BANANA ORANGE BARS
I have been making these treats for many years. I no longer remember where the recipe came from, but one thing is certain - the bars are always a hit at family get-togethers and parties. The secret to tasty banana desserts is the ripeness of the bananas - the riper, the better.

- In a large bowl, beat the bananas, sugar, oil and eggs until well blended. In a small bowl, combine the flour, cinnamon, baking powder, salt and baking soda; gradually beat into banana mixture until blended., Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack. , For frosting, cream butter and sugar in a large bowl until light and fluffy. Beat in orange juice and zest until smooth; spread evenly over cake.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
- In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan.
- Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting with the cream cheese frosting.

- Preheat oven to 350 In a large mixing bowl, cream together the butter, oil, and sugar until light and fluffy.
- Add mashed bananas and mix well.
- Add salt, vanilla, orange juice and zest and mix until well combined.
- Add eggs, one at a time, mixing after each addition.
- Mix in baking soda and baking powder.
- Mix on low, gradually adding flour until combined.
- Divide batter evenly between two 8.5"x4.5" loaf pans. Bake 50 minutes or until toothpick inserted into the center comes out clean. Allow to cool 15 minutes before removing from pans. Let cool completely before glazing.
- Whisk together powdered sugar and orange juice until it reaches a glue like consistency. Add more juice if too thick, or more sugar if too runny. Drizzle over cooled loaves. Add orange zest to tops, if desired.

BANANA PUDDING DREAM BARS
These Banana Pudding Dream Bars take your favorite banana pudding to the next level with an Oreo layer, fresh bananas and a sweet cream cheese layer.

- In a blender or food processor, finely crush 20 of the Oreo cookies.
- Put the butter into a medium microwavable bowl, and place into the microwave for 30 seconds or until completely melted.
- Add the cookies to the butter and mix until well moistened. Press into an ungreased 8 X 8-inch baking dish.
- Place into the freezer to chill for at least 30 minutes.
- Mix the package of pudding with the 1 1/2 cups of milk in a small bowl.
- Mash one of the bananas.
- In a mixing bowl, cream the mashed banana and cream cheese. Add in the confectioners' sugar, and vanilla and mix thoroughly.
- Fold in 1 cup of the Cool Whip or stabilized whipped cream, and mix until well blended.
- Slice the two remaining bananas and place over the cooled crust.
- Place dollops of the cream cheese mixture over the bananas and with an offset spatula, gently spread to completely cover.
- Evenly spread the pudding over the cream cheese mixture.
- Top with the remaining Cool Whip.
- Refrigerate for at least two hours.
- Place the 8 remaining Oreos into a plastic bag and crush. Sprinkle on top of the bars before serving.

- Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper so that the parchment overhangs two opposite sides like handles. Lightly coat with nonstick spray and set aside.
- Mash the bananas in a mixing bowl. Double check the measurement to ensure you have 1 cup (less will make the bars dry; more and they may not bake all the way through). Stir in the coconut sugar, butter, milk, egg, and vanilla until well blended.
- In a separate bowl, stir together the flour, baking soda, cinnamon, nutmeg, and salt. Add the dry ingredients to the bowl with the wet ingredients. With a wooden spoon or spatula, stir to combine, stopping as soon as the flour disappears. Fold in 1/3 cup chocolate chips.
- Scrape the batter into the prepared baking pan and smooth the top. Sprinkle the remaining 2 tablespoons chocolate chips on top. Bake for 16 to 20 minutes, or until a toothpick inserted in the center comes out clean with just a few moist crumbs clinging to it. Place the pan a wire rack to cool completely, then using the parchment handles, lift the bars onto a cutting board. Slice into squares of desired size and enjoy!

- Preheat the oven to 170c / 340f and line a baking tray with parchment paper or a non stick silicone sheet.
- Mash the banana in a bowl with a fork. Add the orange juice and mix well. Then add the oats and mix together until everything is well combined.
- Take one tablespoon of the oat mixture, shape into a round cookie shape and place on the baking tray. Repeat with the remainder of the mixture. I made 11 bites from this.
