) Fold in the blueberry mixture.
- Pour the batter into the prepared loaf pan. Bake in the preheated oven until a tester inserted in the center comes out clean, about 60 minutes. If the bread starts to get too brown, cover with a piece of foil during the last 10-15 minutes.
- Cool the bread in the pan on a wire rack for 10 minutes, then remove from the pan and allow to cool completely.
- Bread can be eaten once cooled, or for best results, wrap in plastic wrap and store overnight before serving.
