BLUEBERRY MAPLE SYRUP OATMEAL
This is my go-to oatmeal. I have a bunch of other recipes saved I keep meaning to try, but this one is so easy when I'm sleepy and don't want to be awake, I just make this instead.

1/3 cup = 1 packet of instant oatmeal. Try plain oatmeal or experiment with the flavored ones. It's cholesterol free, low in fat, with a serving of fiber, fruit and protein!

- Gently fold the blueberries in the batter if you are using fresh blueberries, if your blueberries are frozen then you will sprinkle them on top as you add the batter to the griddle.
- Heat oil a griddle or a large frying pan over medium heat, add a 1/4 cup batter for each pancake on the pan.
- Sprinkle blueberries on top if they are frozen. Cook pancakes until they are golden brown, about 2-3 minutes. Flip them and cook for another 2-3 minutes. Serve immediately with maple syrup.

- Add all of the ingredients to a blender and blend on high until completely smooth, about 30 seconds to 1 minute. Let the batter sit in your blender while you heat your pan up.
- Lightly coat a griddle with coconut oil, vegan butter or olive oil and place over medium heat. Once pan is hot, add 1/3 cup of the batter to the griddle for each pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges.
- Flip cakes and cook until golden brown on underside. If you find that pancakes are browning too quickly then you need to lower the heat. I normally start on medium heat, then decrease to medium low later so that my pancakes don't burn. If at any point your griddle starts smoking, it means your pan is too hot.
- Wipe skillet clean and repeat with more oil and remaining batter. Makes 9 pancakes total. Serves 3, 3 pancakes each.

- Add all the ingredients to the blender except the blueberries, and blend until very smooth. The batter should be thick but still pourable.
- Heat a couple teaspoons of coconut oil in a large nonstick skillet over medium heat. When the oil is hot and shimmering (but not smoking!), ladle roughly ¼-cup measures of batter into the skillet (if necessary, use a spatula to help spread the pancakes into a nice round shape), and immediately sprinkle each pancake with a few blueberries. (I recommend cooking 2-3 pancakes at a time so you don’t crowd the pan.) Cook until you see small bubbles appear on the top of the surface of each pancake, about 1 minute. Carefully flip the pancakes with a thin spatula and cook until the undersides are lightly browned, another minute or so.
- Transfer the pancakes to a plate, add a little more oil to the skillet, and repeat the cooking process with the remaining batter.
