Steps:
- Insert 1 ice pop stick into the cut end of each banana half. Place the bananas on a wax paper-covered baking sheet, and freeze until the bananas are frozen through, about 2 hours.
- Remove the frozen bananas from the freezer and spread a layer of peanut butter on each banana. Place the peanut butter-covered bananas back in the freezer for 30 to 45 minutes.
- Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Dip each frozen banana in the melted chocolate, spooning the chocolate over the banana to cover it completely. Roll the dipped bananas in the chopped peanuts and place on the wax paper covered baking sheet; freeze until the chocolate is firm, about 1 to 2 hours.

GRANOLA BANANA STICKS
My daughter and I won an award at our local fair for these peanut-butter-and-granola bananas. I like to assemble the ingredients ahead for my kids to whip up when they get home from school. Sometimes we substitute rice cereal as a crunchy alternative to the granola bars. -Diane Toomey, Allentown, Pennsylvania

Steps:
- Heat 2 inches vegetable oil to 370 degrees F in a Dutch oven over medium-high heat.
- Meanwhile, cook the bacon in a skillet over medium-high heat until the fat is rendered but the bacon is still pliable (don't get it too crisp), 4 to 5 minutes. Drain on paper towels. Let cool.
- Spread one side of each bacon slice with peanut butter. Wrap each slice around a banana piece, peanut butter-side facing the banana, pressing to adhere.
- Spread some cake flour in a shallow bowl for dredging. Whisk the cake flour, confectioners' sugar and salt in a medium bowl. Whisk in the seltzer, taking care not to overmix (a few small lumps are fine).
- Dredge half of the bananas in the flour, then dip in the batter and carefully add to the hot oil. Fry in 2 batches until crisp and golden brown, flipping halfway through, 3 to 4 minutes. Drain on paper towels and repeat with the remaining bananas. Insert skewers into the bananas. Drizzle with honey and serve immediately.
BANANA FRITTERS ON A STICK
Steps:
- Skewer the bananas with popsicle sticks. Whisk the egg and then whisk in the milk. Dip each banana in the egg then toss in the bread crumbs to coat. Repeat the process to create a second coating. Heat oil to 365 degrees and drop in the bananas, moving them around to brown evenly on all sides. Place on paper towels to drain.
- Dipping Sauce: Scald milk in a medium saucepan and transfer to a bowl containing chopped chocolate, gently stirring until chocolate is completely melted. Add vanilla and whisk in peanut butter until smooth.
- Dust the banana fritters with confectioners' sugar. Drizzle chocolate peanut butter sauce over bananas or use as a dipping sauce.

- Once hot, gently drop the bananas one by one and cook using medium heat for 1-2 minutes (2 minutes if you’re using bigger than the Thai bananas). Turn a couple of times so the bananas cook evenly.
- Sprinkle the brown sugar. Turn the bananas ONCE so the sugar caramelizes in the oil. DO NOT STIR and keep the heat on medium. Once the sugar starts to caramelize, start moving the bananas around until every single piece is fully coated with the caramel. Cook for 3-5 minutes while gently stirring continuously. Sprinkle some sesame seeds, if using. Turn the heat off.
- Thread 2 bananas in a bamboo (barbecue) stick. Serve as is or with a scoop or two of vanilla ice cream.
